Browning Sauce (Substitute for Kitchen Bouquet or Gravy Master) image

I found this recipe on the web and posted it in response to a request. I have not as yet tried it. The recipe did not specify how much beef soup base to use. I'd suggest starting with enough to flavor the 1 cup of water and maybe a tad more.

1/2 cup sugar
1 cup hot water
beef base

Steps:

  • Be careful while preparing this as it may sputter.
  • Add the sugar to a saucepan and heat on a low or medium-low heat until browned, about 5-10 minutes. When the mixture starts to get dark, take it off the heat and carefully add the water (this may sputter and you don't want to get burned).
  • Add the beef soup base and put back on a low heat, stirring until the water is all mixed inches
  • Cool and store in a disposable container.
  • Use a spoonful or two when making gravies, stews, sauces, meatloavs, meatballs, etc.

3 potatoes, diced
1 large onion, chopped
2 stalks celery, sliced
2 lbs stewing beef, cubed
1/4 cup all-purpose flour
1 1/2 teaspoons salt
1/2 teaspoon pepper
1 garlic clove, minced
1 bay leaf
1 cup beef broth
1 teaspoon Worcestershire sauce
1 teaspoon paprika
2 teaspoons browning sauce

Steps:

  • arrange vegetables in a slow cooker -- top with beef chunks.set aside.
  • mix flour, salt, pepper and sprinkle over meat.
  • stir well -- add remaining ingredients.
  • cover, heat on low setting for 8-10 hours or on high for 4-5 hours --
  • remove and discard bay leaf.
  • You know I find it easy to convert any favorite stre recipe from stove top to slow cooker -- if it usually simmmers 35-45 minutes.that equals 6-8 hours on low or 3-4 hours on high -- Recipes that cook 1-3 hours will be done in 8-12 hours on low or 4-6 on high.at least that is what I use as a guideline.

Simple Brown Gravy Recipe - (4.1/5) image

2 cups low sodium beef broth
1/4 cup butter
1/4 teaspoon Kitchen Bouquet or Worcestershire sauce (see note)
1/2 teaspoon onion powder
1/2 teaspoon paprika
2 tablespoons water
2 tablespoons cornstarch
salt and pepper to taste

Steps:

  • Place broth, butter, Kitchen Bouquet, onion powder and paprika into a 2 quart saucepan and bring to a boil for 2 minutes. Lower heat to a simmer. In a small bowl, stir together the water and cornstarch to form and very smooth paste, called a slurry. Dip about 2 tablespoons of the hot broth into the slurry and stir until pourable and smooth, then stir the slurry into the simmering broth. Continue to cook and stir until the mixture is of the consistency you like, about 3 more minutes. (The gravy will thicken slightly more off the heat). Taste and add salt and pepper as desired. Kitchen Bouquet or Worcestershire sauce is added for color and deeper flavor, and can be omitted if desired. This recipe is appropriate for a chicken or vegetable gravy as well; simply substitute a good quality low-sodium chicken or vegetable broth for the beef.

A substitute for the famous browning sauce. I use all vegan and gluten-free ingredients. I made this up to use for pot roast. It can be used anywhere Kitchen Bouquet® is required or just to make tasty gravies. Add 1 tablespoon to recipes calling for browning sauce. Store in an airtight container in the refrigerator for up to 1 week. Add a little oil on top and it will keep longer.

  • Heat 1/2 cup water in a saucepan over medium-low heat. Add brown sugar and stir until fully dissolved. Add broth powder and stir until completely combined.
  • Stir in remaining water, 1 tablespoon at a time, stirring constantly until sauce is thick. Simmer, stirring often, until reduced to desired consistency.

You have never had corned beef like this and if you try it, I truly believe you will never go back to the traditionally 'boiled' beef. This recipe was given to my mother-in-law during WWII by her Jewish boarding house owner and it has become a treasured family recipe. Unlike the commonly boiled corned beef, this is a slow braise that is tender, flavorful, and has a caramelized surface when it's done. I serve it with colcannon, steamed cabbage wedges, braised carrots, and parsnips. It is our favorite St. Patrick's/Jewish dinner, but we love it so much that I cook it year around.

1 (5 pound) flat-cut corned beef brisket
1 tablespoon browning sauce (such as Kitchen Bouquet®), or as desired
1 tablespoon vegetable oil
1 onion, sliced
6 cloves garlic, sliced
2 tablespoons water

Steps:

  • Preheat oven to 275 degrees F (135 degrees C).
  • Discard any flavoring packet from corned beef. Brush brisket with browning sauce on both sides. Heat vegetable oil in a large skillet over medium-high heat and brown brisket on both sides in the hot oil, 5 to 8 minutes per side.
  • Place brisket on a rack set in a roasting pan. Scatter onion and garlic slices over brisket and add water to roasting pan. Cover pan tightly with aluminum foil.
  • Roast in the preheated oven until meat is tender, about 6 hours.
