APPLE COBBLER
This easy apple cobbler recipe makes an incredible dessert. A buttery topping over warm, cinnamon apples, this is perfect topped with vanilla ice cream.

Steps:
- Preheat oven to 350 degrees F. Combine 2/3 cup sugar and 1 tsp cinnamon in a small bowl.
- In a large bowl, mix apples with most of cinnamon and sugar mixture. Then place apples into a 13x9 inch baking dish. Sprinkle remaining cinnamon and sugar mixture over apples and gently mix to combine.
- In a separate bowl, combine flour, sugar, eggs, baking powder, cinnamon and salt and mix with a fork until mixture looks like coarse crumbs. Sprinkle mixture over apples in baking dish.
- Drizzle melted butter evenly over crumb mixture. Bake for 45-55 minutes or until starting to turn lightly golden brown. Remove from oven and allow to cool slightly.
- Best served warm, with individual servings topped with a scoop of ice cream and caramel sauce.

- In a large bowl, combine the sugar, cornstarch, cinnamon and nutmeg. Add apples and orange juice; toss to coat. Transfer to an 11x7-in. baking dish coated with cooking spray., For topping, combine the flour, 1/3 cup sugar, baking powder and salt. Cut in butter until the mixture resembles coarse crumbs. Stir in milk just until moistened. Drop eight mounds onto the apple mixture. Sprinkle with remaining sugar. Bake at 375° for 30-35 minutes or until a toothpick inserted into topping comes out clean. Serve warm if desired.

- Spray a 9x13 baking dish with non-stick cooking spray.
- Add sliced apples evenly.
- Sprinkle cake mix evenly over apples.
- Pour soda GENTLY over cake mix.
- DO NOT MIX- Just pour slowly.
- Bake at 350 degrees Fahrenheit, covered, for 30 minutes, and uncovered for 30 minutes.
- I halved the recipe using only 3 apples, 1 box of Jiffy Mix cake mix, 6 oz of Diet 7-up and 9" pie pan! It was still wonderful!

- Preheat the oven to 375°F Spray a shallow 1-1/2 quart baking dish with nonstick spray.
- To make the topping, combine the 1/2 cup flour, the oats, brown sugar, ginger, cinnamon, and salt in a medium bowl. With a pastry blender or 2 knives used scissor-fashion, cut in the butter until the mixture resembles coarse crumbs. Add the water and firmly press mixture to form clumps.
- To make the filling, mix the granulated sugar, the 2 tablespoons flour, the nutmeg, and cloves in a large bowl. Add the apples and vanilla; mix well. Transfer to the baking dish. - For the fruit, put all the ingredients in a saucepan. Cook over a low heat, stirring until the butter has melted and the sugar has dissolved, then leave to simmer until you have a chunky fruit compote, then set aside.
- Heat oven to 190C/170C fan/gas 6. Whisk the egg into the milk and set aside. Rub the butter and the flour together until it has the texture of chunky breadcrumbs, then stir in the caster sugar, cinnamon, baking powder and a large pinch of salt. Pour in the milk mixture and bring together to form a thick, batter-like texture.
- Tip the compote into a baking dish and top with large spoonfuls of the cobbler mix, making sure there are a few gaps for the fruit to bubble through, then sprinkle everything with the demerara sugar. Bake for 35-40 mins or until the topping is golden and just cooked through. Remove from the oven and leave to rest for 5 mins before serving straight from the dish with generous spoonfuls of clotted cream.
