Homemade granola couldn't be easier with Alton Brown's recipe from Good Eats on Food Network. Maple syrup sweetens this healthy melange of oats and nuts.

3 cups rolled oats
1 cup slivered almonds
1 cup cashews
3/4 cup shredded sweet coconut
1/4 cup plus 2 tablespoons dark brown sugar
1/4 cup plus 2 tablespoons maple syrup
1/4 cup vegetable oil
3/4 teaspoon salt
1 cup raisins

Steps:

  • Preheat oven to 250 degrees F.
  • In a large bowl, combine the oats, nuts, coconut, and brown sugar.
  • In a separate bowl, combine maple syrup, oil, and salt. Combine both mixtures and pour onto 2 sheet pans. Cook for 1 hour and 15 minutes, stirring every 15 minutes to achieve an even color.
  • Remove from oven and transfer into a large bowl. Add raisins and mix until evenly distributed.

We decided to give granola a makeover, and not just by cutting calories and sweeteners. Yes, we trimmed the sugar-but we also added healthy fats, like olive oil, and increased the fiber by including with almonds, sesame seeds and puffed millet. One 1/2-cup serving delivers 4 grams of fiber and only 8 grams of sugar! Add some milk (for calcium and protein) and your favorite dried or fresh fruit and you've got a complete breakfast or snack.

1 1/2 cups puffed millet
1 cup sliced skin-on almonds
1/3 cup unsweetened coconut flakes
1/3 cup roasted unsalted pumpkin seeds
2 tablespoons sesame seeds
1/3 cup extra-virgin olive oil
1/4 cup light brown sugar
1/4 cup pure maple syrup
2 teaspoons pure vanilla extract
Kosher salt

Steps:

  • Adjust an oven rack to the middle position and preheat the oven to 325 degrees F.
  • Toss together the oats, millet, almonds, coconut flakes, pumpkin seeds, sunflower seeds and sesame seeds in a large bowl.
  • Whisk together the olive oil, brown sugar, maple syrup, vanilla and 3/4 teaspoon salt together in a small bowl.
  • Pour the olive oil mixture into the oat mixture and toss until evenly coated. Spread out on a rimmed baking sheet and bake until golden and toasted, tossing the mixture around about halfway through, 30 to 40 minutes. Let cool completely on the baking sheet, then store at room temperature in an airtight container for up to 1 week.

5 cups rolled oats
1 cup blanched slivered almonds
1 cup chopped walnuts
1 cup chopped pecans
1 cup sesame seeds
1 cup wheat germ
2 cups shredded coconut
1 cup unsalted sunflower seeds
1 cup canola oil
1 ½ cups honey
1 cup raisins
1 cup dried cranberries

Steps:

  • Preheat the oven to 325 degrees F (165 degrees C).
  • In a large bowl, stir together the oats, almonds, walnuts, pecans, sesame seeds, wheat germ, coconut and sunflower seeds. In a small pan over medium heat, stir together the oil and honey. Cook and stir until blended. You could also do this in a large measuring cup in the microwave, heating for about 2 minutes and 30 seconds. Pour over the oat mixture, and stir to coat evenly. Spread out in an even layer on two cookie sheets.
  • Bake for 20 minutes in the preheated oven, until the oats and nuts are toasted. Immediately after it comes out of the oven, stir in the raisins and dried cranberries. Let stand until cooled, and stir again to break up any large clusters. Store in an airtight container at room temperature for up to two weeks, but I guarantee it won't be around that long!

125ml maple syrup
2 tbsp honey
1 tsp vanilla extract
300g rolled oats
50g sunflower seed
4 tbsp sesame seeds
50g pumpkin seeds
100g flaked almond
100g dried berries (find them in the baking aisle)
50g coconut flakes or desiccated coconut

Steps:

  • Heat oven to 150C/fan 130C/gas 2. Mix the oil, maple syrup, honey and vanilla in a large bowl. Tip in all the remaining ingredients, except the dried fruit and coconut, and mix well.
  • Tip the granola onto two baking sheets and spread evenly. Bake for 15 mins, then mix in the coconut and dried fruit, and bake for 10-15 mins more. Remove and scrape onto a flat tray to cool. Serve with cold milk or yogurt. The granola can be stored in an airtight container for up to a month.

1 cup of unsweetened coconut milk or unsweetened almond milk
Stevia liquid to taste
1 tspn of unsalted pecan pieces
1 tspn of unsalted walnut pieces
1 tspn of silvered almonds
1 tspn of unsalted pistachios
1 tspn of unsalted raw pine nuts
1 tspn of unsalted, raw sunflower/safflower seeds
1 tspn of unsalted, raw pumpkin seeds
2 Tblspoons of frozen or fresh berry selection (e.g. blueberries, blackberries, raspberries, strawberries, or other kinds etc)

Steps:

  • Put all the nuts & seeds in a breakfast bowl. If using unsweetened milk, you could optionally add a teaspoon of pure liquid stevia and stir it well in. Add the berries and milk. If using frozen berries, wait for 2-3 minutes for them to get warmer. The berries will now release some color into the milk, making it look really interesting. Enjoy!

My poor wisp of a husband recently found out he was gluten intolerant. Combine that with his vegetarianism and active lifestyle and he's withering away to nothing. He also has virtually nothing to eat for breakfast, hence this deliciously fattening granola full of lovely things like seeds, nuts and dried fruit. It's also not overly sweet as a base, especially since the fruit adds to the overall sweetness. I prefer the oven to the microwave as it gives the granola a toasty flavor. Experiment with different types of nuts, dried fruit, and honey. You can use old fashioned rolled or quick oats. The old fashioned have a better overall quality but don't clump well, while the quick oats can get pasty when too wet but help with the clumping. I prefer 3 parts old fashioned and 1 part quick.

4 cups dry oats (old fashioned rolled or quick)
3/4 cup vegetable oil (sunflower is nice)
1/4 cup demerara sugar (or brown sugar)
1/4-1/2 teaspoon salt, to taste
1/4 cup seeds
3/4 cup nuts (almonds are great)
1/4 cup honey
1 tablespoon vanilla extract
1 cup dried fruit (keep aside)

Steps:

  • Preheat oven to 350F (180 C).
  • In a bowl, mix together all dry ingredients EXCEPT fruit.
  • In a cup, mix together liquid ingredients (oil, honey, vanilla).
  • Blend wet and dry ingredients together until oat mixture is thoroughly coated.
  • Put mixture in a glass baking dish and bake for 10 minutes.
  • Remove from oven and mix in dried fruit.
  • Spread mixture evenly across the dripping pan that comes with your oven.
  • Put back in oven and turn mixture every 5 minutes for 10-15 minutes until a very pale golden brown.
  • Remove from oven and push into a mound, then leave to cool.
  • When cool, crumble the mound with a fork and place in an airtight container.
  • Enjoy.

1/4 cup quinoa
1 1/2 cups rolled oats
1/4 cup ground flax seeds
1/4 cup sunflower seeds (or other seed)
1/4 cup pecans, chopped (or other nut)
1/2 cup raisins (I used BIG ones)
1/4 cup honey
1/4 cup applesauce
1 teaspoon coconut oil (or other oil)
1 teaspoon cinnamon
1/8 teaspoon allspice
1/8 teaspoon nutmeg
1/2 teaspoon vanilla extract

Steps:

  • Preheat oven to 150°C.
  • Rinse the quinoa and dry with a paper towel. Place on cookie sheet together with the rolled oats and toast in oven for 10 minutes.
  • Meanwhile, measure out all the dry ingredients into a medium/large bowl.
  • Measure out wet ingredients and spices in another bowl and mix well.
  • Take your oats & quinoa out of the oven and add them to the bowl with the dry ingredients. Turn oven down to 125°C Toss/stir to mix evenly.
  • Add the wet ingredients and stir to evenly coat the mixture.
  • Spread out on the cookie sheet and bake for 20 minutes, or until golden.
