CRUNCHY PEANUT & TOFFEE BONBONS
Serve these gorgeous peanut butter and milk chocolate balls as a party buffet sweet treat, or wrap up as an edible gift

Steps:
- Put the peanut butter, butter and sugar in a food processor. Pulse until it comes together. Add the toffee and pulse again. Remove and, using the palms of your hands, roll mixture into small balls. Place on a tray. Chill for 30 mins.
- Melt the chocolate in a heatproof bowl in the microwave on High for 1 min or set over a pan of boiling water (make sure the bowl doesn't touch the water). Using a fork, dip the balls, one at a time, until half covered in chocolate. Roll in the peanuts. Put on a tray lined with baking parchment and leave to harden (about 2 hrs).
- Store between layers of baking parchment in a covered container and keep chilled. Will keep for 1 week in an airtight container.

- Beat cream cheese in large bowl with mixer until creamy. Gradually beat in milk. Add dry pudding mix; beat 2 min. Whisk in COOL WHIP.
- Spoon into resealable plastic bag; cut small corner from bottom of bag. Pipe about 1 Tbsp. pudding mixture into each of 24 paper-lined mini muffin cups; stand pretzel in each cup. Freeze 2 hours or until firm.
- Peel liners off bonbons. Melt dipping chocolate as directed on package; stir in peanut butter until melted. Dip bottom halves of bonbons in chocolate, then in nuts. Place on waxed paper-covered baking sheet. Let stand until chocolate is firm.

BUCKEYES (CRISPY PEANUT BUTTER BONBONS)
I was unaware these were called 'buckeyes' until some midwestern friends informed me of their correct name. They were sort of an ad-lib dessert for a vegan/gluten-free catering job. I kept the recipe when I saw how fast they disappeared.

- Cream peanut butter and powdered sugar in bowl of an electric mixer. Add rice cereal and mix until incorporated. (I find that using a whisk attachment, as opposed to the paddle attachment, crushes up the cereal a bit more effectively and results in a better texture.).
- Using a meatballer or a spoon, scoop out bits of the mixture and roll into 3/4" balls. Cover either two dinner plates or a cookie sheet in parchment and space the balls about 1" apart. Place in freezer for 15 minute to harden.
- Melt chocolate in a double-boiler over the stove or on 50% power in your microwave for about 2 minutes, stopping to stir once. Remove peanut butter balls from freezer. Poke one with a toothpick and swirl about 3/4 of the way up the sides in the chocolate mixture. Return it to the parchment and repeat the process for the remaining candies.
- Return tray of completed buckeyes to the freezer for 20 minutes, or until chocolate has hardened. Keep in freezer or refrigerator until serving. If frozen, allow to thaw 5 minutes before serving.

CRUNCHY PEANUT BUTTER & CHOCOLATE PIE
This pie is VERY peanut buttery! It doesn't have to be crunchy, but it's good that way. I love the combination of the different layers (both their taste and texture) in this heavenly pie. Plus, and this is a BIG plus for me, it's simple! Oh, and it is a pretty little pie, too! (Cook time listed is for chilling.)

Steps:
- Measure peanut butter into a bowl.
- Heat peanut butter in microwave for 20 seconds.
- Spread approximately 1/2 cup peanut butter into bottom of each crust (about 1 cup total).
- Let remaining peanut butter (approx 1/2 cup) cool.
- Mix 2 boxes of pudding with 3 cups skim milk, beating until thick.
- Divide pudding mixture in half and pour one half over each pie.
- Mix whipped topping and remaining peanut butter until blended.
- Spread one half of whipped topping mixture over each pie.
- Sprinkle peanuts on top of pies.
- Refrigerate 1 hour or until well-chilled.
- Serve and ENJOY!

CHOCOLATE CRISPY PEANUT BUTTER BALLS
Our family has been making these little guys to add to holiday cookie baskets since 1987. They freeze well, so you can make them early. The recipe's from one of my favorite junior league cookbooks, "Creme de Colorado".

Steps:
- Combine first 4 ingredients in large bowl and mix well.
- Roll dough into 1-inch balls and chill, covered.
- For chocolate coating, melt German and semisweet chocolates, and paraffin wax in top of double boiler over boiling water, stirring constantly until smooth.
- Use a toothpick to insert in each ball, dipping balls into chocolate mixture, one at a time.
- Set balls on wax paper to harden.
- Store in airtight container in refrigerator.
