- Just mix everything up together until it is all blended and the oil has emulsified into the yoghurt/sour cream. Taste for seasoning, and add salt if you think necessary. Put in a resealable container.
- Allow to 'sit' in the refrigerator for at least 2-3 hours before using to allow the flavors to come out.
- This wonderful meze (we do not think of it as a sauce here- it is a thick 'salata') is used to counterpoint rich, bbq'd meats (like souvlaki/shish kebab), but can be used in more diverse ways.
- Place a small plate full on your dinner table for people to scoop up small amounts onto their bread (preferably crisp-baked pita).
- Fry up some zucchini or eggplant slices (dredge in flour and fried in olive oil) and serve with a dollop of tzatziki on top.
- Use as a salad dressing.
- A dip for crudites.
- Note: If I have time, I often lightly salt the grated cucumber and put in a colander to drain, then squeeze out water as per usual. This eliminates even more water.

HOMEMADE TZATZIKI
That creamy Greek yogurt sauce that you love with cucumbers, dill and lemon that you can slather all over some pita or on top of protein!

- In a large bowl, combine the Greek yogurt, diced cucumber, lemon juice garlic and dill. Stir to combine.
- Season with salt and pepper and taste. Adjust salt, pepper or lemon juice depending on your preference. Serve immediately or store in an air-tight container for up to 3 days.
AUTHENTIC TZATZIKI SAUCE
This Authentic Tzatziki Sauce (Greek Cucumber Yogurt Sauce) is SO easy to make! Use as a dip, as a spread on sandwiches or gyros, or mix into chicken or tuna salad.

- Place the grated cucumber in a mesh sieve over a bowl. Sprinkle with a pinch of salt and gently toss together. Place a clean towel on top of the cucumbers, with a heavy can (or something similar) on top to weigh it down. Allow to sit for at least 5 minutes- the liquid from the cucumber will collect in the bowl below.
- Meanwhile, mix the Greek yogurt (2 cups), kosher salt (1/2 teaspoon), olive oil (2 tablespoons), minced garlic, chopped fresh dill (2 tablespoons), and lemon juice (2 tablespoons) together in a medium bowl.
- Place the grated cucumber in a clean kitchen towel and wring it out. Get it as dry as you can!
- Mix the grated cucumber into the yogurt mixture. Taste and adjust seasoning if necessary.
- Serve drizzled with more extra-virgin olive oil and garnished with fresh herbs if desired. Enjoy with pita bread, pita chips, and/or crudités, or as a spread on sandwiches or tacos.

TZATZIKI WITH CRUDITES
Steps:
- Line a layer of VIVA® towels inside a fine mesh strainer and place the strainer in a bowl. Pour the yogurt into the strainer, cover with plastic wrap and place in the refrigerator overnight to drain. The yogurt should reduce in volume by half and will have a very thick consistency.
- Place the yogurt, cucumber, mint, garlic, hot sauce, lemon juice and zest in a food processor and blend until smooth. Taste and season with salt and pepper. Transfer to a bowl. Refrigerate at least one hour before serving on a crudites platter.
- When serving the Tzatziki Sauce on a platter with crudites: Fold and dampen a VIVA® towel and place it underneath the bowl you are serving the Tzatziki Sauce on the platter. This will prevent the bowl from sliding around.

- Fill a large saucepan with water and toss in salt. Cover and bring to a boil over medium-high heat.
- Prep you vegetables and place them in the boiling water. Set your timer for three minutes.
