Twice baked potatoes are a great go-to side dish for parties, potlucks or even company meals. Make them for two, or a crowd. Everybody loves them, and you can make them ahead of time.

1 russet potato (larger )
2 tablespoons butter
2 tablespoons sour cream
2 tablespoons milk
1/4 cup shredded cheddar cheese ( plus a little for topping)
1/4 teaspoon seasoning salt (I used Lowry's)
1/8 teaspoon pepper
1-2 strips bacon (8 Tbsp or 4 strips, optional)
1 green onion (One per potato - optional)
anything else you want (optional)

Steps:

  • Preheat oven to 400° degrees convection or 425° conventional.
  • Scrub russet potato(es).
  • Coat with some oil lightly.
  • Bake until well done. About 1 hour or more.
  • While potatoes are cooking, slice up butter and combine with sour cream, milk, shredded cheddar cheese, seasoning salt (Lowry's or similar), and pepper.
  • When potato(es) are done, remove from oven and allow to cool just enough not to burn yourself. Scoop out the potato(es) leaving a small rim of potato in the skins.
  • Mix the scooped potatoes into the butter mixture and mash together. This does not need to be smooth.
  • You may add optional bacon, green onion or other things here if you want. If refrigerating or freezing, I suggest skipping the onion.
  • Bake at 375° for about 20 minutes until hot and browning some.

2 large russet potatoes
1 egg, beaten
2 tablespoons milk
2 tablespoons mayonnaise
3/4 cup shredded cheddar cheese, divided
1/4 teaspoon salt
Dash pepper
2 tablespoons sliced green onion
2 bacon strips, cooked and crumbled

Steps:

  • Bake potatoes at 375° for 1 hour or until tender. When cool enough to handle, cut a thin slice off the top of each potato; scoop out pulp, leaving a thin shell. In a bowl, mash the pulp, egg, milk, mayonnaise, 1/2 cup of cheese, salt and pepper. Spoon into potato shells. Top with onion, bacon and remaining cheese., Place in a small ungreased baking pan. Bake, uncovered, at 375° for 25-30 minutes or until heated through.

1 Tbsp. KRAFT Tuscan House Italian Dressing
1 cup KRAFT Shredded Sharp Cheddar Cheese

Steps:

  • Heat oven to 425ºF.
  • Prick potatoes with fork; place on baking sheet. Brush with dressing. Bake 45 min. to 1 hour or until tender.
  • Heat broiler. Cut potatoes in half lengthwise, then crosswise, being careful not to cut all the way through to bottoms of potatoes. Squeeze potatoes from both ends to open. Lightly mash potatoes (in skins) with fork. Sprinkle with cheese; mix with fork.
  • Broil, 4 inches from heat, 2 to 3 min. or until cheese is melted.

4 large baking potatoes
2 teaspoons olive oil
2 teaspoons salt
1 tablespoon butter
4 cloves minced garlic
1 ½ cups shredded Monterey Jack cheese
½ cup sour cream
¼ cup chopped green onion, divided
ground black pepper to taste
4 slices cooked bacon, crumbled
1 pinch paprika, or to taste

Steps:

  • Preheat oven to 425 degrees F (220 degrees C).
  • Rub potatoes with olive oil and salt; pierce each several times with a fork and arrange onto a baking sheet about 6 inches apart.
  • Bake in preheated oven until easily pierced with a fork, 50 to 60 minutes. Remove from oven and set aside to cool until cool enough to handle, keeping oven heat at 425 degrees F (220 degrees C).
  • Halve potatoes lengthwise and scoop potato from each half into a bowl, leaving about 1/4 inch of the potato attached to the skin all the way around.
  • Melt butter in a large saucepan over medium-high heat. Saute garlic in butter until fragrant, 1 to 2 minutes. Stir scooped potato, Monterey Jack cheese, sour cream, and most of the green onion together with the garlic and butter; cook and stir the mixture until heated and smooth, about 5 minutes.
  • Scoop the potato mixture into the potato skins and arrange onto the baking sheet.
  • Bake in oven until heated through, 15 to 20 minutes. Garnish with remaining green onion, bacon, and paprika.

This is a really great tater recipe, it's one I have been making for a long time, not only is it easy to make it's so good! You really don't have to have the exact amounts for this recipe, throw in another potato if desired, use as much cheese as as you like!

4 large russet potatoes (peeled or unpeeled)
1/4 cup butter
1 small onion, finely chopped
salt and pepper (I use seasoned salt for this)
1/2 teaspoon dried thyme (or to taste)
1/2-1 teaspoon garlic powder (optional) or 1 tablespoon minced fresh garlic (optional)
1 1/2 cups shredded cheddar cheese (or to taste)
2 tablespoons chopped fresh parsley

Steps:

  • Set oven to 425 degrees.
  • Butter a shallow baking sish.
  • Thinly slice the potatoes, and place in the baking dish.
  • In a small saucepan, heat butter, onion, salt, pepper, garlic powder and thyme until the butter is melted.
  • Drizzle over potatoes.
  • Cover, and bake for 45 minutes, or until potatoes tender.
  • Remove from oven, sprinkle with cheese and parsley.
  • Return to oven and bake for another 10-15 minutes longer, or until cheese is melted.

4 large russet potatoes, scrubbed
1/4 cup unsalted butter
1/2 cup sour cream
1/2 cup shredded extra-sharp cheddar cheese, divided
Kosher salt and freshly ground black pepper

Steps:

  • Preheat the oven to 425 degrees F.
  • Set the potatoes directly on the rack in the center of the oven and bake until easily pierced with a fork, about 1 hour. Remove from the oven and turn the heat down to 400 degrees F. Cut a slit in the top of the potatoes and carefully scoop out the flesh into a bowl, leaving the shells intact. Mash the potato lightly with a fork. Add the butter, sour cream, and 1/3 cup of the cheese, and salt and pepper to taste. Refill the shells with the potato mixture mounding it slightly.
  • Set the potatoes on a baking sheet, and bake until heated through, about 15 to 20 minutes. Sprinkle the tops with the remaining cheese and bake until melted, about 5 minutes. Serve immediately.

I love twice-baked potatoes in the summer with steak on the grill. This version makes has savory rosemary and makes enough for a crowd. You can substitute fresh chives for the rosemary if desired. Use a mild Roquefort or blue cheese.

6 (11 -12 ounce) russet potatoes
1/2 cup whole milk
2 teaspoons minced fresh rosemary
6 tablespoons butter, room temperature, divided
8 ounces Roquefort cheese, crumbled
4 ounces gruyere cheese, grated

Steps:

  • Preheat oven to 350 degrees.
  • Bake potatoes 30 minutes. Using fork, pierce potatoes in several places. Bake until tender, about 1 hour longer. Maintain oven temperature.
  • Meanwhile, microwave milk and rosemary in microwave safe cup on high heat for 45 seconds; let steep 30 minutes.
  • Slicing lengthwise, cut top quarter of each potato. Scoop potato into large bowl, leaving about 1/4" of potato in skin. Scrape potato out of tops; discard tops.
  • Coarsely mash potato. Add 4 tbap butter; mash. Mash in milk mixture, then Roquefort cheese (mixture will be slightly stiff). Season with salt and pepper.
  • Divide mash potatoes among potato shells; transfer to rimmed baking sheet. Sprinkle Gruyere cheese over potatoes, pressing lightly to adhere. Dot with butter.
  • Can be made 4 hours ahead. Let stand at room temperature.
  • Bake potatoes unti lhot and tops begin to brown, about 30 minutes.

1-1/2 teaspoons canola oil, optional
1/2 cup sliced green onions

A brilliant combination of creamy mash stuffed into crisp baked potato shells

1kg floury potatoes (such as King Edward)
25g butter , melted
200g goat's cheese
50ml single cream

Steps:

  • Heat oven to 190C/170C fan/gas 5. Prick each potato a few times with a fork. Place in the oven and cook for 1 hr. Remove from the oven and, using a tea towel to protect your hands, cut them in half lengthwise. Use a spoon and scoop out the flesh, leaving behind enough skin and flesh to form a shell.
  • Heat the grill. Place the potato halves, cut side up, onto a baking tray. Brush with a little melted butter then grill for 3-5 mins until starting to crisp. Meanwhile mash the potato flesh with 100g of goat's cheese, any leftover butter and cream, then season well. Spoon a little mash back into each potato shell, then top with a slice of goat's cheese. Place under the grill and cook for 5 mins until golden.
