1 cup onion, minced

Steps:

  • Boil peeled potatoes in salted water until done. Cool to room temperature.
  • Place diced potatoes in large bowl.
  • Mix mayonnaise, cider vinegar, sugar, mustard, salt, garlic powder, and pepper in another bowl.
  • Add to potatoes.
  • Add celery and onions and mix well.
  • Stir in eggs.
  • Sprinkle a little paprika on top.

½ teaspoon shredded carrot
¼ teaspoon dried parsley

Steps:

  • Bring a large pot of salted water to a boil. Add potatoes and cook until tender but still firm, about 15 minutes. Drain, cool and chop.
  • In a large bowl, combine the potatoes, mayonnaise, sweet pickle relish, sugar, onion, mustard, vinegar, celery, pimentos, carrot, parsley, pepper and salt. Mix well, chill and serve.

800g small new potato
3 shallots, finely chopped
1 tbsp small capers (optional)
2 tbsp cornichons, finely chopped (optional)
3 tbsp mayonnaise, or to taste
3 tbsp extra-virgin olive oil
1 tbsp white wine vinegar
small handful parsley leaves, roughly chopped

Steps:

  • Boil the potatoes in salted water for 20 mins until just cooked, drain, then cool.
  • Cut the potatoes into chunks, then throw into a bowl with the shallots, capers and cornichons, if using. Add enough mayonnaise to bind, then mix together the olive oil and vinegar and add just enough to give a little sharpness to the salad. Stir in the finely chopped parsley and serve.

3 to 3-1/2 pounds potatoes (about 10 medium)
6 hard-boiled large eggs
1 medium onion, finely chopped
1/2 cup mayonnaise
1/2 cup evaporated milk
3 tablespoons white vinegar
2 tablespoons prepared mustard
1/4 cup sugar
1 teaspoon salt
1/4 teaspoon pepper
Additional hard-boiled large eggs, sliced
Paprika

Steps:

  • In a large kettle, cook potatoes in boiling salted water until tender. Drain and cool. Peel potatoes; cut into chunks. Separate egg yolks from whites. Set yolks aside. Chop whites and add to potatoes with onion., In a small bowl, mash yolks. Stir in mayonnaise, milk, vinegar, mustard, sugar, salt and pepper. Pour over potatoes; toss well. Adjust seasonings if necessary. Spoon into a serving bowl. Garnish with egg slices and paprika. Chill until serving.

3 lbs idaho potatoes (about 6)
1 1/2 cups heavy whipping cream
2 tablespoons butter
1/4 cup shallot, finely chopped (or white of scallion)
3 teaspoons garlic, minced
2 bay leaves
2 teaspoons fresh rosemary, finely chopped
3/4 cup cream cheese, at room temperature
1/2 cup milk
1/2 teaspoon paprika
salt, to taste
pepper, to taste
3/4 cup parmesan cheese, freshly grated
1/4 cup dried breadcrumbs
2 tablespoons fresh parsley, chopped

Steps:

  • Preheat the oven to 375*F. Oil the bottom of a shallow 2-quart baking dish.
  • Peel and very thinly slice potatoes. Put them in a mixing bowl and add 3/4 cup of the cream. Mix, and set aside.
  • Melt the butter in a skillet, and add the shallots(or scallions) and garlic. Saute over low heat for 3 to 4 minutes. Do not brown.
  • Add bay leaves and rosemary to skillet. Whisk in the cream cheese, milk, and remaining 3/4 cup cream. Simmer, whisking constantly, until smooth, 2 to 3 minutes. Add the paprika and salt and pepper. Discard the bay leaves and pour the mixture over the potatoes; toss gently.
  • Arrange the potato mixture in a baking dish, spreading it out evenly. Sprinkle it first with the Parmesan, and then with bread crumbs.
  • Bake until the potatoes are tender and the top is golden brown and bubbly, 1 to 1 1/4 hours. Sprinkle the parsley over and serve immediately. Enjoy!

1/8 cup white wine vinegar (white vinegar will do)
1/8 cup canola or olive oil
fresh dill (dry dill will do)
Dressing:
mayonnaise
green onions

Steps:

  • 1. Scrub or peel potatoes. Boil until just soft. Drain. 2. Mix vinaigrette of dill, wine, and oil. Don't be afraid to put in more dill and vinegar than the recipe calls for. Chop up fresh dill, as much as you like. 3. While potatoes are still warm, pour on vinaigrette and toss. Let potatoes cool. 4. When potatoes are cool, mix in mayonnaise and green onions. 5. Season with ground black pepper and salt, if desired.
