I got this recipe when I worked at Colonial Pines Inn, a bed and breakfast in Highlands, N.C. Delicious! Feel free to put in what you like, maybe some chopped mushrooms,wheat germ,seasonings, etc.

Number Of Ingredients 7

Ingredients

1 cup cooked pureed white beans, including some liquid or 1 cup beans, of your choice (try Bush's baked vegetarian beans!)
1 cup cooked brown rice (try yellow rice!)
1/2 cup uncooked quaker multigrain cereal (or oats)
1 cup cornbread stuffing mix (Pepperidge Farm is good)
1 tablespoon parsley
1/2 cup chopped onion
1 tablespoon soy sauce

Steps:

Mix ingredients all together.
Shape into patties.
Fry on low heat in olive oil, till each side is browned.
Serve with lettuce and tomato and grilled onions on a bun, with your favorite toppings.
Enjoy!

1 large avocados or 2 small avocados
1/2 cup mayonnaise
1 garlic clove, pressed
1 tablespoon lemon juice
2 tablespoons chopped fresh basil
1 -1 1/2 lb ground turkey
1 1/4 ounces vegetable soup mix (1 package)
1 egg
1/4 cup breadcrumbs
1 large avocado

Steps:

Peel avocados, and mash in a small bowl; stir in mayonnaise and remaining ingredients. Cover and chill.
Makes about 1 1/2 cups.
Burgers:.
Mix turkey, egg, breadcrumbs and vegetable soup mix together in large bowl. I usually let sit for at least 30 minutes to allow the meat to absorb the veggies. Form into patties and cook on medium-high for about 7 minutes on each side.
Add thinly sliced red onions, tomatoes, sprouts and any other toppings you like to the burgers and enjoy.

This recipe is from Pillsbury. Makes a nice meatless lunch or dinner for 2. Fill free to adjust toppings for your personal preference. I served these with cherry tomatoes and assorted olives on the side.

Ingredients

1/2 cup chili sauce
1 tablespoon Worcestershire sauce
1/4 teaspoon dried thyme, crushed
1/8 teaspoon cayenne pepper
2 frozen veggie burgers (3.2 oz each)
1/4 teaspoon dried garlic
1/4 teaspoon ground black pepper
lettuce leaf
red onion, slices
fresh chives, snipped

Steps:

Preheat a contact grill for 5 minutes.
While the grill is heating, in a small saucepan, mix the chili sauce, Worcestershire sauce, thyme and red pepper together; heat to boiling, reduce heat and simmer stirring occasionally while patties are cooking.
Place the frozen patties on the bottom grill surface; close grill and cook for 2 minutes.
Mix together the dried garlic and black pepper, sprinkle over the patties and cook an additional 2 to 4 minutes longer or until golden brown.
Serve the patties on a bed of lettuce leaves topped with warm sauce and sliced red onion slices.
