THE ULTIMATE GRILLED CHEESE SANDWICH

Steps:
- Preheat a griddle or nonstick skillet to medium-low. Spread 2 teaspoons of the butter on one side of a bread slice. Repeat with the remaining butter and bread. Place one of the slices butter-side down and shingle the cheese on top, covering the entire surface. Top with the other slice of bread, butter-side up.
- Place the sandwich on the griddle and cook until the bottom is golden brown and crisp, 3 to 4 minutes. If the bread is browning too quickly, shift the griddle off the heat. Flip the sandwich, then cover with a small metal bowl and cook until the bottom is golden brown and the cheese is melted, 3 to 4 minutes. Once golden brown on both sides, toast the edges of the sandwich, if desired. Transfer to a cutting board, cut in half on the bias and serve immediately.
THE ULTIMATE GRILLED CHEESE SANDWICH
Steps:
- Gather the ingredients.
- Place two slices of bread on a cutting board and spread 1 tablespoon of the softened butter evenly and thinly on one side of each slice. Make sure you cover the entire slice from edge to edge.
- Place a nonstick or well-seasoned skillet over medium-low heat. Place 1 slice of bread in the pan, butter-side down. Spread 1/2 teaspoon of mustard, if using, over the bread slice in the pan. Mound half of the cheese on the bread. If you're going to add the pickles, tomato, or bacon, do so now.
- Spread 1/2 teaspoon of mustard on the unbuttered side of the remaining slice of bread. Place the slice of bread on the cheese, butter-side up.
- Cook until the sandwich is brown on the bottom, 3 to 4 minutes. Carefully flip with a spatula and continue to cook until the second side is brown, 2 to 3 minutes more. If the bread is browning too quickly, turn the heat down.
- Remove the sandwich to a plate and repeat steps 2 through 5 for the second sandwich.

This recipe comes from Canadian House and Home. It is soooo good. It's baked so it's easy to make more than 1 at a time. The cheese oozes out of the sandwiches while baking and becomes a crunchy crust around the bread. Use a really good bread and slice it extra thick. - Place empty baking sheet in oven and preheat to 450°F.
- Slice bread into 3/4" slices.
- Butter both sides of bread.
- Spread half of slices with Mango Chutney.
- Slice cheese 3/8" thick and place on other slices of bread.
- Place chutney spread slices over slices with cheese.
- Remove baking sheet from oven.
- Place sandwiches on hot baking sheet.
- Return to hot oven.
- Bake for 8 minutes, until golden on bottom.
- Flip over sandwiches and bake another 8 minutes.
- Let stand 3 to 4 minutes so cheese cools off.
- Cut into halves or quarters.

- Preheat the oven to 400 degrees F. Arrange the bacon on a baking rack set over a sheet pan in a single layer and roast for 20 to 30 minutes, until nicely browned. Drain on a plate lined with paper towels and cut into 1-inch pieces.
- Meanwhile, combine the mayonnaise, mustard, parmesan, 1 1/2 teaspoons salt and 1/2 teaspoon pepper in a small bowl. Lay 12 slices of bread on a board and spread each one lightly with butter. Flip the slices and spread each one generously with the mayonnaise mixture. Don't neglect the corners!
- Grate the cheeses in a food processor fitted with the largest grating disk and combine. Distribute the bacon evenly on half of the slices of bread. Pile 1/3 cup grated cheese evenly on top of the bacon and top with the remaining bread slices, sauce-side down.
- Meanwhile, heat an electric panini press. When the press is hot, cook the sandwiches for 3 to 5 minutes in batches until the bread is toasted and the cheese is melted. Allow to cool for 2 minutes. Cut in half and serve warm.

- Heat a large skillet over medium-low heat. Place 4 slices of bread on a cutting board and generously butter the top sides of each slice. Melt another tablespoon of the butter in the skillet; swirl around to coat the pan.
- Lay 2 slices of bread, buttered side down, in the skillet. Put a few slices of the cheese on the bread. Lay the bacon, tomato, or ham on top of the cheese. Cover with a few more slices of cheese. Top with 2 of the remaining slices of bread, placed buttered-side up. Cook, without pressing, until the bread browns and the cheese is slightly melted, about 5 minutes. Turn the sandwiches with a spatula and add a small hazelnut-size piece of butter to the pan. ULTIMATE GRILLED CHEESE SANDWICH
I call this the ultimate because I have never had anything quite like it. This is another versatile recipe. I used a Havarti cheese, but Provolone would be good too. I wouldn't use a tangier cheese, though, because there is a lot going on in this. But, I do recommend a "white" cheese. Use a good bread, too. A nice crusty bread works best. And, use butter. Also, I did make one sandwich with a slice of prosciuto on it and it was very good also. The mild pepper rings in this recipe are from a jar. Found by the pickles in the grocery store. You can use any heat level you like.

- In a small food processor, or food chopper, combine the drained green olives, and mild pepper rings and process until coarsely chopped.
- Butter the outsides of the bread. Spread one side of your sandwich inside with mustard.
- Spread the olive mixture over the mustard side of the bread.
- Place the cheese on the olives mixture, and if using prosciutto, lay that on top of the cheese.
- Top the sandwich with the other slice of bread, butter side out.
