Steps:
- Heat a large pot of salted water to a boil, drop in pasta. Cook pasta to just shy of al dente.
- Heat sauce pot with butter over medium heat, whisk in flour and cook for 1 minute, whisk in stock then milk, allow the sauce to thicken, and season with salt, pepper and nutmeg. Stir in cheeses in a figure eight motion. Stir in Dijon and ham and remove the sauce from heat. Drain pasta and combine with sauce.
MACARONI AND CHEESE WITH HAM
If you like, use just one type of cheddar or mix with another melting cheese, such as pepper Jack, Muenster, Swiss, or mozzarella.

- Preheat oven to 375 degrees. In a large pot of boiling salted water, cook pasta until al dente; drain and reserve. Meanwhile, in a 5-quart heavy pot, melt butter over medium heat. Add onion; cook, stirring occasionally, until softened, 3 to 5 minutes. Whisk in flour to coat onion. In a slow steady stream, whisk in milk until there are no lumps.
- Cook, whisking often, until mixture is thick and bubbly and coats the back of a wooden spoon, 6 to 8 minutes. Stir in cayenne, if using, and 1 cup each yellow and white cheddar cheese. Season with 1 teaspoon salt and 1/4 teaspoon pepper.
- Toss pasta with cheese mixture; fold in ham. Transfer to a 9-by-13-inch baking dish or individual dishes. Set aside.
- In a food processor, pulse bread until large crumbs form. Toss together with remaining 1/4 cup each white and yellow cheddar, and 1/4 teaspoon salt. Top pasta with breadcrumb mixture. Bake until top is golden, about 30 minutes.

- Cook macaroni according to package directions; drain and set aside. In a large saucepan, melt butter over low heat; whisk in flour until smooth. Whisk in the milk, bouillon and pepper. Bring to a boil; cook and stir for 2 minutes or until thickened. Remove from the heat. Stir in 1 cup cheddar cheese, ham, Parmesan cheese and macaroni., Transfer to a greased 2-qt. baking dish. USE UP THE HAM MACARONI AND CHEESE
This is a recipe I invented after I found myself in possession of several pounds of leftover baked ham. It quickly became one of my family's favorite comfort foods. It saves your budget and will make a quick weeknight meal. We always use the larger amounts of cheese and ham, but adjust to suit your taste.

- Cook the macaroni from mix until very al dente (6 minutes).
- Drain and put in greased casserole dish.
- Add cheese powder from mix, butter, milk, sauteed vegetables, ham, and cheeses.
- Mix well, cover, and bake at 375 for 25 minutes.
- Remove cover, stir well, and bake for another 20 minutes.
- If it appears dry at any point during baking add more milk.

MACARONI WITH HAM AND CHEESE

- Preheat the oven to 425 degrees.
- Bring 3 quarts of water to a boil for cooking the macaroni. Add salt to taste. Add the macaroni and cook 10 to 12 minutes, or until tender. Drain and return to pot.
- Meanwhile, cut the ham into 1/2-inch cubes and set aside. There should be about 2 cups.
- Slice the mushrooms. There should be about 2 cups.
- Cut the Cheddar into slices about 1/4 inch thick. Stack the slices and cut them into 1/4-inch-wide strips. Cut the strips into 1/4-inch cubes. There should be about 2 cups.
- Melt 2 tablespoons of the butter in a saucepan and add the flour, stirring with a wire whisk. Cook for about a minute; then add the milk, stirring rapidly with the whisk. Let simmer about 1 minute and add the nutmeg, Cheddar cheese, and salt and black pepper to taste.
- Heat the remaining tablespoon of butter in a skillet and add the onions and mushrooms. Cook, stirring, until the mushrooms are wilted. Add the ham and cook, stirring, about 1 minute. Add the cheese sauce, the cayenne and cream. Cook, stirring, about 1 minute.
- Pour and scrape the mixture into the macaroni and mix well. Transfer to a buttered 10-cup baking dish. Sprinkle the top with Parmesan cheese and place in the oven. Bake 10 minutes. Turn the broiler to high.
- Brown the macaroni and cheese under the broiler until the top is nicely browned, 2 to 3 minutes.

MACARONI AND CHEESE WITH HAM

- Bring a large saucepan of salted water to a boil. Add the macaroni and cook, stirring occasionally, for 7 to 10 minutes, until al dente. Drain the macaroni in a colander.
- Preheat the oven to 350°F. Lightly coat a large baking dish or pan with oil or cooking spray.
- Melt the butter in the same saucepan over medium heat. Add the flour and stir constantly until the mixture starts to bubble. (Do not let the mixture brown or your sauce will have a brown tinge to it.) Add about 1/2 cup of the milk and stir until smooth. Add the remaining milk and cook, stirring frequently, for 10 to 15 minutes, until it comes to a boil. Remove the pan from the heat, add the cheese, and stir until the cheese is completely melted.
- Cut the ham into 1/2-inch cubes and stir into the cheese sauce. Add the macaroni and stir gently until it is completely coated with the cheese.
- Place the mixture in a large baking dish and bake for 25 to 30 minutes, until the cheese is bubbly. Remove from the oven and serve immediately.
LEFTOVER HAM AND MACARONI CASSEROLE
This is a wonderful, easy recipe to use up those holiday ham leftovers. You can add some veggies. I would suggest any of all of 1/2 cup celery, 4 oz. can of mushrooms, olives or peas. Even my picky kids love it and it has that homemade mac n cheese flavor. Adapted from a Mary Margaret McBride recipe, an ingenious woman, incredibly knowledgable for her time.

- Cook noodles.
- Stir lemon into milk and let stand.
- Spray 13 x 9 casserole dish with non-stick spray.
- Combine ham, milk mixture, eggs, salt & pepper, and cheese with cooked and drained noodles, and any extra veggies.
- Pour mixture into dish, dot with butter or breadcrumbs.
- Bake at 375 for 30 minutes.
