Ukrainian Christmas Eve Stuffed Fish image

Fish, grains, legumes, vegetables and dried or preserved fruits-foods that are always available in Ukraine in winter-are used extensively in the meatless Christmas Eve dinner.

1 (4 lb) whole fish (salmon, whitefish or pickerel )
2 tablespoons vegetable oil
1 medium onion, chopped
1 cup finely chopped celery
2 cups dry breadcrumbs
1/3 teaspoon ground sage
1/4 teaspoon poultry seasoning
1/4 teaspoon salt
fresh ground pepper
lemon wedge
fresh parsley

Steps:

  • Scale and clean fish.
  • Prepare stuffing: In a large fry pan, heat oil and sauté onion and celery until transparent, about 4 to 5 minutes. Stir in breadcrumbs, sage, poultry seasoning, salt, pepper to taste and 1/4 cup water.
  • Stuff fish and sew up opening. Brush outside with oil. Place on a large baking sheet or jelly roll pan and bake in 400°F oven, allowing 10 minutes per inch of thickness (measured at the thickest point).
  • Serve on a hot platter, garnished with lemon wedges and parsley. Makes 8 servings.

  • Varenyky. If you only know one Ukrainian dish, that’s most probably varenyky. A traditional family, especially in western Ukraine, would eat it every Sunday.
  • Borshch. While borshch is the most popular Ukrainian soup and is routinely consumed in every household, it is a must on Christmas Eve as well. The only difference is that borshch should be lean on this occasion.
  • Vushka. Exclusively reserved for Christmas Eve, vushka – or small dried-mushroom-stuffed varenyky – may be served either as a self-standing dish or as an ingredient of red borshch.
  • Mushroom Broth. Another tasty soup consumed on festive occasions is the mushroom broth. It can contain any kind of mushrooms, but tradition has it that these should be penny buns.
  • Holubtsi. Cultural historians claim that holubtsi first appeared in the 18 century and since then never left the Ukrainian festive table. With the name deriving from dove (holub), they symbolize peace and serenity.
  • Jellied Fish. While many know the traditional Ukrainian festive dish kholodets (jellied meat), its fish version is more popular for Christmas. To prepare it, you need to boil trout, cool it down, and then cover it with gelatin.
  • Kholodets. His majesty kholodets is typically prepared with chicken or beef in Ukraine. To make it delicious and wobbly without gelatin, you need meat bones too.
  • Cured Herring. The symbol of Christianity, fish is the base of many traditional festive dishes in Ukraine. While you may, of course, buy the ready cured herring, a true Ukrainian woman would die of shame to do so.
