VANILLA SNAP BISCUITS: A DELICIOUS LITTLE COOKIE



Vanilla snap biscuits: a delicious little cookie image

These vanilla biscuits are snappy, buttery and delicious.

Number Of Ingredients 7

185gms butter
1 cup caster sugar
1 ½ tsp vanilla extract
2 ½ cups flour
1 egg
1 egg yolk
icing sugar to dust

Steps:

  • Preheat the oven to 180 c / 350 f
  • In a food processor mix the butter, sugar and vanilla until smooth
  • Add the flour, egg and egg yolk and process until the mixture forms a soft dough
  • Take the dough out the processor and knead slightly bringing it together in a ball and wrap it in cling film and place in the fridge for 30 minutes
  • Roll the dough out on a lightly floured surface or between 2 sheets of baking paper until about ½ cm / 5mm thick
  • Cut the dough into approximately 7cm rounds
  • Place the dough rounds on a baking sheet that has been lined with baking paper or silicone baking sheets
  • Bake for 10 - 12 minutes until golden brown
  • Remove the biscuits carefully from the baking tray and allow them to cool on a wire cooling rack as they have a tendency to carry over cooking and could turn too brown once removed from the oven (I generally cool all biscuits on a cooling rack).
  • When cooled, dust them with some icing sugar or decorate as desired.

2 1/3 cups plus 2 tablespoons (11-ounces) all-purpose flour
1 teaspoon salt
1 teaspoon baking powder
3/4 cup (1 1/2 sticks; 6-ounces) unsalted butter
1/2 cup plus 2 tablespoons (4-ounces) granulated sugar
1 large egg
1 teaspoon pure vanilla extract

Steps:

  • In a medium bowl, sift together the flour, salt, and baking powder. Set aside.
  • In the bowl of a standing mixer fitted with a paddle attachment, combine the butter and sugar and beat on medium speed until light and fluffy. Add the egg and vanilla and beat until combined.
  • Add the flour mixture in 2 batches, scraping down the bowl after each addition. Beat until the dough just comes together, being careful not to over mix.
  • Turn out the dough onto a lightly floured surface. Form the dough into a ball, wrap it in plastic, and refrigerate for 30 minutes.
  • Place the ball of dough between 2 pieces of parchment paper and roll out to 1/4-inch thick. Keeping the dough in the parchment, transfer to a cookie sheet and place in the refrigerator for at least 1 hour.
  • Preheat the oven to 350 degrees F.
  • Cut out the cookies in the desired shapes and place on a half-sheet pan lined with parchment paper or an un-greased nonstick cookie sheet, at least 1-inch apart. Transfer to the freezer and chill for at least 15 minutes or until they are firm.
  • Bake until the cookies are light golden brown, about 10 minutes.
  • Let cookies cool completely on the sheets before decorating.

1 cup Butter Flavor Crisco
1 cup sugar
1/2 cup brown sugar
2 eggs
1 1/2 tablespoons water
1 teaspoon vanilla
1 teaspoon butter flavor extract (optional)
3 cups flour
1 teaspoon baking soda
1/2 teaspoon salt

Steps:

  • Preheat oven to 375°F.
  • In a large mixing bowl, beat together Crisco, sugar, brown sugar, eggs, water, vanilla and butter-flavored extract until well mixed.

  • Cover and refrigerate dough for 30 minutes.

1 1/2 cups self raising flour
1/2 cup custard powder
1/2 cup caster sugar
120 g low-fat butter, chopped (room temperature)
1/4 cup skim milk
1 teaspoon vanilla essence
30 g slivered almonds

Steps:

  • Preheat oven to 180 deg C (356 deg F). Line 2 trays with baking paper.
  • Into a medium bowl sift together the SR flour and custard powder. Stir in the sugar.
  • Using your fingertips, rub the butter into the dry ingredients until the mixture looks like soft breadcrumbs.
  • Combine the milk and vanilla essence then stir into the mix. It should form a firm dough.
  • Drop 2 teaspoons of dough in heaps onto the the prepared trays. They will spread so allow space between biscuit. Lightly flatten with fork then sprinkle with almonds. Press lightly to adhere.
  • Bake for 10-15 minutes or until golden on the bottom.

175g softened butter, plus extra for the tin
100g golden caster sugar
250g plain flour, plus extra for dusting
1 egg yolk (freeze the white for another recipe)
½ tsp vanilla extract
250g icing sugar
sprinkles of your choice, to decorate
star-shaped biscuit cutter
12-15 cake pop or lolly sticks
coloured ribbons (optional)

Steps:

  • Tip the butter, caster sugar and flour into a food processor with a pinch of salt. Blitz until the mixture looks sandy. Add the egg yolk, vanilla extract and 1 tbsp cold water, and blitz again until the dough clumps together. Tip onto a surface and knead briefly until all the flour is incorporated. Shape into a disc, wrap and chill for 30 mins, or up to two days. Will keep frozen for two months. If chilled for longer than 1 hr, leave at room temperature for 10 mins before rolling out.
  • Line two baking trays with baking parchment. Heat the oven to 180C/160C fan/gas 4. Roll the dough out on a lightly floured surface until it's a little thicker than a £1 coin. Stamp out stars using the cutter, then carefully lift onto the baking trays and gently push a lolly stick into the base of each. Bake for 12-15 mins until golden at the edges (you may need to do this in batches). Cool on the trays for 5 mins, then transfer to a wire rack to cool fully.
  • Combine the icing sugar with 2-3 tsp water to make a thick icing. Spread this over the biscuits, then scatter with sprinkles. Leave to set for 1 hr, then tie ribbons around the wands, if you like. Best eaten within 24 hrs, but will keep in an airtight container for three days.

1/2 cup caster sugar
2 egg yolks
2 teaspoons vanilla essence
1/3 cup custard powder
3/4 cup plain flour

40 g unsalted butter, softened
2/3 cup icing sugar, sifted
1 teaspoon vanilla essence
1 tablespoon milk

Steps:

  • Preheat oven to 180°C Brush two 32 x 28cm biscuit trays with melted butter. Line base with paper; grease paper.
  • Using electric beaters, beat butter and sugar in a small mixing bowl until mixture is light and creamy. Add th egg yolks one at a time, beating thoroughly after each addition. Add vanilla essence; beat until combined.
  • Transfer mixture to a large mixing bowl. Using a metal spoon, fold in sifted custard powder and flours. Stir until ingredients are just combined and the mixture is almost smooth. Press mixture together with fingertips to form a smooth dough.
  • Roll 1 level teaspoon of mixture at a time into bowls. Arrange on prepared trays about 5cm apart. Flatten lightly with base of glass to 2.5cm rounds. Bake 12 minutes or until biscuits are golden.
  • TO MAKE VANILLA CREAM:.
  • Beat butter and essence in a small bowl with a wooden spoon until smooth. Add sugar and milk gradually, stir until well combined and mixture is smooth.
  • Stand biscuits on trays for 5 mins, transfer to a wire rack to cool. Spread half the biscuits with filling and sandwich together with remaining biscuits. If you like you can dust biscuits with icing sugar as well.
  • Keeps for up to 2 days in an airtight container.
