1 teaspoon baking soda
½ teaspoon salt
½ cup butter, softened
1 cup white sugar
2 eggs
2 teaspoons vanilla extract
2 ripe bananas, mashed
1 cup fresh blueberries

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease 3 small loaf pans.
  • Mix flour, baking soda, and salt together in a bowl.
  • Beat butter and sugar with an electric mixer in a large bowl until light and fluffy. The mixture should be noticeably lighter in color. Add 1 egg and allow to blend into the butter mixture before adding the second egg along with vanilla extract. Beat mashed bananas thoroughly into the mixture. Add flour mixture in small increments while beating until just combined into a thick batter. Fold blueberries into the batter; pour into prepared loaf pans.
  • Bake in the preheated oven until a toothpick inserted into the center comes out clean, 30 to 35 minutes. Cool in the pans for 10 minutes before removing to cool completely on a wire rack.

1 1/2 cups all-purpose flour, plus extra for dusting the loaf pan
1 teaspoon baking soda
1 teaspoon fine salt
1/2 teaspoon baking powder
1/2 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1 cup sugar
1/2 cup vegetable oil
2 large eggs, beaten
2 teaspoons vanilla extract
2 ripe bananas, peeled and coarsely mashed to yield about 3/4 cup of mashed banana
1 cup (about 4 ounces) fresh blueberries

Steps:

  • Place an oven rack in the center of the oven. Preheat the oven to 350 degrees F. Butter and flour a 9- by 5- by 3-inch loaf pan. Set aside.
  • In a medium bowl, whisk together the flour, baking soda, salt, baking powder, cinnamon and nutmeg. In a large bowl, beat the sugar, oil, eggs and vanilla until blended. Stir in the bananas and blueberries. Add the dry ingredients and stir just until blended.
  • Pour the batter into the prepared loaf pan. Bake until a cake tester inserted in the center of the loaf comes out clean, about 1 hour. Cool for 15 minutes. Remove the loaf from the pan and cool completely on a wire rack, about 2 hours.

50 g butter, melted
1/2 cup sugar
1 large ripe banana, mashed
1/2 teaspoon vanilla

1 orange, juice and rind of (1/2 cup juice)
1 cup blueberries (fresh or frozen)
1/4 cup brown sugar
1/4 cup white sugar
1 tablespoon cinnamon

Steps:

  • mix flour, baking powder and baking soda together in a large bowl.
  • in another add the melted butter, then add the sugar, mashed banana, vanilla, eggs, milk, orange juice and rind.
  • mix with a fork to combine.
  • tip into dry ingredients and fold together until dry ingedients are barely damp.
  • stir in the (thawed) blueberries, taking care not to overmix.
  • spoon mixture into deep, buttered or sprayed muffin pans and sprinkle each muffin with 1/4 tsp cinnamon sugar.
  • bake at 200 degrees for 10-12 minutes or until muffins spring back when pressed in centre.

⅓ cup cold water
3 eggs
1 egg white
2 large bananas, mashed
1 cup white sugar
2 cups all-purpose flour

¼ cup chopped pecans
1 pint fresh blueberries
¼ cup white sugar

Steps:

  • Preheat an oven to 350 degrees F (175 degrees C). Grease a 9x5 inch loaf pan.
  • Whisk together the canola oil, water, eggs, and egg white. Stir in the banana, then add 1 cup of sugar. Combine flour, baking soda, salt, and flax seeds in a separate bowl. Stir the banana mixture into the flour mixture. Fold in the pecans. Combine blueberries and 1/4 cup of sugar in a small bowl, then pour into the prepared pan. Carefully pour batter over the berries.

1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt

1 egg
3/4 cup ripe banana, mashed
1/2 cup milk
1 cup blueberries, fresh or frozen

Steps:

  • Preheat oven to 350 degrees.
  • Use 1 tblsp. of the flour to sprinkle blueberries.
  • In a large bowl stir together remaining flour, baking powder, baking soda, salt and sugar. Mix thoroughly.
  • In another bowl combine mashed banana, milk and egg.
  • Stir in dry ingredients, mix until well blended.
  • Gently fold in blueberries.
  • Pour mixture into a 9 X 5 inch loaf pan and bake for 1 hour or until bread begins to pull away from the sides of the pan, and wooden toothpick inserted into center of pan comes out clean.
  • Let cool for 10 minutes, remove loaf and place on rack to cool completely.

Uncle Dobo's Special Banana Blueberry Bread image

We had a bunch of bananas that needed making into bread, and we based our recipe on the easy one here at Zaar by Charishma Ramchandani (recipe#9353). Easy and delicious, it makes a nice, light banana bread which is not overly sweet. Thanks for the inspiration, Charishma! You can either mix the batter by hand or with an electric mixer; either will work fine and you only need one large bowl.

3 very ripe bananas
2 eggs
3/4 cup granulated sugar
2 1/3 cups Bisquick
1 1/2 tablespoons molasses
1/2 teaspoon cinnamon
1/4 teaspoon nutmeg
1/4 teaspoon mild curry powder (our favorite is Penzy's Maharajah curry powder)
1/8 teaspoon salt
3/4 cup fresh blueberries (I, of course, want Alaskan lowbush blueberries!)

Steps:

  • Preheat oven to 350 degrees F. Lightly butter a large loaf pan.
  • Peel bananas and mash in a large bowl.
  • Add the eggs and stir until well mixed, then stir in sugar.
  • Gradually stir in the Bisquick, then add remaining ingredients (batter will be a little lumpy).
  • Pour batter into the buttered loaf pan. Bake in preheated 350 degrees F oven for 60 minutes or until golden and knife or toothpick inserted in middle of loaf comes out clean. The loaf should be nicely risen and split down the middle on top.
  • Take from oven, remove from loaf pan, and let cool for 5-10 minutes sitting on wire rack, then serve warm. Is especially yummy with butter! Also good with softened cream cheese or even a little vanilla ice cream.

1/2 tsp. ground cinnamon
2-1/4 cups plus 2 Tbsp. flour, divided
1 cup plus 2 Tbsp. sugar, divided
1/4 cup plus 3 Tbsp. butter, divided
1-1/2 tsp. baking powder
1/2 tsp. baking soda
1 pkg. (8 oz.) PHILADELPHIA Cream Cheese, softened
1 cup mashed fully ripe bananas (about 3)
2 eggs
1 cup blueberries
1/2 cup pecan halves, coarsely chopped

Steps:

  • Heat oven to 350ºF.
  • Combine cinnamon, and 2 Tbsp. each flour and sugar in medium bowl. Cut 3 Tbsp. butter into small pieces. Add to cinnamon mixture. Use pastry blender or 2 knives to cut butter into cinnamon mixture until mixture resembles coarse crumbs. Reserve for later use.
  • Combine baking powder, baking soda and remaining flour. Beat cream cheese with remaining sugar and butter in large bowl with mixer until light and fluffy. Add bananas and eggs; mix well. Add flour mixture; mix just until moistened. Stir in blueberries and nuts. Top with reserved cinnamon mixture.
  • Spoon into greased and floured 9x5-inch loaf pan.
  • Bake 1 hour 15 min. to 1 hour 20 min. or until toothpick inserted in center comes out clean. Cool 20 min. Remove bread from pan to wire rack; cool completely.
