This easy to make side dish tastes just like the rice from your favorite Mexican restaurant.

Ingredients

2 tablespoons butter
1 cup uncooked white rice
3 cloves garlic minced
1/2 teaspoon ground cumin
1/4 teaspoon chili powder
1/4 teaspoon pepper
Pinch of cayenne pepper
1/4 cup finely diced onion
1/4 cup tomato sauce
1 3/4 cups chicken broth
1-2 tablespoons fresh chopped cilantro

Steps:

Melt butter in a large saucepan over medium heat. Add rice and cook, stirring constantly, until just golden. Add garlic, cumin, chili powder, pepper and cayenne and cook a few minutes more.
Stir in onions and cook until onions are tender. Stir in tomato sauce and chicken broth and bring to a boil.
Reduce heat to low. Cover and simmer for 20-25 minutes, or until rice is tender. Fluff with a fork. Stir in cilantro.

Ingredients

24 jumbo shrimp, peeled, deveined and rinsed (approx. 2 pounds)
1 cup olive oil
1 cup soy sauce
1 cup lime juice
1/3 cup chopped cilantro
1 teaspoon finely minced chipotle pepper (canned chipotles in adoba sauce, add more for extra heat)
1 tablespoon light brown sugar
splash Grand Marnier
splash tequila

Steps:

Combine all ingredients expect shrimp in a small mixing bowl and whisk until smooth.
Skwered shrimp, then place in a shallow pan.
Marinate jumbo shrimp in sauce mixure for 10 to 15 minutes prior to grilling.
Grill until shrimp are done.
Garnish with slices of lime and enjoy!
