This is my grandma's favorite pie, she requests that I make it often. It is a custard type pie. During baking, the flour sinks to the bottom to make a crust! What could be easier? :)

4 eggs
1 cup sugar
1/4 cup butter, softened
1/2 cup flour
1/4 teaspoon salt
1/2 teaspoon baking powder
2 cups milk
1 cup shredded coconut
1 teaspoon vanilla
1/8 teaspoon ground nutmeg

Steps:

  • Preheat oven to 350 degrees F.
  • Put all ingredients in a blender.
  • Blend until all ingredients are well blended.
  • Pour mixture into a 10-inch, slightly greased, pie pan.
  • Bake for 1 hour.
  • May be eaten warm, but refrigerate any leftovers.

This pie is so simple. One batch of dough (mixed in the blender) will create a pie with a crust on the bottom, custard in the middle, and brown top.

1/4 cup butter
3/4 cup sugar
1/2 cup flour
2 cups milk
1 teaspoon vanilla
1/2 teaspoon salt
1/2-1 cup coconut (optional)

Steps:

  • Put all ingredients into a blender at high speed for 30 seconds.
  • Pour into greased 9- or 10-inc pie pan.
  • Bake at 350 degrees for 40 minutes or until knife comes out clean.

CUSTARD (BLENDER)

Makes it's own crust! If you've never tried this simple, delicious custard, you must do so. From P. Kinee, who has been making it for 40+ years.

Number Of Ingredients 8

4 eggs
1 cup granulated sugar
1/4 cup soft margarine
2 cups milk
1/2 cup all-purpose flour
1/4 teaspoon vanilla extract
coconut (optional)
cinnamon (optional)

Steps:

  • Place all ingredients except cinnamon in a blender in order given. Process until thoroughly blended; it will be slightly foamy. Pour into a buttered casserole dish. Sprinkle top with cinnamon.
  • Bake at 375* for 45 minutes to 1 hour. This makes it's own crust. The top will be brown and puff up as it cooks but will settle down as it cools.

3 eggs
1 1/2 cups sugar
3 tablespoons cocoa
5 ounces evaporated milk (1 small can)
1/4 cup butter
1 teaspoon vanilla

Steps:

  • Mix eggs, sugar,milk, and cocoa in blender for 1 minute.
  • Add 1/2 stick melted butter, pinch of salt, and 1 teaspoons vanilla.
  • Blend;pour into unbaked pie shell.
  • Bake at 350 degrees for 40-45 minutes.

2 cups flour
1 teaspoon salt
1/2 cup margarine, plus
3 tablespoons margarine
4 -5 teaspoons ice water
1/2 cup brown sugar
cinnamon

Steps:

  • Preheat the oven to 325 degrees Fahrenheit.
  • Mix the flour and salt together.
  • Cut in the 1/2 cup margarine with the ice water.
  • Roll out like you would a pie crust.
  • Sprinkle the brown sugar over the top.
  • You can use honey or maple syrup, but it will be messier and even stickier, if that is possible.
  • Dot with the 3 tablespoons margarine, and sprinkle with a dash of cinnamon.
  • Roll up into a thick roll like a cigar.
  • Slice the roll into 1/4 to 1/2 inch pieces.
  • Place the slices close together on a cookie sheet, so they won't come apart.
  • Bake for about 30 minutes.
  • Take these out of the pan while they are still warm or they will stick badly.
