BROWN BUTTER CRISPIES

Steps:
- Cream the Brown Butter with both sugars in a stand mixer until well combined.
- Beat the eggs in a separate bowl. Add the vanilla and stir to combine. Add to the butter/sugar mixture and mix well.
- Combine the flour, salt and baking soda in a separate bowl. Mix carefully into the egg/butter mixture until well combined. Add the quick-cooking oats and mix well again. Add the finely chopped pecans and mix well to combine.
- Divide the dough in half and place each half of the dough on a sheet of waxed paper. Roll the dough into a log and wrap it tightly in the waxed paper. Now you can either chill or freeze the dough until later, or you can go ahead and slice and bake the dough.
- When you are ready to bake, preheat the oven to 350 degrees F.
- Slice the dough 3/4-inch-thick, then place on a cookie sheet about 2 inches apart. Bake until they are golden brown, about 10 minutes. Let cool on the cookie sheets.
- Add the butter to a medium skillet over medium heat. Allow it to melt and bubble up, swirling the pan to keep the butter moving around, for 3 to 4 minutes. When the butter is a medium golden brown, remove the pan from the heat (it will continue browning in the pan over the next 30 seconds or so!). Pour the butter (and any solids in the bottom of the pan) into a heatproof bowl and allow it to cool completely, about 30 minutes.
MARSHMALLOW CRISPIE BARS
Easy, easy, easy. As a variation, you can add candy coated chocolates, chocolate chips, or nuts.

- Coat a 9 x 13 inch pan with spray oil or margarine.
- In a large saucepan, melt the butter or margarine over low heat. Add the vanilla. Melt the marshmallows into the margarine, stirring. Add the cereal when the marshmallows have melted; stir until cereal is coated. Quickly pour into the prepared pan. Use a sheet of waxed paper to press the mixture down flat and evenly into the pan.
- Let set for 2 to 3 hours. Cut into squares.

VANILLA ALMOND RICE KRISPIES TREATS
A variation of Kellog's Rice Krispies Treats Original recipe. Just the added dash of vanilla and almond extracts makes these scrumptious!

- Melt margarine in large non-stick pan (I use my T-Fal Dutch oven) over medium-low heat.
- Add marshmallows and stir until melted and smooth.
- Turn off flame.
- Stir in extracts.
- Fold in cereal and continue folding until well coated.
- Spray 13 X 9 pan with cooking spray and press mixture into pan (I spray my hand with a little Pam and then use my hand but you can use the back of a buttered spoon if you don't have asbestos fingers like mine).
- Cool and cut into squares.
RICE KRISPIE SQUARES
I know that everyone has made these at one time or another in their lifetime - but thought it might be interesting for the young chefs coming up to have the recipe on hand!! For a festive look, red and green cherries can also be added.

- In a large saucean over low heat, melt margarine. Add marshmallows; stir until melted and well blended. Remove from heat.
- Stir in vanilla. Add cereal, stirring until coated.
- Using a lightly buttered spatula, press into a buttered 13x9 baking pan. Cool. Cut into squares.
- You can also use 5 cups miniature marshmallow for this recipe. For chewier squares, use 5 cups cereal.
- MICROWAVE DIRECTIONS:
- In a large microwaveable bowl, microwave margarine at HIGH 30-60 seconds or until melted. Add marshmallow, tossing to coat. Microwave at HIGH 1 -11/2 minutes or until smooth when stirred, stirring after 45 seconds. Follow directions as above.

CLASSIC CRISPY RICE TREATS
Gooey marshmallows and crispy rice cereal come together in this recipe for the all-original favorite. Cut into squares, store between a few pieces of wax paper (to prevent any sticking) and enjoy for up to three days.

- Line a 9-by-13-inch baking dish with aluminum foil, leaving a 2-inch overhang on each of the longer sides. Spray the foil lightly with cooking spray.
- Melt the butter in a large pot over medium heat. Add the marshmallows and cook, stirring occasionally, until melted and smooth, about 5 minutes. Remove from the heat and stir in the vanilla and salt.
- Working quickly, add the rice cereal to the pot and stir with a rubber spatula until evenly coated. Transfer to the prepared baking dish and press into an even, compact layer. (Spray your hands with a little cooking spray to keep them from sticking when pressing the cereal mixture into the pan). Decorate with toppings if using (see Cook's Note).
- Let sit at room temperature until firm, about 30 minutes. Cut into 24 squares. Store the cereal treats at room temperature in an airtight container for up to 3 days.
VANILLA CRISPIES
This is my favorite holiday cookie. To make them especially festive, dip one side in holiday sprinkles before baking.

Steps:
- Mix sugar, butter, egg and vanilla in a large bowl.
- In another, medium-sized bowl, mix the dry ingredients.
- Gradually add this mixture to the larger bowl, beating with a hand-held mixer.
- Cover and refrigerate for a minimum of one hour.
- Heat the oven to 375°.
- Shape the dough into 1-inch balls.
- If you want to add sprinkles, place the balls into a shallow pan, such as a pie pan, that has a layer of sprinkles on the bottom.
- Gently flatten the dough into the sprinkles using the bottom of a glass.
- If you are not using sprinkles, dip the bottom of the glass in granulate sugar.
- Line a cookie sheet with parchment paper.
- Bake until barely browned (these cookies are meant to be soft) or about 8 minutes.
- Immediately remove from the cookie sheet and lay on aluminum foil.

THE ORIGINAL RICE KRISPIES TREATS SQUARES
This is the recipe for the original rice krispies treats squares...It never fails! Plus, it is a great way to use up a box of cereal! For best results, use fresh marshmallows. I have replaced the butter once with Mott's Healthy Baking butter or oil substitute (it was basically an unsweetened apple sauce) and they still turned out great!

- Melt butter in a large saucepan over low heat.
- Add marshmallows and stir until completely melted.
- Remove from heat.
- (It would be perfect to be measuring out all of the cereal at this time, having it ready in a large bowl.).
- Working quickly, add rice krispies cereal, and stir until the cereal is well coated.
- Using a buttered spatula or waxed paper, press the mixture evenly into a greased 13 by 9 by 2 inch pan (or whatever pan you have on hand).
- When the treats are cooled, cut into squares.
- Serve, and enjoy!

- Add vanilla (be careful it doesn't splash on you).
