- Scrub and pierce potatoes; rub with oil. Sprinkle with salt and pepper. Bake at 375° for 1 hour or until tender. When cool enough to handle, cut each potato in half lengthwise. Scoop out the pulp, leaving thin shells., In a large saucepan, melt butter. Add the cheddar cheese, whipping cream, sour cream, Parmesan cheese, salt and pepper. , In a large bowl, mash the pulp with cheese mixture. Stir in 2 tablespoons chives. Spoon into potato shells. Place on baking sheets. Bake, uncovered, at 375° for 25-30 minutes or until golden brown. Sprinkle with remaining chives.,

Steps:
- Preheat oven to 400 degrees F (200 degrees C). Use a fork to pierce the potato skins.
- Bake the potatoes unwrapped for about 1 hour, or until soft, in the preheated oven.
- Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Drain, crumble and set aside.
- Over medium-low heat melt the butter in a large saucepan. Combine onion, mushrooms, red pepper, garlic powder, pepper, chives and salt. Cook slowly, stirring occasionally until the onions are soft.
- Slice open the baked potatoes and, keeping the skins intact, scoop the insides into a medium bowl. Transfer the onion mixture to the bowl. Mix in the sour cream. Pour in 1/2 of the cheese and continue mixing until all ingredients are well blended.
- Using a large spoon, fill the potato skins with the mixture. Top with bread crumbs, the remaining cheese and bacon.
- Return the potatoes to the preheated oven and continue baking for about 15 minutes, until the cheese is melted and the filling is slightly brown.

- In a small bowl, dissolve yeast in warm water. In a large bowl, combine milk, shortening, sugar, salt, yeast mixture and 2-1/2 cups flour; beat on medium speed until smooth. Stir in enough remaining flour to form a stiff dough., Turn dough onto a floured surface; knead until smooth and elastic, about 6-8 minutes. Place in a greased bowl, turning once to grease the top. Cover and let rise in a warm place until doubled, about 1-1/2 hours., Punch down dough. Turn onto a lightly floured surface; divide and shape into 48 balls. Place 2 in. apart on greased baking sheets. Cover with kitchen towels; let rise in a warm place until doubled, about 20 minutes., Preheat oven to 375°. Bake until golden brown, 12-15 minutes. Freeze option: Partially bake rolls at 325° for 10 minutes. Freeze cooled partially baked rolls in an airtight container. To use, bake frozen rolls on greased baking sheets at 375° for 12-15 minutes or until golden brown.

- In a medium saucepan over medium heat, warm milk, water, sugar and salt. Remove from heat, and mix in the eggs and yeast.
- Measure flour into a large bowl. Make a well in the flour, and pour milk mixture into it. Do not stir. Cover with a lid, and let stand for 20 to 30 minutes.
- Pour melted margarine into flour, and mix well. Add more flour if too sticky. Knead lightly. Cover, and let rise for 20 to 30 minutes.
- Shape the dough into rolls, and place on a baking sheet. Let rise again for 20 to 30 minutes.
- Bake rolls in a preheated 400 degrees F (205 degrees C) oven for 15 minutes, or until done.

"THE WORKS" TWICE-BAKED POTATOES
"The Works" Twice-Baked Potatoes

- Preheat oven to 400F
- Place potatoes on a baking sheet and roast until tender, about 25-30 minutes
- Remove and set aside until cool enough to touch
- While the potatoes are roasting, in a medium skillet over medium-high heat with 1 turn of the pan of EVOO, about 1 tablespoon, cook bacon until crispy
- Remove and reserve on a paper towel
- When the potatoes are cool to touch, cut in half and scoop out the insides into a medium-size mixing bowl
- Place the skins cut sides up back onto the baking sheet
- Once all the potatoes are scooped out, add the bacon into the bowl with the potato flesh along with the sour cream, 3/4 cup of the cheese, salt and ground black pepper, and mix
- With a small spoon, scoop the potato-bacon-cheese mixture into the little potato skins, top with the remaining cheese and place back in the oven until the cheese is melted, about 10 minutes
TWICE BAKED FRENCH FRIES

- Scald milk and cool to lukewarm.
- Dissolve yeast in warm water.
- Stir in milk, sugar, salt, shortening, and 2 1/2 cup flour.
- Beat until smooth.
- Stir in remaining flour until it makes a soft dough that leaves the sides of the bowl.
- Knead 4 minutes.
- Put in greased bowl and turn greased side of dough up; cover and let rise until doubled, about 1 1/2 hours.
- Punch down and divide into 24 pieces of equal size.
- Shape into rolls.
- Place about 3 inches apart on greased baking sheet or in greased muffin tins.
- Cover and let rise until doubled, about 45 minutes.
- Bake in a very slow oven (275°F) 20 to 30 minutes.
- DO NOT LET ROLLS BROWN.
- Remove from baking sheet and cool at room temperature.
- Wrap rolls in plastic wrap or aluminum foil and store in refrigerator for several days or in freezer for 2-3 months.
- To serve: Brown rolls in hot oven (400°F) 7 to 10 minutes.
TWICE BAKED POTATOES
Twice Baked Potatoes are always the first side dish to go at BBQs and potlucks. Who doesn't love a twice baked potato? And you can make them ahead of time. These have creamy sour cream and butter mashed potatoes topped with cheesy, bacon, and green onions.

- Preheat oven to 350 degrees.
- Bake potatoes in preheated oven for 1 hour. You can just microwave the potatoes instead because it is way faster and they taste just as good. About three minutes per potato, just check for tenderness. So if you are cooking 4 potatoes in the microwave you will need to cook them for at least 12 minutes. Make sure to poke holes in the potatoes with a fork before microwaving so that they don't explode.
- Meanwhile, place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Drain, crumble and set aside.
- When potatoes are done allow them to cool for 10 minutes. Slice potatoes in half lengthwise and scoop the flesh into a large bowl leaving about 1/4 inch of flesh so the potato maintains it's shape; save skins. To the potato flesh add sour cream, butter, salt, pepper, 1/2 cup cheese, 1/2 the green onions, and milk (start adding 1/2 cup of milk but you may not need to add it all depending on the consistency you want. You don't want them too runny). Mix with a hand mixer until well blended and creamy. Spoon the mixture into the potato skins and place on a baking sheet. Top each with remaining cheese and bacon. If making ahead of time, refrigerate here.
- Bake for another 15-20 minutes at 350 degrees. Add 10 minutes if you refrigerated ahead of time. Sprinkle with green onions and serve.

- Pierce each potato with the tines of a fork. Bake your potatoes on a baking sheet, bare with no tin foil, in a 400 degree oven until soft - anywhere from 40-50 minutes depending on the size!
- Start your bacon cooking, chop it into little slices and cook in a pan.
- Slice the potatoes in half when they are cool enough to handle.
- Carve out the soft insides, as much as you want, and put it in the bowl. Leave some in the potato to hold the shape. I find then when you eat it, you can literally just carve off bites one at a time, instead of a mushy mess.
- Add in your butter, sour cream and cream cheese to the potato filling, mixing in completely.
- Add milk until they are the perfect texture for your palate.
- Mix in the seasoning salt and pepper.
- Drain the cooked bacon and add it and half a cup of cheese to the filling, mixing in completely.
- Add in green onion to taste, start with a 1/4 cup.
- Stuff the potatoes with the filling and add the rest of the cheese on top.
- Bake at 350 degrees for 15 minutes.
- Serve these with sour cream sprinkled with a little seasoning salt.
