3/4 cup butter, softened, divided
1/2 cup packed brown sugar
2 cups sliced peeled fresh peaches
3/4 cup sugar
1 large egg, room temperature
1 teaspoon vanilla extract
1-1/4 cups all-purpose flour
1-1/4 teaspoons baking powder
1/4 teaspoon salt
1/2 cup 2% milk

Steps:

  • Melt 1/4 cup butter; pour into an ungreased 9-in. round baking pan. Sprinkle with brown sugar. Arrange peach slices in single layer over sugar. , In a large bowl, cream sugar and remaining butter until light and fluffy. Beat in egg and vanilla. Combine the flour, baking powder and salt; add to creamed mixture alternately with milk, beating well after each addition. Spoon over peaches., Bake at 350° for 45-50 minutes or until a toothpick inserted in the center comes out clean. Cool for 10 minutes before inverting onto a serving plate. Serve warm.

¼ cup butter
½ cup packed light brown sugar
¼ teaspoon ground nutmeg
5 fresh peaches - peeled, pitted and halved
½ cup butter, softened
½ cup white sugar
1 egg
1 ¼ cups all-purpose flour
2 teaspoons baking powder
½ teaspoon salt
½ cup milk

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • Melt 1/4 cup butter or margarine in an 8-inch square pan. Sprinkle with brown sugar and nutmeg. Arrange peach halves, cut side down, in pan.
  • In a large bowl, cream the butter and sugar until light and fluffy. Beat in egg. Stir together flour, baking powder and salt. Add flour mixture to creamed mixture alternately with milk, beating well after each addition. Spread batter over peaches.
  • Bake in preheated oven until lightly browned on top, 35 to 40 minutes. Remove cake from oven, and let stand in pan for 5 minutes; invert onto serving platter.

1 (18 ounce) box yellow cake mix
3 eggs
1/3 cup oil
1/3 water
3 cups sliced peaches
whipped topping (optional) or ice cream (optional)

Steps:

  • Preheat oven to 350°F
  • Place butter and brown sugar in 9x13-inch pan and place in the oven while it's heating; when butter is melted, stir to combine.
  • Mix cake as directed, using juice from peaches in place of water.
  • Arrange peaches on top of sugar mixture, and spread batter over fruit.
  • Bake for 45 to 50 minutes, until cake tests done with a toothpick.
  • Let stand 5 minutes for topping to set. Then place a large platter or cookie sheet over the pan and turn upside down.
  • Serve warm or room temp with whipped topping or ice cream.

3/4 cup Smucker's® Orchard's Finest® Coastal Valley Peach Apricot Preserves
2 tablespoons butter, melted
1 (15 1/4 ounce) can apricot halves, drained
1 cup Pillsbury BEST® All Purpose Flour
2/3 cup sugar
1 teaspoon baking powder
1/4 teaspoon salt
1/4 cup Crisco® Butter Flavor All-Vegetable Shortening
1 large egg
1/2 cup milk
1/2 teaspoon vanilla extract
1/4 teaspoon almond extract
whipped cream (optional)

Steps:

  • HEAT oven to 350°F Coat 12 muffin cups generously with no-stick cooking spray.
  • STIR together preserves and butter in small bowl. Place 1 tablespoon in bottom of each muffin cup. Top with 1 apricot half, rounded side down.
  • BEAT flour, sugar, baking powder, salt, shortening, egg, milk, vanilla and almond extract in large bowl with electric mixer on medium for 2 minutes or until smooth. Top each muffin cup with about 3 tablespoons batter.
  • BAKE 18 to 20 minutes or until toothpick inserted in center comes out clean. Cool 10 minutes. Run sharp knife around edge of each cup. Invert onto cookie sheet. Spoon any remaining preserves from cups over top of cakes. Serve warm with whipped cream, if desired.
  • If there are not enough apricot halves in the can, cut larger ones in half, then evenly divide among the muffin cups.

1 package yellow cake mix
1/2 cup butter
1 cup packed brown sugar
1 (29 ounce) can sliced peach halves in syrup
maraschino cherry, halves if desired
2 eggs
whipped cream, if desired

Steps:

  • Preheat oven to 350.
  • Melt butter in a 13x9 pan.
  • Sprinkle with brown sugar, evenly.
  • Drain peaches and reserve syrup.
  • Arrange slices in the sugar.
  • If desired arrange cherries round side down in the sugar.
  • Add enough water to syrup to make 1 1/3 cup liquid.
  • Add this and the eggs to the cake mix and mix as directed.

I happen to be a big fan of upside-down cakes, but an even bigger fan of peaches!! This cake is quite awesome for fellow peach-lovers. You can serve this warm or at room temperature with vanilla ice cream.

1/2-2/3 cup pecan halves
4 tablespoons unsalted butter
1/4 cup light brown sugar (packed)
2 tablespoons dark corn syrup
2 tablespoons Bourbon
3 firm ripe peaches, peeled, pitted
3/4 cup all-purpose flour
1/4 cup cornstarch
1 teaspoon baking powder
1/8 teaspoon salt
4 large eggs, room temperature
3/4 cup granulated sugar
1/2 teaspoon vanilla extract
1 tablespoon unsalted butter, melted

Steps:

  • Heat oven to 350 degrees. Butter 10-inch round cake pan.
  • Make topping: Place pecans in small baking pan and toast in oven until fragrant, about 10 minutes. Let cool.
  • Melt butter in small saucepan over medium-high heat. Stir in brown sugar, corn syrup, and bourbon. Heat to boiling and boil, stirring constantly, until thickened to consistency of syrup, about 5 minutes. Pour into prepared pan. Cut peaches into 1/2-inch-thick slices and arrange in concentric circles on syrup. Arrange pecans decoratively between peaches.
  • Make cake batter: Sift flour, cornstarch, baking powder, and salt together into mixing bowl.
  • Beat eggs and sugar together in mixer bowl on medium-high speed until thick and doubled in volume.
  • Mix vanilla and melted butter in small bowl. Stir large spoonful of egg mixture into butter mixture, then gently fold back into egg mixture. Using rubber spatula, gently fold in flour mixture 1/4 cup at a time. Pour batter evenly over peaches.
  • Bake until cake is golden and center springs back when lightly pressed, 30-35 minutes. Immediately run table knife around edge of cake and invert onto serving plate. Serve.

1/2 cup butter, melted
1 cup sour cream
2 eggs
1/4 cup packed light-brown sugar

Steps:

  • Heat oven to 350°F Grease two 8 x 2-inch swirl cake pans with butter. Or, line two 8 x 2-inch round layer-cake pans with foil; butter foil.
  • Topping: Stir butter, sugar, cinnamon and nutmeg in small bowl until sugar is dissolved. Spread over bottoms of pans, dividing equally. Arrange can of apricots, cut side down, in each pan.
  • Cake: Combine cake mix, butter, sour cream, eggs, sugar and reserved syrup in large bowl. On low, beat 1 minute. Increase speed to medium; beat 2 minutes. Spoon into pans, being careful not to move apricots.
  • Bake in 350°F oven 45 to 50 minutes, until toothpick tests clean. Let cakes cool in pans on racks 3 minutes. Run knife around edge of cakes; carefully invert onto serving plate; remove pans. Serve slightly warm or at room temperature.

1/3 cup butter
1 cup dark brown sugar
2 (15 ounce) cans apricot halves, well-drained (reserve juice)
2 tablespoons apricot juice
1 tablespoon lemon juice (fresh is best)
1/3 cup shortening
1/2 cup granulated sugar
1 egg, well beaten
1 1/2 cups flour, sifted
1 teaspoon baking powder
1/8 teaspoon salt
1/2 cup milk
1 teaspoon vanilla extract

Steps:

  • Melt butter and brown sugar in a large frying pan.
  • Heat slowly and stir constantly until a light brown syrup forms.
  • Add fruit juices. Pour syrup into cake pan; arrange apricot halves cut side up in the syrup.
  • Preheat oven to 350°F.
  • Sift remaining dry ingredients together.
  • Cream shortening and sugar together; add egg and beat until fluffy.
  • Add dry ingredients to the batter alternatively with the milk and vanilla.
