THE QUEST FOR THE HOLY 100% WHOLE WHEAT LOAF
After fumbling around trying to make a 100% Whole Wheat Loaf that didn't taste like cardboard or resemble a dense brick I had my eureka moment when I combined my own versions of two recipes with relatively short ingredient lists. Steps:
- (STARTER 24-48 hours ahead of time) Dissolve 1/4 tsp yeast with the 1/2 cup of warm water.
- In a large bowl combine flour, yeast and salt.
- Add 3 more cups warm water, and stir until blended; dough will be almost runny, I'd say a bowl of mush.
- Cover bowl with plastic wrap. Let dough rest at least 24 hours, preferably about 48, at warm room temperature, about 70 degrees.
- (DAY OF DOUGH after starter has fermented) Scald milk and cool to lukewarm (use an ice bath in a big pot).
- Stir in honey while cooling milk (start this right after you place pan of milk in ice bath so honey will dissolve better in the warmth).
- Dissolve 2tsp yeast in 1/2 cup warm water.
- Measure flour and salt into a large bowl and stir together lightly.
- When milk is cooled down to same temperature as warm water mix the two liquids together. Make a well in the flour and pour liquids into it. Stir from center outward, until all the flour is mixed in, making a stiff dough.
- *Here's where things get interesting* Add the 48 hour preferment to the new dough and knead for about 15 minutes without adding more flour. (The dough is going to be very wet and sticky so keep a bowl of water handy for your hands, and I even used it to keep the dough from sticking too bad to the counter I was working on).
- After 15 minutes knead in the butter in bits, continuing to work the dough until it is silky.
- I put the dough glob into an ungreased bowl (the larger the better this makes 3 loaves) and covered with plastic wrap. Let the dough rise for 1.5 hours, but be careful, my bowl was a little too small and the runny dough started to expand over the sides.
- After 1.5 hours I gently punched it down and took a shortcut by skipping a second rise and went ahead and split the dough into three pieces and plopped them into my pans. (I found by accident it didn't make much of a difference if these were greased or not, 2 were, 1 was not).
- I proofed these for another hour but probably could have gone with 45 minutes because one loaf began to pour over the sides of the pan. I gently nudged the doughs back within the sides of their pans and put them into a preheated 325 degree oven for 1 hour.
- These turned out wonderful, high rise, flavor like I have never tasted, a well structured crumb (at least according to my likes), and a decent caramelized crust. I think that skipping the second rise made the open air pockets in the bread a little bigger than they would have been otherwise, but they were still rather uniform and didn't affect the breads ability to hold together, but I think next time it would be worth investing the extra time in a second rise before proofing in the pans.

- Heat milk to lukewarm. Add to bread-machine pan along with the egg, cornbread mix, flour, and yeast. Set on "Dough" cycle.
- When complete, remove dough to floured surface. Roll into 15 x 8-inch rectangle.
- Cut ¾-inch strips the short way. (See picture above.) Dip in butter, then cornmeal, if desired. Knock off excess cornmeal. Twist and lay onto greased cookie sheet or silicone mat. Don't crowd. I use two cookie sheets.
- Cover twists and set in warm place to rise about 30 minutes.
- Preheat oven to 375 degrees.
- Bake 12-15 minutes until golden.
TWISTED SISTER'S CREAMY CUCUMBER SALAD
When I arrived in Iceland, this was my DH's 1st food request & I went thru a lot of RZ cucumber salad recipes to be sure it wasn't a duplicate. Siggi & my sister named this because it was original w/me & because of my twissis internet identity. For best results, don't make this a dy ahead, but do allow at least 2 hrs for the flavors to blend & the "cream" to develop from the finished ingredient mix. I promise you'll like this. (Stated time does not include refrigeration time)

Steps:
- Peel & slice cucumbers in 1/2 in thick slices. Then half ea slice & transfer all slices to a lrg mixing bowl (See note).
- Roughly dice red onion & add to the bowl.
- Quarter tomatoes, remove seeds, rough dice the tomato "meat" & add to the bowl.
- Thinly slice 1/2 green pepper, cut slices in 1 in strips & add to the bowl.
- Toss prepared "veggies" to achieve a good distributional mix.
- Add last 6 ingredients to bowl, mix well & refrigerate at least 2 hrs (stirring at least once to redistribute ingredients).
- Notes: The cucumber cut is esp important. If thinly sliced, most cucumbers wilt & do not retain their crunch. -- When all ingredients have been combined, the mixture will appear dry & lack a creamy texture or appearance. DO NOT PANIC - that will begin to change almost immediately.
- Note added 7/24/06: In response to reviewer comments, the amt of salt has been reduced by half. If you reduce further, you will likely lose any salt component in the mix.

TWISTED SISTERS CORNBREAD QUEST
I have been on a personal QUEST of my own to find a way to make cornbread without cornmeal (cannot buy it here in Iceland) and then use my real Twisted Sister to help make a recipe happen for me. Not only did I do it for the Challenge, but I think mine is better than hers. Do not expect dry or coarse cornbread from this recipe. It is moist, cake-like in texture, full of flavor and not in need of any butter, etc. My bet is you will agree with only 1 bite. I already know you will ENJOY!

Steps:
- Preheat oven to 400 F . Grease an 8x8 baking pan & set aside.
- Stir the all-purpose flour, corn flour, salt & baking powder together in a mixing bowl.
- Add eggs, sour cream & vegetable oil to the dry ingredients & mix well with a whisk. You may use a hand-held mixer on a low setting if you wish (I did).
- Fold in the creamed corn until well-distributed.
- Pour into the greased baking dish & bake 25-28 minutes or until it tests done. I suggest the longer time if you are at all in doubt.
- Allow to cool until it cuts easily into 9 square pieces. Serve & enjoy!
- NOTE: For those of you who have cornmeal & prefer using it, this is 1 of the few recipes where cornmeal & corn flour can be swapped in the stated amounts. The texture will change somewhat, but not in a bad way. :-).
