SO easy and good! This apple bundt cake is so moist and so dense! It is my go to cake recipe for down home comfort food. This is the recipe for you if you want an outstanding apple bundt cake that will turn into a family comfort favorite. Delicious warm with vanilla ice cream or whipped cream :D

Number Of Ingredients 13

3 cups golden delicious apples (peeled, cored, cut into dime-sized pieces)
1 tablespoon lemon juice
1 tablespoon lemon rind
2 cups white sugar
1 1/4 cups salad oil
2 tablespoons vanilla
2 large eggs
2 1/2 cups flour
1 teaspoon salt
1/4 teaspoon cinnamon
1/4 teaspoon nutmeg
1 1/2 teaspoons baking soda
1 cup nuts (optional)

Steps:

  • Preheat oven to 350 degrees.
  • Generously grease and flour a bundt pan.
  • Combine cut apple pieces with Lemon Juice and Lemon Rind. Set aside.
  • In a separate bowl combine wet ingredients: sugar, oil, vanilla and eggs and mix until sugar desolves to some degree.
  • Mix all of the dry ingredients together: flour, salt, cinnamon, nutmeg and baking soda and add to the wet ingredients.
  • Add apples and nuts last.
  • WARNING the batter will be almost as thick as cookie dough! This is normal.
  • Place batter in greased/floured bundt pan and bake for 1 1/2 hours or until toothpick comes out clean.
  • Optional:Drizzle with a glaze if you like.

This comes from the St. David's School Cookbook (1974) and I have been making it now for thirty years. It's wonderful for parties; it's very elegant and rich, and really extraordinarily delicious. The pastry--which is really like shortbread--is good enough to eat by itself; the combination makes for a great dessert. It is rich enough that it doesn't need whipped cream (though I wouldn't stop anyone from adding some).

1 lb sweet butter, softened
1 cup granulated sugar
4 egg yolks
1 teaspoon vanilla extract
1/4 teaspoon salt
4 -5 cups unbleached white flour
5 lbs apples (I recommend a combination of Granny Smith and Mackintosh)
8 ounces apricot jam
1/2 cup fresh lemon juice
2 teaspoons cinnamon
1 cup sugar
1/2 cup slivered almonds (optional)

Steps:

  • For the crust:.
  • Blend the softened butter with the sugar thoroughly.
  • When creamy, add egg yolks vanilla and salt.
  • Mix well.
  • Blend in flour gradually, mixing lightly by hand until a homogenous mass.
  • Pat dough into a 12" rectangular pyrex baking dish until it is evenly distributed over the bottom and part way up the sides.
  • For the filling:.
  • Peel and core apples and slice them into fairly thin slices.
  • Sprinkle the slices with lemon juice, cinnamon and sugar as you go, placing them into a bowl, until all the apples are sliced.
  • Warm the jam.
  • If it is in a glass jar, loosen the lid and place the jar in a small pot of water, with the water coming half way up the side of jar.
  • Simmer over low heat until jam is soft.
  • Spread half the jam on the surface of the crust, and then place the apples, slightly overlapping, in as many rows as the bottom will take.
  • If you are using Mackintosh apples, they will shrink more and tend to break.
  • Keep your prettiest slices for the top, and arrange them attractively.
  • Using a pastry brush, spread the rest of the jam across the the top of the cake.
  • Sprinkle the top with almonds (I always leave this out unless I'm making it for a certain person).
  • Bake in a 350° oven for about an hour, until crust and apples are golden.

I got this cake recipe from my grand-daughter Amy. It is very moist and damn good with a cup of coffee. Note: I reduce oil to 1/4 cup and increase apple sauce to 3/4 cup. You can also use Splenda for Baking (use 3/4 splenda for baking, instead of the 1 1/2 cups sugar).

1 teaspoon butter
2 cups flour
1 teaspoon flour
1 1/2 cups sugar
1 teaspoon ground cinnamon
1 teaspoon baking soda
1 teaspoon baking powder
1/4 teaspoon salt
1/2 cup canola oil
1/2 cup applesauce
3 eggs, slightly beaten
2 apples, Jonagold, Gala, Fuji, peeled & chopped
2 cups walnuts, chopped

Steps:

  • Preheat oven to 350 degrees; Grease bundt pan with butter, then dust with the 1 teaspoon flour, tapping out access, and set pan aside.
  • Sift the 2 cups flour, sugar, cinnamon, baking powder, soda, and salt together into a large bowl.
  • Add oil, applesauce, and eggs and stir until combined.
  • Add apples and nuts, gently stir into batter.
  • Pour batter into prepared bundt pan and smooth out with a rubber spatula.
  • Bake until toothpick comes out clean, about 1 hour; set cake aside to cool for 15 to 20 minutes, then invert onto a cooling rack to cool completley.
  • I like to make a powdered sugar glaze using Orange Juice for the liquid to go on the top of cake, Serve warm or at room temperature, Enjoy.

2 cups apples, peeled,cored and diced
1 tablespoon sugar
1 teaspoon cinnamon
3 cups all-purpose flour
3 teaspoons baking powder
1/2 teaspoon salt
2 cups sugar
1 cup vegetable oil
1/4 cup orange juice
2 1/2 teaspoons vanilla extract
4 eggs
1 cup chopped walnuts
powdered sugar, for decoration
all-purpose flour

Steps:

  • Preheat oven to 350 degrees F.
  • Mix apples, cinnamon and sugar, set aside.
  • Mix all the rest of the ingredients, mix well.
  • Grease bundt pan.
  • Add 1/3 of batter mixture to the pan.
  • Sprinkle half of the apple mixture over the batter then follow with 1/3 batter, and then add rest of apples and top with rest of batter.
  • Bake for 55- 60 minutes.
