THE BEST MEATLOAF
I have used this recipe for 30 years. My husband loves it and he is picky.

Steps:
- Preheat oven to 350 degrees F (175 degrees C). Lightly grease an 8 1/2 x 4 1/2 inch loaf pan.
- Combine milk and soft bread crumbs in a small bowl and allow to soften, about 5 minutes.
- In a mixing bowl, combine the ground beef, salt, pepper, egg, 3 tablespoons steak sauce, chopped onion, and green bell pepper. Add bread crumb mixture, and mix with your hands until all ingredients are combined.
- Pat the the mixture into the prepared loaf pan. Brush the top with additional steak sauce.
- Bake in the preheated oven for 1 hour or until done. Allow to stand 5 minutes before slicing.

LOAF OF MEAT
Steps:
- Preheat oven to 400 degrees F.
- Spread a large sheet of aluminum foil on your counter. Crack egg into center of foil and put all meat on top of egg. Work the egg into the meat and the meats together using your hands until well blended. Flatten out meat. Cover mixture with all remaining ingredients.
- Work all the ingredients together with your hands until well blended, do not rush. Flatten out resulting mixture into what resembles a very large hamburger patty, making sure that it is fairly uniform, 1 1/2 inches thick at most. Separate coating ingredients into 2 equal parts.
- First sprinkle garlic powder, salt, paprika, and sugar over the top of the meat patty/loaf. Flip the loaf over and repeat coating on the other side. Place the loaf on a baker's rack over the top of a casserole dish so the extra fat can drip away from the loaf as it cooks. Put the loaf in the center of the rack and cook for 1 hour. Check by cutting the loaf in half to make sure the center is fully cooked, 1 hour usually does it, but if not then cut out two thick pieces from the center and just put those 2 back into the oven for 10 or 15 more minutes.
VITALITY MEAT LOAF
This recipe came from one of the American Girl's Cookbooks. Specifically it is from the "Molly" book, from the era of WWII. It is the best meatloaf recipe I have found to date.

- Mince onion and parsley and add to meat.
- Add rest of ingredients and mix together thoroughly.
- Place mixture in oblong baking dish and shape into loaf.
- Cover loaf with additional chili sauce.
- Bake meatloaf in oven for 1 hours.

Steps:
- preheat oven to 350.
- crush crackers.
- beat egg.
- combine all meat loaf ingredients.
- mould into a log shape.
- place into a deep oblong roasting pan (with lid).
- Surround meat loaf with patatoes and carrots.
- cover with 1 can of tomato soup and all of tomato juice.
- Cover and bake for 1 hour.
- Remove lid.
- add second can of tomato soup, directly on top of meat loaf.
- Return to oven, without lid, and bake another 1/2 hour.
- Enjoy!
- The next day, I make a second meal of the leftovers, by cutting up meat in chunks (leave meat,patatoes and carrots in the sauce) and serve over rice or pasta.
- OPTION: I sometimes add a handful (1/4 cup) of basmati rice to the mixture before cooking.

A mild spicy heat combined with sweetness; add Emeril's Essence or a few drops of Tabasco sauce for more zing. Please read reviews for insight on amount of Splenda and adjust to your own preference; a little bit of Splenda goes a long way. - Plug in and generously spray both sides of double-sided electric contact grill with butter-flavored cooking spray and preheat for 5 minutes.
- MAKE PATTIES:.
- Meanwhile, in a large bowl, combine meat, bread crumbs, onion, green pepper, catsup and Worcestershire sauce.
- Using a 1/3-cup measuring cup, form into 6 patties.
- Evenly arrange patties on prepared grill. Close lid and grill for 6-8 minutes.
- MAKE SAUCE:.
- Meanwhile, in a medium saucepan, combine tomato sauce, undrained tomatoes, Splenda, and parsley flakes. Cover over medium-low heat while patties are grilling, stirring occasionally.
- For each serving, place 1 patty on a plate and spoon about 1/4 cup tomato sauce over top.

- Blender - blend until smooth eggs, beans, herb blend, pepper and tamari.

- Saute red peppers and onions in shortening until soft. mix ground beef lightly with saltines, salt, paprika, pepper, eggs and milk until well blended. NATHALIE DUPREE'S MEAT LOAF
This has been my favorite meat loaf recipe for years. It's from Nathalie Dupree's cookbook "New Southern Cooking" which I got from my mom many years ago. It is a great reading cookbook, but this is my favorite recipe out of the whole book. She says: "Here's my mother's time-honored meat loaf recipe." Serve it hot with mashed potatoes and English peas, or cold for sandwiches." The sauce is a bit different than the typical plain tomato or catsup on top, but I love it! I will add we love it in Recipe #258703 for leftover meatloaf chili

- Preheat the oven to 400 degrees. For the loaf, mix all the ingredients together, shape, and place in a greased roasting pan. Bake for 1 hour, basting occasionally with the pan juices (I leave this part out).
- To make the suace, mix all the ingredients together in a small saucepan. Heat briefly and pour over individual slices of the meat loaf.
