This is recipe is loved by everyone who has tried it. My husband's uncle kept this recipe a secret for many years and would not share it with anyone; we had to wait until he passed away, and then my husband's aunt gave us the recipe. I made these for a Thanksgiving dinner we had at church, and now every time we have any sort of meal at church I am always asked if I going to make uncle Dick's potatoes. Even in the summer, this is what they want me to make. I hope you enjoy this recipe as much as we do.

4 pounds potatoes, peeled and cut into chunks
1 cup sour cream
1 (8 ounce) package cream cheese, softened
1 tablespoon salt
¼ teaspoon ground white pepper
1 clove garlic, crushed
1 tablespoon melted butter
½ teaspoon paprika
¼ cup chopped fresh chives

Steps:

  • Place potatoes into a large pot and cover with salted water; bring to a boil. Reduce heat to medium-low and simmer until tender, about 20 minutes; drain and transfer potatoes to a large bowl.
  • Mash sour cream, cream cheese, salt, white pepper, and garlic into the potatoes with a potato masher to your desired consistency; transfer to a baking dish, cover with plastic wrap and refrigerate 8 hours to overnight.
  • Preheat oven to 350 degrees F (175 degrees C).
  • Drizzle melted butter and sprinkle paprika evenly over the top of the potatoes.
  • Bake in preheated oven until hot in the center, about 30 minutes. Garnish with chives.

CLASSIC MASHED POTATOES

Number Of Ingredients 6

3 pounds boiling potatoes, such as Yukon Gold
Kosher salt
1 1/2 cups whole milk
6 tablespoons unsalted butter
1/2 cup sour cream
1/2 teaspoon freshly ground black pepper

Steps:

  • Peel the potatoes, cut them into 1-inch cubes and place them in a large pot of boiling salted water. Simmer uncovered for 10 to 12 minutes, until the potatoes are tender. Drain the potatoes in a colander and then return them to the pot.
  • Meanwhile, heat the milk and butter in a small saucepan until the butter is melted.
  • Using a hand held mixer, break the potatoes up and at low speed slowly add the hot milk/butter mixture to make the potatoes very creamy. Add the sour cream, 2 teaspoons of salt and the pepper and whisk to combine. Serve hot.

BAKED PURPLE MASH

3 tablespoons butter, divided
3 pounds purple new potatoes, halved
3 cloves garlic, smashed
Salt and freshly ground black pepper
3/4 cup heavy cream, warmed
1 cup plus 2 tablespoons shredded pepper jack cheese
1/2 cup shredded Parmesan, divided
1/4 cup panko breadcrumbs

Steps:

  • Preheat the oven to 375 degrees F.
  • Coat the bottom and sides of an 8 by 8-inch baking dish with 1 tablespoon butter. Set aside.
  • In a large pot, add enough water to fill 3/4 of the way, and then add the potatoes, garlic and a hefty pinch of salt. Bring to a boil and cook until a fork is easily inserted, but the potatoes still hold their form, about 20 minutes. Strain in a colander and place back over the empty pot, allowing the remaining heat to evaporate some of the moisture from the potatoes and garlic, just a few minutes. Mash the contents of the pot well, and then add the remaining 2 tablespoons butter and the heavy cream. Mash until smooth, but if you like it chunky, leave it chunky. Then stir in 1 cup pepper jack cheese and 1/4 cup Parmesan. Spoon into the prepared baking dish and spread evenly. Stir together the remaining 1/4 cup Parmesan, 2 tablespoons jack cheese and breadcrumbs. Sprinkle the mixture evenly over the top of the potatoes. Bake in the oven until the top is golden brown, about 20 minutes. Serve warm.

CREAMY MASHED POTATOES



Creamy Mashed Potatoes image

2 pounds Yukon gold potatoes
1/2 cup heavy cream
4 ounces unsalted butter, cut into pieces
1 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper

Steps:

  • Peel the potatoes and cut into uniform 1/2-inch pieces. Place into a 4-quart saucepan and cover with cold water by at least 1-inch. Cover, set over high heat and bring to a boil. Once boiling, remove the lid, decrease the heat to maintain a simmer and cook until the potatoes can easily be crushed with a pair of tongs, approximately 15 to 20 minutes. Drain in a colander.
  • Put the cream, butter, salt and pepper into the now empty 4-quart saucepan and place back over the heat until the butter has melted. Remove from the heat and set a food mill fitted with the smallest die, on top of the pot. Add 1 cup of potatoes at a time to the mill. Once all of the potatoes have passed through the mill, stir to combine. Taste and adjust the seasoning, if necessary. Serve immediately.

My uncle makes a lot of excellent, rich dishes. This is a soup adaptation of his twice-baked potatoes. Not for dieters, but an excellent, creamy soup for a cold day.

4 large baking potatoes
2/3 cup butter
2/3 cup flour
1 1/2 quarts milk
1 cup sour cream
4 whole green onions, chopped
10 ounces cheddar cheese, grated
1 dash salt and pepper
2 cups bacon, crisped

Steps:

  • Bake potatoes until tender.
  • Melt butter slowly in pan, blend in flour, making a roux.
  • Gradually add milk, stirring constantly, then add salt and pepper to taste.
  • Scoop out potatoes and set aside.
  • Chop half of the potato peels to use in soup.
  • When milk is very hot, whisk in potatoes, onions, and potato peels.
  • Whisk well and add sour cream. Heat thoroughly.
  • Add cheese a little at a time until all is melted. Serve with crumbled bacon.

I remember my Grandmother making this marvelous dish over 65 years ago. We were the only vegetarians in our family and therefore Grandma cooked just to please me. A very easy, simple but tasty side dish. Young potatoes are especially good.

4 large russet potatoes or 4 large yukon gold potatoes
1 large onion, sliced thin
4 tablespoons butter (or more if required)
2 tablespoons extra virgin olive oil
1/2 teaspoon granulated garlic powder
1/2 teaspoon dried dill weed
1/4 teaspoon salt
1/4 teaspoon black pepper

Steps:

  • Peel and slice potatoes about 1/8 inch thick or thinner.
  • Slice onion thinly.
  • In a large frying pan on medium-high heat, melt butter, add olive oil.
  • Add sliced potatoes and onions, cover and fry for 10 minutes. Using a spatula, turn the potatoes and onions over so they do not break apart. If potatoes appear too dry, add some additional butter.
  • Sprinkle with granulated garlic powder, dried dill weed, salt and pepper and continue to fry with cover removed for another 5 minutes or until potatoes begin to turn slightly brown; turning occasionally.
  • Serve hot with your meal.
  • Note: You may use 2 or 3 large garlic cloves (chopped small), instead of granulated garlic powder. Add to the potatoes after the first 10 minutes of cooking time.

1 yellow onion, diced
2 small shallots, minced
4 garlic cloves, minced
4 tablespoons butter, divided
3 lbs potatoes (red or creamer are best)
milk
salt and pepper
2 teaspoons horseradish

Steps:

  • Sauté the onion, shallots and garlic in 1 Tablespoon butter until starting to caramelize.
  • In the meantime boil potatoes until soft.
  • Drain and mash the potatoes with a mixer or potato masher.
  • Add the remaining 3 Tablespoons butter until melted.
  • Add the onion mixture,.
  • Start adding milk until the potatoes are the right consistency.
  • Taste for salt and pepper; add the horseradish.
