1 pound ground beef
1/2 cup tomato sauce ((plain))
1 ounce taco seasoning ((1 packet or about 3-4 Tablespoons homemade taco seasoning))
4 rolls
4 slices cheddar cheese
Other toppings (optional): lettuce, guacamole, sour cream, salsa, tomato, pickled onions, sliced olives, bell peppers, etc.

Steps:

  • Place ground beef in large skillet over medium-high heat. Cook, while crumbling meat with a fork or wooden spoon, about 4-6 minutes, or until meat is cooked through. Drain off excess fat.
  • Add tomato sauce and taco seasoning to pan with meat. Stir to combine and cook another minute or two over medium-high heat until heated through.
  • Spoon meat on to bottom part of rolls. Top with slices of cheese and other favorite toppings. Serve immediately.

This is weeknight comfort food at its finest. We created a homemade sauce that is tangy and flavorful but also quick and easy. We used both ketchup and canned tomato sauce for lots of tomato-y zip and just a touch of brown sugar for a bit of sweetness and slight caramel finish. Green bell pepper is a key addition; it really enhances the other ingredients, elevating the flavor profile into the realm of a true sloppy joe.

2 tablespoons unsalted butter
1 medium onion, diced
1 green bell pepper, diced
1 clove garlic, minced
1 pound lean ground beef
12 ounces (1 1/3 cup) tomato sauce
3/4 cup ketchup
2 tablespoons brown sugar
2 tablespoons Worcestershire sauce
1 tablespoon yellow mustard
1 tablespoon red wine vinegar
1 teaspoon paprika
Pinch of cayenne pepper
Kosher salt and freshly ground black pepper
6 hamburger buns, toasted

Steps:

  • Melt the butter in a large skillet over medium-high heat. Add the onions and peppers and cook, stirring occasionally, until softened and starting to caramelize in some spots, 6 to 7 minutes. Add the garlic and cook, stirring, until fragrant, about 1 minute. Stir in the beef and cook, breaking up the meat with a wooden spoon or spatula, until it is browned, no longer pink in the middle and cooked through, 7 to 8 minutes.
  • Stir in the tomato sauce, ketchup, brown sugar, Worcestershire sauce, mustard, red wine vinegar, paprika, cayenne pepper, 1 teaspoon salt and a generous amount of black pepper and simmer, stirring occasionally, until thickened and heated through, 5 to 6 minutes. Spoon the meat onto the toasted buns.

Sloppy joes are a simple, American staple the whole family can get stuck into. Add a dash of spicy chipotle or smoky barbecue sauce to the minced beef filling for some zing.

1 tbsp vegetable oil
1 onion , finely chopped
2 small red peppers or yellow peppers, finely chopped
2 garlic cloves , crushed
400g minced beef
2 x 400ml cans chopped tomatoes
2 tbsp chipotle or smoky barbecue sauce
4 cheese slices
6 burger buns
crispy onions , to serve
iceberg lettuce , to serve

Steps:

  • Heat the oil in a deep frying pan, then fry the onion, pepper and garlic for 8-10 mins until softened. Add the mince, breaking it up with a wooden spoon as you go, and stir until it browns all over. Tip in the tomatoes and chipotle, or barbecue sauce, and add a little seasoning. Simmer for 10-15 mins until the sauce has thickened.
  • Put the cheese slices on top of the mince and cover with a lid for 2 mins to let it melt into the sauce. Pile into the buns with the crispy onions, and lettuce on the side for scooping up the extra sauce.

2 (8 ounce) cans crescent dinner rolls
1/2 lb lean ground beef
2 tablespoons old el paso taco seasoning mix
1 cup old el paso thick 'n chunky salsa
1 cup shredded cheddar cheese, pepper-jack cheese blend
1 egg, beaten
1 tablespoon cornmeal

Steps:

  • Heat oven to 375°F Spray cookie sheet with cooking spray. Unroll both cans of dough on work surface and pinch seams to seal. Press into two 12x8-inch rectangles, cut into total of 8 rectangles.
  • in 10-inch skillet, cook beef over medium-high heat 5 to 7 minutes, stirring frequently, until thoroughly cooked. Stir in taco seasoning mix and salsa, simmer 5 minutes. Spoon about 1/4 cup meat mixture in center of 1 dough rectangle. Sprinkle with 2 tablespoons cheese. Fold rectangle over to form triangle; press edges with fork to seal. Place on cookie sheet. Brush with egg; sprinkle with cornmeal. Repeat with remaining dough and filling.
  • Bake 10 to 15 minutes or until deep golden brown.

1 pound ground beef
1 small onion, chopped
2 garlic cloves, minced
1 cup ketchup
1 can (4 ounces) chopped green chiles
1/2 cup beef broth
1/4 cup chili sauce
1 teaspoon chili powder
1/2 teaspoon ground cumin
1/4 teaspoon crushed red pepper flakes
1/4 teaspoon salt
1/4 teaspoon coarsely ground pepper
6 hamburger buns, split
2 tablespoons butter, softened

Steps:

  • In a large skillet, cook beef and onion over medium heat for 6-8 minutes or until beef is no longer pink, breaking up beef into crumbles; drain. Add garlic; cook 1-2 minutes longer. Stir in the ketchup, chiles, broth, chili sauce and seasonings. Bring to a boil. Reduce heat; simmer, uncovered, for 15 minutes, stirring occasionally., Meanwhile, spread cut sides of buns with butter. Place on baking sheets, buttered side up. 1 1/2 lbs ground beef
1 medium onion, chopped
2 jalapeno peppers, sliced and chopped (seeds and all)
1 (8 ounce) can tomato sauce, plus
1 cup water
garlic powder (1/2 tspn or more)
salt
flour tortilla
cheddar cheese sauce
garlic butter (make your own if needed by adding a dash of garlic powder to some softened butter)
sour cream

Steps:

  • Brown ground beef with chopped onion, chopped Jalapenos and salt.
  • Drain or spoon off excess fat after browning.
  • Add tomato sauce, water and garlic powder to meat mixture.
  • Simmer for 10-15 mins to thicken to desired consistency for serving.
  • Heat tortillas keeping them soft and pliable.
  • I usually heat them on a gas burner set to low, turning them quite often.
  • Brown crusty spots are quite welcome!
  • Swipe garlic butter across center of warmed tortilla.
  • Add single portion of meat mixture and fold in half like a taco.
  • Add warm cheese sauce over meat and a couple of small dallops of sour cream.
  • Indulge yourself!

1 (15.5 ounce) can Sloppy Joe sauce
1 (30 ounce) can refried beans
6 (10 inch) flour tortillas
1 ½ cups shredded Cheddar cheese
1 cup diced black olives, drained
1 cup sour cream
1 medium red onion, diced

Steps:

  • Heat a large skillet over medium-high heat. Cook and stir ground beef in the hot skillet until browned and crumbly, 5 to 7 minutes. Drain and discard grease.
  • Reduce heat to medium and stir in Sloppy Joe sauce. Stir in refried beans until blended and cook until heated through, 5 to 7 minutes.
  • Meanwhile, warm tortillas over medium-low heat on a flat skillet.
  • Fill tortillas with meat mixture and top as desired with Cheddar cheese, black olives, sour cream, and diced onion.

This recipe came from a little paperback cookbook called "A Taste of Mexico." It's a little gem that is filled with recipes contributed by high school Homemaking teachers from all over California. 1 cup Bisquick baking mix
1/2 cup yellow cornmeal
1/2 cup milk
7 ounces whole kernel corn, drained
1 lb ground beef
1/2 cup scallion, sliced with tops
1/2 cup green bell pepper, chopped
1/2 cup water
3 tablespoons green chilies, diced
8 ounces taco sauce
8 ounces tomato sauce
8 ounces picante sauce, mild

Steps:

  • Prepare corn dough: mix Bisquick, cornmeal and milk together until dough forms.
  • Stir in drained corn; set aside.
  • Meanwhile, prepare filling by browning ground beef with onion in a 10 inch skillet; drain fat.
  • Stir in remaining ingredients.
  • Cover and heat to boiling over medium-low heat.
  • Drop corn dough by heaping spoonfuls onto boiling beef mixture.
  • Cook, uncovered, 10 minutes.
  • Cover and cook 10 minutes longer.
  • Serve hot.
