8 tablespoons unsalted butter, softened
1 large pineapple, skinned, cored and cut into eight or nine 3/4-inch-thick slices
3/4 cup dark brown sugar
1/2 cup buttermilk
1 teaspoon vanilla extract
2 large eggs, lightly beaten
1 cup all-purpose flour
3/4 cup granulated sugar
1 teaspoon kosher salt
3/4 teaspoon baking powder
1/4 teaspoon baking soda
1 cup granulated sugar
2 tablespoons light corn syrup
Juice from 1 large lime
2 teaspoons pink peppercorns

Steps:

  • For the cake: Preheat the oven to 350 degrees F.
  • Heat a 9-inch skillet over medium heat and melt 2 tablespoons butter. Add the slices of pineapple in a single layer and sprinkle the brown sugar over the fruit. Cook until the pineapple browns slightly, 2 to 3 minutes. Flip the pineapple slices. Turn off the heat and keep warm.
  • Whisk together the buttermilk, vanilla, eggs and the remaining 6 tablespoons butter in a medium bowl until smooth. Use a rubber spatula to stir in the flour, granulated sugar, salt, baking powder and baking soda until completely smooth. (The batter will be fairly stiff.) Pour the batter over the pineapple.
  • Transfer the skillet to the center of the oven and bake until a toothpick inserted in the center of the cake emerges clean, 40 to 45 minutes. Cool for about 10 minutes before carefully unmolding onto a serving platter. (See Cook's Note.)
  • For the caramel: Combine the granulated sugar, corn syrup, lime juice and 1/4 cup cold water in a medium stainless saucepan. Stir in the pink peppercorns and bring to a gentle simmer. Cook until the sugar is dissolved, then cook, 10 minutes. Set aside to cool slightly. When the cake is unmolded, pour the caramel over the cake.

1/3 cup (packed) dark brown sugar
1/3 cup butterscotch morsels
2 8-ounce Golden Delicious apples, peeled, halved, cored, cut into 1/4-inch-thick slices

Steps:

  • For cake:
  • Preheat oven to 375°F. Mix flour, baking powder, and salt in medium bowl. Using electric mixer, beat butter in large bowl until smooth. Gradually add sugar and beat until well blended. Add eggs and vanilla; beat until blended. Beat in flour mixture, then sour cream. Stir in chopped apple. Set aside while preparing butterscotch-caramel apples.
  • For butterscotch-caramel apples:
  • Melt butter in 10-inch-diameter nonstick ovenproof skillet over medium heat. Add brown sugar and butterscotch morsels; stir until melted and smooth and mixture is bubbling, about 2 minutes. Add apple slices to skillet and cook until golden brown, using tongs to turn slices, about 3 minutes per side (there will be a lot of liquid in skillet). Remove skillet from heat and let cool 3 minutes. Using tongs, arrange apple slices in skillet in concentric circles or other pattern.
  • Carefully spoon cake batter in small dollops atop apples in skillet. Using offset spatula, gently spread batter evenly to edges of skillet (batter will seem to float on top of apples and pan juices). Bake until cake is golden brown and tester inserted into center comes out clean, about 30 minutes. Cool in skillet 10 minutes. Run knife around edges of cake to loosen. Place large platter atop skillet. Using oven mitts or pot holders, hold platter and skillet firmly together and invert, allowing cake to settle onto platter. Serve cake warm.

Steps:

  • Preheat the oven to 350 degrees Fahrenheit (175 degrees Celsius). Spray a bundt pan with nonstick spray.
  • Evenly pour the melted butter into the bottom of the bundt pan and top with the brown sugar.
  • Cut the pineapple rings in half and, alternating with the cherries, place into the butter-brown sugar mixture in the bottom of the pan.
  • In a large bowl, combine the cake and pudding mixes together. Add the reserved pineapple juice and milk. Add the eggs and vegetable oil, and mix until fully blended.
  • Pour the batter evenly over the pineapple and cherries.
  • Bake for 30 minutes, following the cake mix instructions for a bundt pan, until an inserted toothpick comes out clean.
  • Cool the cake for about 10 minutes before running a knife around the edges and inner ring of the pan. Invert onto a serving plate and slice between pineapple rings to serve.
  • Tip.
  • When you add the reserved pineapple juice and milk in step 4, they should equal 1 cup of liquid. If you like, you can first pour the reserved pineapple juice into a liquid measuring cup. Add enough milk until you have 1 cup of liquid. Add the liquid to the combined cake-and-pudding mix, then proceed with the recipe.

200g soft butter , plus extra for greasing
200g self-raising flour
1 tsp baking powder
200g golden caster sugar
4 eggs
2 tbsp milk
3 ripe peaches
85g light brown sugar
2 x 116g tubs clotted cream
2 tbsp golden caster sugar
1⁄2 tsp vanilla extract

Steps:

  • Heat the oven to 180C/160f fan/gas 4, line the tins and make the sponge base as described in the 'goes well with' recipe (below right), but do not divide it between the tins just yet.
  • Halve and stone the peaches, then cut each half into 4. Toss the peaches with the sugar, then arrange in a single layer in one of the tins. Tip half the cake mix over the peaches and the other half into the second tin. Bake for 20-25 mins until cooked and golden - the tin containing the peaches may take 5-10 mins longer than the other. Leave to cool on a wire rack while you make the filling.
  • Whisk the clotted cream with the sugar and vanilla until stiff. Spread this over the plain sponge, then carefully top with the peach sponge.

Easy and it doesn't use a cake mix. Butterscotch is almost as good as chocolate. I have been making this cake for years, since I was married to Peter Pan. He wanted the recipe, but I got custody of it and the kids.

1 1/2 cups self rising flour
1 cup granulated sugar
1 cup sour cream
1 (3 1/2 ounce) package instant butterscotch pudding mix
1/2 cup water (I use 1 % or 2 % milk instead)
4 large eggs
1/2 cup vegetable oil
1 (11 ounce) bag butterscotch chips

Steps:

  • Preheat oven to 325 degrees.
  • Grease a Bundt pan.
  • I use Pam spray In a large bowl combine all ingredients, except butterscotch chips.
  • Mix at low speed for 1 minute, then at medium speed for 3 minutes.
  • Fold in butterscotch chips.
  • Pour into Bundt pan.
  • Bake for 50-60 minutes or until toothpick inserted near center of cake comes out clean.
  • Cool in pan for 30 minutes.
  • Invert onto serving plate.
  • Can dust with confectioners sugar.

  • Beat the flour mixture into the creamed mixture.
  • Add in half and half and vanilla; beat for about 5 minutes on high speed.
  • Spread the cake batter over the coconut mixture in the pan.
  • Bake for 30-40 minutes, or until cake is golden brown, and a toothpick in the middle comes out clean when inserted in center of the cake.
  • IMMEDIATELY invert pan on a serving dish/plate.
  • Serve with a topping/dollop of whipped cream.
  • Delicious!
