Steps:
- Place corn in microwave-safe bowl and microwave on defrost 5 minutes; drain.
- Preheat large saute pan 1-2 minutes.
- Place butter in pan, swirl to coat.
- Add onions, green pepper and pimentoes, stirring occasionally 2-3 minutes.
- Add corn, salt and pepper, stirring occasionally, about 5 minutes.
- Serve.

POTATOES O'BRIEN WITH CORN FLAKES
Steps:
- Preheat oven to 350 degrees F. Mix potatoes, soup, and sour cream in a bowl.
- Place mixture in casserole dish; use Pam so it doesn't stick. Pour cheese on top. (Sometimes I use more or less than 1 cup...depending on mood.) Drizzle butter over casserole. (I've cut this down to 1/2 stick and it works just as well.) Add corn flakes on top.
- Cook 1 hour. Let stand for 15 minutes.

CORNED BEEF O'BRIEN
Heres an easy recipe I got from the back of a label on a can of corned beef hash. It makes an easy supper to throw together.

Steps:
- In a skillet, melt the butter and saute the onion and green pepper for 5 minutes or til soft. Add the can of corned beef hash. Heat, stirring occasionally, until mixture is crisp and brown as desired.
- Sprinkle with the cheddar cheese. Cover the pan and heat until cheese is melted, 3 to 5 minutes.
