WORLD'S BEST TACO SOUP

World's Best Taco Soup image

This is yet another "souped up" version of the popular Taco Soup recipes already available. Although there's nothing wrong with the other versions out there, this is just what I feel to be the "Cadillac" edition. A little bit of everything...from a can. This recipe makes quite a bit due to using standard can sizes, but trust me, it gets better as left-overs...

1 (4 ounce) can diced green chilies
1 (4 ounce) can sliced mushrooms, drained (stems & pieces are fine)

Steps:

  • Brown meat along with bell pepper in large skillet.
  • Drain the cans beans (not the Ranch Style, hominy, and olives into a bowl and set aside.
  • Combine all the ingredients in a large crock pot and mix well.

BONNIE'S ULTIMATE TACO SOUP WITH HOMEMADE CHIPS

BONNIE'S ULTIMATE TACO SOUP WITH HOMEMADE CHIPS image

We have tried a lot of Taco Soups that left us thinking that something was missing. So, we decided to try our hand at making our own. I have made this soup many times in several different ways, and each time, it was an improvement, but this final version is the one that my family likes the best. It is seasoned to perfection. You can also add other vegetables such as corn and use different varieties of beans. We prefer it just like it is written. Enjoy!

Categories     Beef

Number Of Ingredients 23

MEAT
1 pound of ground chuck, leave it sort of chunky. not fine.
SEASONINGS
1 teaspoon cumin
1 teaspoon garlic powder
1/2 teaspoon chili powder
1 teaspoon dried cilantro
1 teaspoon kosher salt
1 teaspoon coarse ground pepper
1 pkg. dry taco seasoning mix
1 pkg. dry ranch dressing mix
VEGETABLES
1/2 onion, diced
1 can northern beans, drained and rinsed, set aside.
1 can pinto beans, drained and rinsed, set aside.
1/2 can mild rotel tomatoes with chilis, undrained
1 can petite diced tomatoes (15 oz undrained)
LIQUID
5 cups of broth made with better than bouillon beef broth flavor
GARNISH
1 tablespoon sour cream
1 jalapeno ring per bowl
6 homemade tortilla chips

Steps:

  • Brown the ground chuck over medium high heat, and leave the chuck a little chunky for the soup. Drain the grease (I wipe the excess with a paper towel) When the meat starts to brown, add all the seasonings and gently mix them in with the meat. Then add the onion. Lower the heat to medium low and cook until the onions are half cooked. Add the petite tomatoes and mild Rotel in cans to the skillet (except the beans).
  • Rinse the beans and set them aside to drain. We will add them later.
  • Transfer the contents of the skillet to the soup pot. Add 5 cans of Better Than Bouillon, beef flavor, and gently mix it in. Cover and bring to a boil and then simmer. Test to see if onions are done, if not cook a few minutes more until tender) After you have simmered the soup for 40 minutes, then add the two cans of beans. Simmer on low heat for 15 minutes more..
  • HOW TO MAKE THE TORTILLA CHIPS: I fry the chips during the last 20 minutes of cooking time for the soup. So, let's make some chips. This doesn't take but a few minutes. Heat about 1/4 inch of Crisco vegetable oil in a large skillet over medium heat.
  • Cut tortilla chips from 6 yellow corn tortillas with kitchen scissors. Cut 3 at a time, first across the middle of the tortilla, then take each half and cut it into three strips.
  • This will give you 6 strips about 1 inch wide. Cut the strips twice across to make a chip about 1 ½ inches long.
  • Fry the chips in the hot oil until crispy and light brown, drain on paper towels, and then sprinkle with kosher salt while hot.
  • I made a star from the pointed chips in the serving for hubby, and I topped it with sour cream and a jalapeno ring. These chips are easy to make and complement a variety of Mexican foods, such as Taco Soup, Chili, Snacks, and Salsa.

2 tablespoons taco seasoning ((powdered not liquid))
1 tablespoon vegetable oil
1/2 red onion (, diced)
1 tablespoon tomato paste
10 ounces Rotel diced tomatoes and green chiles ((mild))
15 ounces canned corn ((can also use fresh or frozen))
15 ounce can beef or chicken broth ((low sodium))
2 tablespoons sour cream
1/2 cup heavy cream or half n half

Suggested taco soup toppings ((optional):)

  • Heat the vegetable oil in a 4-5 quart Dutch oven or soup pot over medium heat until the oil shimmers on the surface.
  • Add the meat, using a spatula to distribute it evenly across the surface, for fastest cooking. Stir frequently, breaking up the big chunks as you go.
  • When the meat has mostly browned (about 5 minutes), check the pot for excess grease/fat. Drain or spoon out and discard if there is more than about a tablespoon.
  • Add the onions to the pot and continue stirring.
  • When the meat is fully browned, add the tomato paste and the remaining 1 tablespoon of taco seasoning, mixing thoroughly.
  • Add the Rotel, the corn, and the broth, and increase heat to medium-high.
  • Bring the broth to a gentle boil, then lower heat to medium or medium-low to maintain a gentle simmer. Cook for 10 minutes and reduce heat to low.
  • Combine the cream and sour cream in a small mixing bowl. Remove a 1/4 cup of hot broth from the soup and whisk into the cream until combined. Then pour the mixture into the soup.

  • Nacho Cheese Sauce. Nacho cheese sauce is a great option for people who love cheesy dishes. It’s also great alongside chips, vegetables, and other finger foods.
  • Baked Corn Tortilla Chips. Baked corn tortilla chips are a great side dish for taco soup because they’re crunchy and hearty. They also add texture to the meal, which is nice compared to other side dishes that come with soup.
  • Veggie Straws. Veggies straws are another good side dish for taco soup because they are crunchy and healthy. They also have a light flavor that doesn’t compete with the flavors in taco soup, which makes them a great option.
  • Mexican Rice or Refried Beans. Mexican rice and refried beans go well with taco soup for a couple of reasons. First, they add protein to the mix, which is needed to make this dish truly satisfying and filling (after all, it is called taco soup).
  • Mashed Potatoes. Mashed potatoes are a great side dish for taco soup because they’re rich and creamy. They also go well with baked tortilla chips, which you can dip into the mashed potatoes.
  • Chili Cheese Fries. Chili cheese fries go well with taco soup because they are very filling. This makes them a great side dish if you want to have something more substantial than just soup for dinner.
  • Toppings. Last but not least, you should serve some toppings alongside taco soup. Some great options include Parmesan cheese, lettuce, tomatoes, and jalapenos.
  • Chips and Salsa. Who doesn’t like chips and salsa? This is the perfect side dish for taco soup because it adds flavor and crunch to your meal. It’s also a great way to use those fresh vegetables that you have lying around, such as tomatoes or cucumbers.
