UBC CINNAMON BUNS
These are cinnamon buns served at the University of British Columbia cafeteria. My family really enjoys these buns but they're not the ooey-gooey kind of cinnamon buns.

Yield 12 large cinnamon buns
Number Of Ingredients 12
Steps:
- Scald milk.
- Stir in 3 Tablespoons margarine, 3 Tablespoons sugar and 1-1/2 teaspoons salt.
- Cool to lukewarm.
- Dissolve 1/2 teaspoon sugar in warm water.
- Sprinkle yeast over warm water.
- Let stand in a warm place for 10 minutes.
- In large mixing bowl, combine lukewarm milk mixture and eggs.
- Stir in dissolved yeast.
- Add half the flour and beat well for 10 minutes.
- With a wooden spoon, gradually add enough of the remaining flour to make a soft dough.
- Turn dough out onto a lightly floured surface.
- Knead until smooth and elastic, adding additional flour as needed.
- Place in well greased bowl and roll dough over to grease the top.
- Cover with a damp cloth and let rise in a warm place until dough doubles in size, about 1 hour.
- Punch down and turn out on lightly floured surface.
- Roll out into large rectangle (about 9" x 18").
- Make filling: combine 1/4 cup melted margarine, 3/4 cup sugar, and 1 Tablespoon cinnamon.
- Sprinkle filling on dough.
- Roll dough up, starting from the long side.
- Cut into 2-inch slices.
- Place remaining melted margarine in bottom of pan. (I use two pyrex pans: one is 13 X 9, the other 8 x 8).
- Arrange slices in pan and cover loosely with greased waxed paper.
- Let rise in pan until doubled in size, between 45 to 60 minutes.
- Bake at 350 degrees Fahrenheit for 30-35 minutes.
- Remove from oven; turn pan upside down so the buns fall out.
UBC CINNAMON BUNS
Students who have attended the University of British Columbia will remember the cinnamon buns served in the UBC student cafeteria. The buns are famous for their tender, delicious texture and taste. This is the original recipe provided by UBC to a local newspaper. Now everyone can enjoy these delicious cinnamon rolls.

Steps:
- 1. Put rolls ingredients in bread machine pan in order suggested by the machine manufacturer.
- 2. Select dough cycle. When cycle is complete remove dough from machine and put on lightly floured surface. (This is a soft dough.) Cover and let rest for 10 minutes.
- 3. Prepare filling: In a small bowl combine sugar and cinnamon.
- 4. Roll dough to a 14" X 9" rectangle. Generously brush with 2 TBSP melted butter. Place remaining 2 TBSP melted butter in bottom of 10" round baking pan.
- 5. Sprinkle dough evenly with sugar/cinnamon mixture. Roll up tightly like a jelly roll, pinch seam to seal. Remeasure and shape back to a 14 inch roll. With a sharp knife cut into 2 inch slices. Arrange slices in the prepared pan and cover loosely with greased parchment.
- 6. Let rise in a warm place until doubled in size - about 20 to 30 minutes. Bake at 350 degrees for 40 or 45 minutes or until done. Remove from oven and invest onto serving tray. Makes 7 large cinnamon buns.
- 7. Note: for smaller cinnamon buns roll to a 12"X9" rectangle and proceed as above. Cut dough into 12 one inch slices and put into a 9 X 13 inch baking pan. Bake for 25 to 30 minutes until done.
CINNAMON BUNS
This recipe was a campus "secret" at my old university - thankfully one of the food service employees gave it up and I have been using it ever since. These are the big, soft kind (where the centre is so moist and yummy!!!). I sometimes add extra filling to mine. They can also be iced, but I like them just the way they are.

Steps:
- Scald milk and stir in 6 tbsp butter, 6 tbsp sugar and salt.
- Cool to lukewarm.
- Dissolve 1 tsp sugar in warm water.
- Sprinkle yeast over water mix.
- Let stand in a warm place for 10 minutes.
- Stir once this is done.
- In a large mixing bowl, combine lukewarm milk mix and eggs.
- Stir in yeast mix.
- Add four to five cups of flour and mix well.
- With wooden spoon add remaining flour.
- Place dough in a well greased bowl.
- Roll dough over to grease top.
- Cover with a damp cloth and allow to double in size for one hour.
- Punch down and turn out onto floured surface.
- Divide into two, roll each section into rectangles.
- Sprinkle on filling (filling: 1 cup melted butter, 1 1/4 cup sugar and 2 tbsp cinnamon- divided between two rectangles).
- Roll up and slice (a good way to slice pieces is to use a piece of string, place it on the underside of the roll and cross over opposite ends at top, cutting the piece).
- Grease cookie tray with melted butter.
- Place slices in tray, leaving enough space to allow them to expand, but not enough that the filling melts out.
- Place greased waxed paper over slices and allow to double in size again for one hour.
- Bake in 350 degree oven for 35 to 45 minutes.
- Remove immediately from tray.
- If desired, buns can be iced.

CINNAMON ROLLS
Make our ultimate classic cinnamon rolls with cream cheese icing to satisfy your sweet tooth. Prepare the day before for warm, sticky buns for breakfast

- Tip all the ingredients for the dough, except the butter and golden syrup, into the bowl of a stand mixer with 1 tsp salt. Use a paddle attachment to combine everything until it begins to come together into a dough, then tip out onto a floured surface and knead until smooth, about 2 mins. Put it back in the bowl and gradually add the softened butter, 1-2 tsp at a time, while mixing on a medium setting. Alternatively, knead the butter in by hand until smooth. Flatten the dough to a square roughly 20 x 20cm, then cover and freeze for 30 mins, or chill for at least 1 hr.
- Meanwhile, butter and line the base and sides of a deep baking tray, roughly 20 x 30cm. To make the filling, mix the sugar with the cinnamon and a large pinch of sea salt, then set aside 2 tbsp. Beat in the butter to form a thick paste.
- Lay the dough on a floured surface and roll to a neat rectangle roughly 35 x 25cm. Spread over the filling so it's completely covered. Fold the bottom third of the dough into the middle, then fold over again to cover the top third. For the best results, chill the dough again for another 30 mins.
- Re-roll the dough to another rectangle about 40 x 30cm, then roll it up along the long edge into a tight log. To get the neatest spirals, cut in half, lift onto a tray and freeze for 15 mins to firm up, then cut into 12 equal-sized slices. Arrange the slices, spiral side-up, in the tin. Leave to prove in fridge for at least 1 hr, or up to 24 hrs.
- Heat the oven to 200C/180C fan/gas 6. Bake the buns for 20 mins, then scatter over the reserved cinnamon sugar and bake for 10-15 mins until deep brown.
- Meanwhile, mix the golden syrup with 2 tsp boiling water. As soon as the buns come out of the oven, brush them with the syrup glaze, then leave to cool a little. To make the icing, beat the soft cheese, icing sugar and vanilla together, then gradually add 1-2 tbsp boiling water to create a thick but pourable consistency. Drizzle the icing over the buns.
