UGLY BLUEBERRY MUFFINS
They aren't round and pretty. Sort of like a mix between a biscut and a muffin. The texture is more like sticky biscut dough. These aren't super sweet and I will probably adjust this soon. I use La Leche League baking mix Recipe #65193. I find that frozen blueberries hold their shape better.

Steps:
- Preheat oven to 375.
- Whisk together milk, egg, sugar substitute, vanilla and cinnamon.
- Stir in Baking mix until moist.
- Fold in blueberries.
- Fill muffin papers in muffin pan 3/4 full.
- Bake 18 minute.

UGLY MUFFINS
I made my first ever daring attempt to edit the recipe, and was very afraid of the result, until I tasted them! I won't tell you what I changed but I loved these muffins even though they were ugly, and so did my family! Please take a chance on these sad, ugly muffins!

Steps:
- Cream softened butter and sugar until fluffy.
- In a separate bowl combine jelly and water and blend. Consistency should be relatively like applesauce, add jelly or water as needed.
- Add one cup of jelly mixture, the egg, and the vanilla to the butter and sugar. Blend well. (Won't appear combined, don't worry!).
- Sift flour, baking soda, cinnamon, cloves, and allspice together.
- Add dry mix to wet mix and beat together until well combined.
- Add nuts and raisins. Stir together.
- Spoon into well-greased muffin tins. The cups will be very full, but it makes large muffins!
- Bake at 300°F for 25-35 minutes. DO NOT REMOVE WHEN EDGES ARE BROWN. Wait until the WHOLE muffin is brown, or until a toothpick tests relatively clean.
- Taste and be surprised!

Steps:
- Preheat oven to 400 degrees F (205 degrees C).
- Stir together the flour, baking powder, salt and sugar in a large bowl. Make a well in the center. In a small bowl or 2 cup measuring cup, beat egg with a fork. Stir in milk and oil. Pour all at once into the well in the flour mixture. Mix quickly and lightly with a fork until moistened, but do not beat. The batter will be lumpy. Pour the batter into paper lined muffin pan cups.
- Variations: Blueberry Muffins: Add 1 cup fresh blueberries. Raisin Muffins: Add 1 cup finely chopped raisins. Date Muffins: Add 1 cup finely chopped dates. Cheese Muffins: Fold in 1 cup grated sharp yellow cheese. Bacon Muffins: Fold 1/4 cup crisp cooked bacon, broken into bits.
- Bake for 25 minutes, or until golden.
