1 lb Italian sausage (I like to use hot)
2 cups penne pasta
1 1/2 tablespoons olive oil
3 -4 garlic cloves, minced
1 medium zucchini, sliced
1 medium onion, chopped
3 -4 roma tomatoes, seeded and chopped
1/4 cup chopped parsley
1/4 cup chopped basil
2 teaspoons oregano leaves
1/2 teaspoon fresh ground pepper
1/4 teaspoon salt
1/4-1/2 cup grated parmesan cheese

Steps:

  • Cook pasta according to package directions. Drain and keep warm.
  • Meanwhile in a stir-fry pan or large skillet heat olive oil. Crumble and cook Italian sausage until almost done.
  • Add garlic, zucchini and onion; stir-fry 2-3 minutes.
  • Add tomatoes, parsley, basil and the rest of the seasonings. Stir-fry an additional 1-2 minutes.
  • Remove from heat and stir in pasta. You could also plate the pasta and just serve the stir-fry over the top if desired.
  • Top with Parmesan cheese and serve immediately.

Steps:

  • Stir fry garlic for one minute.
  • Add beef strips.
  • Stir fry 2 minutes.
  • Season with salt and pepper.
  • Remove.
  • Add zucchini to pan.
  • Stir fry until tender crisp.
  • Return beef to skillet.
  • Add tomatoes and dressing.
  • Heat through.
  • Serve over pasta.
  • Sprinkle with Parmesan.

3 egg yolks
4 tablespoons cream
4 teaspoons sugar
1 1/2 cups flour
1 tablespoon butter, melted
1/4 teaspoon ground cardamom
vegetable oil (for frying)
powdered sugar (for garnish)

Steps:

  • Beat egg and yolks slightly; stir in other ingredients. Use just enough flour to make a soft dough.
  • To keep dough light and fluffy, handle dough as little as possible.
  • Roll out on floured cloth and cut with a Fattigmann cutter.
  • Fry in hot oil until very lightly browned.
  • Drain on a paper towel and dust with powdered sugar.

I've never really cared for yams or sweet potatoes, as my mom always served them whipped with marshmallows on top. Nothing wrong with that dish....it just wasn't my style. But this...this I can get behind 100%.

4 garnet yams (I prefer the garnet yams) or 4 sweet potatoes (I prefer the garnet yams)
extra virgin olive oil
butter, to taste

Steps:

  • Wash the yams/sweet potatoes and pat dry with a paper towel.
  • Lightly oil the skins of the yams/sweet potatoes with the olive oil.
  • Bake at 400 degrees for approximately an hour, or til tender.
  • Carefully peel the skins off of the sweet potatoes and serve with butter.

This is a tasty, easy way to serve chicken when you are on the South Beach Diet...and even when you're not on the diet! It's on the spicy side, but amounts of spices can be adjusted according to taste. Cook time is an estimation.

1 tablespoon canola oil
red pepper flakes, to taste
2 boneless skinless chicken breast halves
lemon pepper, to taste
granulated garlic, to taste
water, as needed

Steps:

  • Put the frying pan (preferably cast iron) over medium heat. Drizzle the oil in the pan. You can use more or less oil, as needed -- you just need enough to lightly coat the pan.
  • Saute the red pepper flakes in the oil -- brown, but don't let them burn.
  • Add the chicken breasts to the pan and generously sprinkle the spices over, to taste. Cover with a tight-fitting lid and turn to medium-low.
  • After approximately 3-5 min, lift the lid and drizzle about a tablespoon of water into the pan. Re-cover and turn to medium low.
  • When the breasts have turned opaque on top (approximately five minutes -- time will vary), turn over and re-season with just the lemon pepper and the garlic.
  • Recover and continue to simmer til done -- approximately 5-10 minutes, adding a teaspoon or two more water if necessary.
  • Drizzle any remaining juices on top of the chicken when serving.

2 teaspoons balsamic vinegar
1 tablespoon italian romano cheese or 1 tablespoon parmesan cheese

Steps:

  • Preheat wok or large skillet. Add olive oil.
  • When very hot, add all vegetables.

  • Add bouillon, balsamic vinegar, and water.

  • Put the breast(s) (how many depends on how big they are when pounded out) into the pan and sprinkle Johnny's Pork and Chicken Seasoning to taste.
  • Let brown, turn, and sprinkle again.

The recipe can be varied by adding other ingredients (ham, bacon, broccoli, different cheeses, a can of cream of mushroom soup...use your imagination).

6 cups dehydrated potato slices
1/4 cup butter
1 1/3 cups half-and-half
4 1/2 cups boiling water
2 cups cheddar cheese, cubed
1/3 cup flour
water

Steps:

  • Mix potatoes, butter, half and half and boiling water in an ungreased 3 quart pan; stir in cheese cubes.
  • Bake at 400F for 45-60 minutes or til potatoes are tender.
  • When tender, mix flour and enough water to make a medium-thick smooth paste.
  • Stir into potatoes and put back into oven to finish baking (approx. 10 minutes).

This is a wildly addictive recipe my sister gave me. It's just spicy enough to make you catch your breath, but so tasty you'll keep coming back for more! Don't let the tofu in the recipe fool you. Tofu absorbs the flavors of the dish it's in, and by the time you get done making this, your family won't even know it's tofu! I highly recommend you do yourself a favor and get the hermetically sealed tofu (NOT the ones floating in water!). There is a big quality/flavor difference. Also, do not expect the same results if you do not make the recipe according to instructions. If you leave the liquid in the tomatoes or don't cook it according to instructions it will come out completely differently. My sister said she only made that mistake once...and swore she'd never do it again.

6 -12 garlic cloves, minced
1 -3 teaspoon red pepper flakes, to taste
1 (12 1/3 ounce) package extra firm tofu (I use Mori-Nu Silken)
2 (15 ounce) cans whole tomatoes, packed in juice
1/4 teaspoon oregano
1 teaspoon basil
salt, to taste
pepper, to taste
1 (12 ounce) package spaghetti, cooked, rinsed and drained
1/2 cup fresh parmesan cheese, grated

Steps:

  • Squeeze juice from tomatoes til dry; reserve tomatoes and juice in separate bowls.
  • Remove tofu from the box and place in a small bowl.
  • Squish with your hands until approximately the size of small peas; set aside.
  • Put oil, garlic, pepper flakes and tofu in wok or deep skillet; saute til garlic is golden (about 2 minutes).
  • Add squished tomatoes; stir 3-5 minutes.
  • Add spices; stir 3-5 minutes.
  • Add reserved tomato juice; continue to stir 3-5 minutes.
  • Add cooked, drained pasta; stirr 3-5 minutes.
  • Remove from heat; add cheese, toss and serve.
  • Let cool.
  • Best served at room temperature.
