2 cups heavy cream
1 vanilla bean
1/2 cup sugar
1 1/2 teaspoons unflavored gelatin (about 1/2 packet)
1/2 cup whole milk
1/2 cup whole-milk Greek yogurt
Sliced strawberries and fresh mint, for garnish (optional)

Steps:

  • Place the cream in a saucepan. Halve the vanilla bean lengthwise; scrape out the seeds with a knife, then add the seeds and pod to the saucepan. Add the sugar and bring to a simmer over medium-low heat, stirring occasionally. Discard the vanilla pod.
  • Sprinkle the gelatin over the milk in a bowl and let stand until the gelatin softens, about 5 minutes. Stir the gelatin mixture into the hot cream mixture until dissolved, then stir in the yogurt. Divide among six to eight 4-ounce ramekins, cover with plastic wrap and refrigerate until set, at least 6 hours or overnight.
  • Dip each ramekin three-quarters of the way in warm water and invert onto a plate. Garnish each panna cotta with strawberries and mint, if desired.

This is an adopted recipe originally posted by MeanChef. I have not made any changes to his recipe I will leave it exactly as he originally posted it. When I reviewed it in Sept '04 I mentioned that I doubled the recipe for a dinner party for 6. I used 3/4 cup capacity ramekins as suggested by Mean although the mixture only filled 6 not 8. I also used fresh strawberries and less sugar as the strawberries were naturally sweet. It is a beautiful dessert and enjoyed by all our guests. I found that I did need to dip them in hot water for a few seconds then run a knife around the edge before I could un-mould them safely.

12 ounces frozen strawberries, thawed and drained
3 tablespoons sugar
vegetable oil cooking spray
1 tablespoon milk
1 1/4 teaspoons unflavored gelatin
1 1/4 cups whipping cream
1/3 cup milk
1 tablespoon vanilla
1/4 cup sugar
1/4 cup mascarpone cheese
1/4 cup sour cream

Steps:

  • Place mixed berries in a small bowl and crush slightly with the back of spoon.
  • Stir in 3 tablespoons sugar.
  • Cover with plastic wrap and set aside.
  • Spray four 3/4 cup ramekins with cooking spray.
  • In a small bowl, pour 1 tablespoon milk.
  • Sprinkle gelatin over and allow it to soften (10 minutes).
  • Meanwhile, combine cream, 1/3 cup milk, vanilla, and 1/4 cup sugar in a saucepan.
  • Bring to a boil over medium high heat, stirring often.
  • Remove from heat, add gelatin mixture and stir until melted.
  • Let the mixture cool slightly down to a warm temperature.
  • In a medium sized bowl, whisk together mascarpone cheese and sour cream until smooth.
  • Slowly add the now warm cream mixture into the bowl, whisking constantly.
  • Pour mixture into prepared ramekins.
  • Chill until cold and set (at least 3 hours and up to 12) Run a small knife around the edge of the ramekins to loosen the panna cotta.
  • If that doesn't work, dip the bottom of the ramekin in hot water for a few seconds.
  • Invert ramekin onto a plate.
  • Spoon berry sauce over panna cotta.
  • Serve.

This is a special Italian dessert that literally means "cooked milk." I heard the name somewhere and looked it up. All that was left to happen was for my curiosity to induce me to make it myself--which didn't take long! It is best served with berries, or a light fruit/liqour sauce. Any assortment of fresh, seasonal fruit may be served with panna cotta, but berries are especially nice. To use other ripe, soft fruits, such as cherries, peaches or apricots, just remove the stones and peels as necessary and cut them into thin slices or bite-size pieces.

2 teaspoons unflavored gelatin
1/2 cup milk
2 1/2 cups whipping cream
1/2 cup sugar
1 vanilla beans or 2 teaspoons pure vanilla extract
1 cup fresh berries, gently washed, drained, and sweetened to taste (optional)
6 sprigs of fresh mint (optional)

Steps:

  • *Half & half, buttermilk, whole milk, and/or sour cream may be substituted for part of the cream.
  • In a small bowl, sprinkle the gelatin over 1/2 cup milk; let stand until the gelatin is softened, about 5 minutes.
  • In a large saucepan, combine heavy cream and sugar. Add vanilla extract or vanilla bean.
  • *If using a vanilla bean, slice the bean lengthwise and scrape out seeds into cream (add whole bean to cream for additional flavor). Bring cream just to a simmer (do not let it boil), whisking occasionally until sugar has completely dissolved; remove from heat and remove vanilla bean pod.
  • Add the softened gelatin mixture and whisk to completely dissolve the gelatin.
  • Strain hot cream mixture into a large glass measuring cup with a pouring spout; pour into ramekins or custard cups.
  • *NOTE: Don't skip the straining step as it removes any bits of undissolved gelatin and insures a nice smooth dessert. Also, don't let the cream mixture cool before straining. If using a vanilla bean, lightly swirl the cream to distribute the seeds evenly. Refrigerate for at least 3 hours or overnight.
  • *To unmold and serve, carefully dip bottom of each ramekin in a baking pan of hot water briefly. Run a thin knife around edge of each ramekin to loosen it from the inside of the bowl. Wipe the outside of the mold dry and place on individual chilled serving plate (topside down). Invert the custard onto the plate and carefully lift off ramekin (or muffin cups) (shake gently to release).

27 ounces coconut milk
1/2 cup sugar
1/8 teaspoon salt

Steps:

  • Add 1/4 cup very cold water to a bowl. Sprinkle water with gelatin. Set aside to soften 5 minutes or so.
  • Meanwhile, in a medium saucepan add Coconut Milk, sugar and salt. Stirring, bring to a boil. Remove from heat.
  • Stirring, add gelatin mixture to Coconut Milk. Mix until gelatin is completely dissolved. Divide coconut milk mixture among custard cups and cool. Cover with plastic wrap and refrigerate until set, 4 hours or more, preferably overnight.
  • Serve right from custard cups; or unmold by running a small knife around edges and dipping cups in hot water for 20 seconds.
  • Invert cups onto plate and top with chopped, or puréed mango.

1 tablespoon powdered unflavored gelatin
4 cups heavy cream
1/2 vanilla bean (split lengthwise)
1/2 cup sugar
1 cup mixed berry
chocolate syrup (for topping)

Steps:

  • In a small bowl, combine water, and gelatin and let sit for 10 minutes. DO NOT STIR.
  • In a medium saucepan, heat cream, vanilla beanm and sugar to a simmer over medium heat, stirring occasionally to disolve the sugar.
  • As soon as it simmers, turn off heat and add gelatin.
  • If gelatin does not dissolve in 3 minutes, return to heat and warm gently until dissolved.
  • Pour mixture into 6-8 dessert cups.
  • Chill, uncovered for at least 2 hours.
  • TO SERVE:.
  • Dip cups in hot water for 10 seconds and then turn out onto dessert plates.
  • Surround each panna cotta with berries and drizzle chocolate syrup over the top.

1/2 cup milk, cold
3 cups whipping cream
1/2 cup milk
1/2 cup sugar

Steps:

  • In large bowl, add gelatin to cold milk and let soften.
  • In saucepan, combine whipping cream, second amount of milk, sugar and vanilla and bring to a boil. Pour over gelatin mixture and stir until completely dissolved. Set bowl over very cold water and chill 1/2 hour, stirring occasionally, until almost set. Pour mixture into 8 individual 1/2 cup ramekins and store in fridge until completely set. Cover with plastic wrap if making the night before.
  • To serve, quickly dip ramekins in warm water to loosen sides. Invert onto individual serving plates and shake to release. Cut fruit into small pieces and arrange on each plate around panna cotta. In the photo in the cookbook, they have a small pile of each kind of fruit around the panna cotta.

Number Of Ingredients 8

3 teaspoons gelatin
3 tablespoons nonfat milk
2/3 cup nonfat milk
2 1/2 cups fat-free half-and-half
1/2 cup sugar
2 vanilla beans (or 2 tsp vanilla bean paste)
1/2 cup mascarpone cheese
1/2 cup fat free sour cream or 1/2 cup nonfat plain yogurt

Steps:

  • Sprinkle the gelatin over the 4 Tbsp milk and let sit for 15 minutes to soften.
  • In a saucepan, stir the milk, half and half, sugar, and vanilla bean over medium heat until it just starts to boil. Remove from heat.
  • In a large bowl, whisk together the mascarpone and the yogurt/sour cream
  • until smooth.
  • Stir the gelatin into the heated milk mixture and stir well for at least 2 minutes or until bits of gelatin are no longer visible.
  • Pour the mixture through a strained into the mascarpone mixture to remove any bits of hard gelatin.
  • Grease 6-8 custard cups and pour the panna cotta into each mold. Chill overnight. Serve inverted onto a plate with a fruit or chocolate garnish.
