Food Network Magazine asked readers: Can you make a better burger than Bobby Flay's Spanish Burger with Pickled Shallots? Tons of you tried to beat the chef's prosciutto-and-shallot-topped Spanish burger with your own elaborate creations - here is one of the winners.

1/2 cup mayonnaise
2 tablespoons chopped drained sun-dried tomatoes packed in oil
2 cloves garlic, roughly chopped
1 tablespoon roughly chopped fresh parsley and/or basil
Kosher salt and freshly ground pepper
4 plum tomatoes, halved
2 tablespoons extra-virgin olive oil
1/2 teaspoon dried basil
1/2 teaspoon dried oregano
Kosher salt and freshly ground pepper
For the caramelized onions:
4 tablespoons unsalted butter
3 large onions, thinly sliced
Pinch of sugar
Vegetable oil, for the grill
1 pound ground beef chuck
1 mild Italian sausage link, casing removed
Kosher salt and freshly ground pepper
4 slices provolone cheese
4 brioche or hamburger buns, split
Baby arugula, for topping

Steps:

  • Make the aioli: Blend the mayonnaise, sun-dried tomatoes, garlic, fresh herbs and 1/4 teaspoon each salt and pepper in a mini food processor or blender until smooth. Transfer to a bowl and refrigerate until ready to use.
  • Make the roasted tomatoes: Preheat the oven to 425 degrees F and line a baking sheet with parchment paper. Pat the tomatoes dry with paper towels and arrange on the prepared baking sheet; drizzle with the olive oil and sprinkle with the dried basil, oregano and 1/2 teaspoon each salt and pepper. Roast until the tomatoes start caramelizing, about 30 minutes.
  • Meanwhile, make the caramelized onions: Melt the butter in a large skillet over medium heat. Add the onions and sugar and toss to coat. Cover and cook, stirring occasionally, until golden, about 20 minutes. Increase the heat to medium high and cook, stirring, until browned and caramelized, 15 to 20 more minutes; season with salt and pepper. Remove from the heat and set aside.
  • Make the burgers: Preheat a grill to medium high and brush the grates with vegetable oil. Put the beef and sausage in a large bowl and combine with your hands. Form four 3/4-inch-thick patties; season with salt and pepper. Grill the burgers until the edges begin browning, 3 to 5 minutes, then flip and top each patty with a slice of cheese. Cover and cook until the cheese is melted and the burgers are done, 3 to 4 more minutes for medium.
  • Lightly toast the buns on the grill. Spread the aioli on the top and bottom buns. Sandwich with the burgers, roasted tomatoes, caramelized onions and arugula.

12 sun-dried tomato halves (not oil-packed)
1 lb lean (at least 80%) ground beef
1/2 lb bulk Italian pork sausage
6 slices (1 oz each) provolone cheese, cut in half
12 fresh basil leaves, if desired
12 slices tomato, cut in half
6 slices ciabatta bread or other Italian flatbread, cut in half

Steps:

  • Heat gas or charcoal grill. Place sun-dried tomatoes in small bowl. Pour enough boiling water over tomatoes to cover. Let stand 10 minutes.
  • Drain tomatoes; chop. In large bowl, mix beef, sausage and chopped tomatoes. Shape mixture into 6 oblong patties, about 1/2 inch thick.
  • Place patties on grill over medium-high heat. Cover grill; cook 10 to 12 minutes, turning once, until meat thermometer inserted in center of patties reads 160°F. Top each burger with cheese for last 2 minutes of grilling.
  • Top burgers with basil and tomatoes. Serve burgers between slices of ciabatta bread.

12 ounces coarsely ground beef chuck
12 ounces coarsely ground beef sirloin
2 teaspoons dried parsley
1 1/2 teaspoons lightly crushed fennel seed
1 teaspoon granulated garlic
1/4 teaspoon crushed red pepper flakes
1 tablespoon grated Parmesan
Kosher salt and freshly ground black pepper
4 hamburger buns, for serving
Arugula, sliced tomato, pesto and giardiniera, for serving
Heat a large cast-iron skillet over medium-high heat for 5 minutes.

Steps:

  • Gently toss together the chuck and sirloin in a large bowl, making sure not to overwork the mixture.
  • Combine the dried parsley, fennel seed, granulated garlic and red pepper flakes in a small bowl. Sprinkle the spice mixture over the beef along, with the Parmesan, and fold gently to combine. Form the beef into four 3/4-inch-thick patties, each about 4 inches in diameter. Sprinkle each generously with salt and a few grinds of black pepper.
  • Place the patties in the hot skillet; do not press down with a spatula. When the patties are seared and browned on one side, about 3 1/2 minutes, flip and cook on the other side until browned and the burgers are medium-rare, about 3 1/2 minutes.
  • Split the hamburger buns. Arrange some arugula on the bottom buns and top each with a slice of tomato, a burger patty and a dollop of pesto. Top with the top halves of the rolls Serve with giardiniera.

2 1/4 pounds ground chuck
3/4 cup (1 1/2 ounces) grated Parmesan

1/4 teaspoon freshly ground black pepper
9 small ciabatta rolls, sliced in 1/2
1/4 cup extra-virgin olive oil
9 slices (4 1/2 ounces) Taleggio cheese
9 large basil leaves

Steps:

  • Place a grill pan over medium-high heat or preheat a gas or charcoal grill.
  • Place the garlic and parsley in the bowl of a food processor. Pulse until finely chopped. Add the ground chuck, Parmesan cheese, tomato paste, salt, and pepper. Pulse until ingredients are combined. Form the mixture into 9 patties. Place the burgers on the grill and cook for 4 to 5 minutes each side.
  • Brush the cut side of each roll with the olive oil and toast on the grill for 1 to 2 minutes until slightly golden.
  • To serve, place 1 mini burger on the bottom half of each of the rolls. Place 1 slice of Taleggio cheese on top of the burgers. Place the basil leaf on top of the cheese and cover with the top half. Serve.

1 lb lean ground beef
3/4 lb hot italian ground sausage
1/4 cup panko breadcrumbs
1/4 cup red onion, finely chopped
2 garlic cloves, pressed
1 teaspoon italian seasoning
1/4 teaspoon sea salt
1/4 teaspoon black pepper (to taste)
8 slices provolone cheese
4 hamburger buns
1 roma tomato, washed, seeded and finely diced
1 pepperoncini pepper, finely diced
1 tablespoon basil (chiffonade)
1 tablespoon extra virgin olive oil
1/2 teaspoon balsamic vinegar
1/4 teaspoon sea salt (to taste)
1/4 teaspoon black pepper (to taste)

Steps:

  • In a large mixing bowl, combine ground beef, hot Italian ground sausage, panko, onions, garlic, Italian seasoning, sea salt and freshly ground black pepper; mix well. Divide meat into 4 equal portions and form patties. Place them in a plate, cover with plastic wrap and chill for 2 hours.
  • Later on, take meat out and let it rest on the counter while making the slaw. In a small bowl, combine tomato, pepperoncini, basil, oil, vinegar, sea salt and freshly ground black pepper; stir well and set aside.
  • Fire up the BBQ and place patties when the grill reaches high temperature. Close the lid and cook about 5 to 6 minutes per side, flipping once. About 2 to 3 minutes before cooking is done, place hamburger buns on the top grill as well as a couple slices of cheese per patty.
  • Just before serving, scoop a good amount of tomato slaw on top of the meat. Makes 4 burgers.

8 deli slices Genoa salami
8 ounces cremini mushrooms, quartered
Kosher salt and freshly ground pepper
1 1/2 pounds ground beef, preferably chuck
Vegetable oil, for the grill
4 semolina rolls, split
2 cups baby arugula
1/2 tablespoon balsamic vinegar
1/2 cup fresh ricotta cheese

Steps:

  • Preheat a grill to medium high. Heat the olive oil in a skillet over medium-high heat. Working in batches, add the salami in a single layer and cook, turning once, until crisp, about 1 minute per side. Drain on paper towels.
  • Add the mushrooms to the skillet and cook, undisturbed, until browned, about 2 minutes. Stir and continue to cook until tender, about 5 more minutes. Season with salt and pepper.
  • Form the beef into four 6-ounce patties, about 3/4 inch thick; press the center of each patty with your thumb to make a 1/2-inch-deep indentation. Season the patties on both sides with salt and pepper. Lightly brush the grill grates with vegetable oil, then grill the patties, indentation-side up, until marked on the bottom, about 5 minutes. Flip and cook until marked and slightly firm, about 3 more minutes for medium doneness. Remove the patties to a plate and let rest 5 minutes. Grill the rolls, cut-side down, until lightly toasted, about 1 minute.
  • Toss the arugula, vinegar, and olive oil to taste in a bowl; season with salt and pepper. Spread the ricotta on the bun bottoms and top with the burger patties, salami, mushrooms and arugula salad. Cover with the bun tops.
