2 tablespoons extra-virgin olive oil, plus some for drizzling at the table
4 large cloves garlic, chopped
1 medium onion, chopped
2 carrots, peeled and diced
2 ribs celery, chopped
1 fresh laurel leaf or 1 dried bay leaf - fresh bay is available in herb section of larger markets
Coarse salt and freshly ground black pepper
2 cans small white beans, such as Goya brand, cannellini beans may be substituted but look for cans marked "small white beans" on international foods aisle of market
6 cups chicken stock or broth
2 cups tomato sauce
3 cups stale chewy Italian bread, crust removed and bread torn into pieces, about 1/2 a loaf
1 small white onion, thinly sliced or finely chopped, for garnish
1 cup grated Parmigiano-Reggiano, for garnish

Steps:

  • Heat a deep, heavy bottomed pot over moderate heat. Add oil, garlic, onions, carrots, celery and bay to the pot. Season vegetables with salt and pepper and saute until they begin to soften 5 to 7 minutes. Add beans, stock and tomato sauce. Bring soup to a boil over medium high heat. Remove lid and stir in torn stale bread. Stir soup and incorporate bread as it breaks down. When soup is becomes thick and bread is distributed evenly, adjust seasoning and serve the soup in shallow bowls. Some ribolittas are so thick, the spoon can stand upright. This is a subjective technique. Make yours as thick or thin, as you like with the addition of either more bread or additional stock or water.
  • Top shallow bowlfuls of soup with thinly sliced or finely chopped raw onion, a drizzle of extra- virgin olive oil and a generous sprinkling of grated Parmigiano-Reggiano.

This soup is a staple in Tuscany, my favorite place to eat because the food goes back so many generations and remains so simple and not-fussed-with. null This bread soup has some vegetable in it, but it is made with beef stock. For a vegetarian version, use all vegetable or wild mushroom stock and skip the pancetta or bacon.

3 tablespoons extra-virgin olive oil, 3 turns of the pan, plus some for drizzling
4 thick slices pancetta (not smoked) or bacon (smoked), chopped
2 sprigs fresh rosemary, leaves finely chopped
4 to 6 cloves garlic, chopped
1 medium to large onion, finely chopped
2 medium carrots, diced
1 medium, skinny zucchini, cut into thin slices
Salt and pepper
1/2 cup dry red wine, a couple of glugs
1 (15-ounce) can petite diced or chunky style crushed tomatoes
6 cups beef stock, available in boxes on soup aisle (recommended: Kitchen Basics brand)
4 cups, about 1/2 pound, chopped or torn stale bread
2 (15-ounce), small white beans (recommended: Goya brand, smaller than cannellini beans)
4 cups chopped kale or chard
1/2 cup grated Parmigiano-Reggiano, to pass at table

Steps:

  • Heat a soup pot over medium-high heat. Add oil and the the pancetta or bacon and render 4 minutes. Add rosemary, the garlic, 3/4 of the onions, carrots and zucchini and season with salt and pepper. Saute the veggies 7 to 8 minutes, then add wine and deglaze the pot. Stir in the tomatoes and stock and bring up the heat. When soup boils, reduce to a simmer and stir in bread and beans. Pile the greens into the pot and wilt them into the soup. Simmer the ribollita 5 to 10 minutes, stirring soup as it simmers until it thickens to a dense stew-like consistency. A wooden spoon should be able to stand upright in the pot. Turn off heat, adjust seasonings and ladle into shallow bowls. Top with grated cheese, an additional drizzle of extra-virgin olive oil, and a spoonful of reserved finely chopped raw onions.

I found this at another web site. I made changes to make it less spicy, more flavorful and more "Tuscan". My husband loves this so much he reheats it for breakfast! Some crusty bread and a glass Italian red wine, " Mama Mia " what a meal!

5 links sweet Italian sausage links
1 large onion, chopped
4 cups reduced-sodium chicken broth
2 cups beef broth
2 large baking potatoes, peeled and cubed
1 clove garlic, finely minced
1/2 teaspoon dried basil
1 (15 ounce) can cannellini beans, drained (Italian white kidney beans, you can use red)
1 bag Baby Spinach, chopped (found in the produce section with the ready to mix salad greens)
1/2 cup heavy cream
salt
fresh ground pepper
grated parmesan cheese

Steps:

  • Remove sausage skin, add sausage meat and onions to a 6 quart sauce pan.
  • Cook over medium heat, breaking up the sausage, until no longer pink.
  • Add broth, potato, garlic and basil.
  • Bring to a boil, reduce heat and simmer until potato is tender.
  • Add cannelini beans and spinach, cook until spinach is wilted.
  • Add cream, salt and pepper, cook another minute or 2 until heated through.
  • Serve in soup bowls and sprinkle with cheese.

I've seen several Tuscan Soup recipes out there, so here's mine. I have a penchant for spicy Italian, but please feel free to sub milder ingredients, if that's your thing. I don't know why it would be, but if that floats your boat... Serve with some warm crusty bread and enjoy!

5 cups chicken stock (sub canned if needed)
1 large onion, diced
2 garlic cloves, minced
1 lb Italian sausage, spicy (I use Johnsonville)
3 large potatoes, cubed (NOT peeled)
1 (15 ounce) can cannellini beans, drained and rinsed
1 (10 ounce) can rotel tomatoes and green chilies, NOT drained or 1 (15 ounce) can diced tomatoes, flavor of your choice with juice
6 ounces fresh spinach, chopped with stems removed or 6 ounces fresh Baby Spinach, chopped
1/4 cup evaporated milk or 1/4 cup heavy cream
salt and pepper

Steps:

  • Remove casings from sausage links and slice. Place sliced links in a large stock pot or dutch oven over medium high heat and brown until no longer pink. Drain excess grease, but do not rinse.
  • Reduce heat to medium, add onion and cook until soft, stirring often. Add garlic and sautee one minute longer (careful not to scorch it!), then add stock and potatoes. Simmer until potatoes are fork tender.
  • At this point, if you prefer a thicker broth, feel free to hit it with an immersion blender for a couple seconds, or mash some of the potatoes with a fork and stir in to the broth. The addition of the cream at the end will thicken it slightly, but use your judgement and your family's preference as your guide.
  • Add beans, tomatoes, and spinach, simmer until spinach is just wilted but still green, 1 - 2 minutes.
  • Remove from heat and stir in milk or cream. Season to taste with salt and pepper, serve with crusty bread.

Riboliita is a hearty soup originating in Tuscany. What set this soup apart from other Minestra recipes is the use of stale bread to make the soup more substantial (and to economize, of course). This delicious soup is best made a day before serving because it is even better on the second day.

4 tablespoons olive oil
1 red onion, chopped
1 leek, white part only,chopped
2 cloves garlic, chopped
4 carrots, sliced into half inch rounds
4 zucchini, sliced into half inch rounds
1/4 whole savoy cabbage, shredded and chopped
2 cups kale, shredded
2 cups spinach, shredded
4 small potatoes, peeled and cut into one half inch cubes
1 cup green beans, cut into bite size pieces
2 cups cooked cannellini beans, 1 cup pureed,the other left whole
5 cups broth, of your choice,plus
more broth, to thin soup
4 tablespoons tomato paste
1 lb stale Italian bread, sliced and cut into 1 inch cubes
grated parmesan cheese
extra virgin olive oil

Steps:

  • Heat the olive oil in a large pot and sauté the onion and leek together over low heat until they begin to caramelize; add the garlic and sauté for 1 minute; add all the remaining vegetables; season to taste and stir to mix; cover and cook for 20 minutes or until the vegetables have reduced in volume by half; stir again and add broth; bring to a boil and then lower the heat; add the tomato paste and stir to dissolve; cover and cook the soup for 1 hour; add the beans.
  • The next day, reheat soup gently and stir in the bread cubes until the bread has turned into a mush (this takes about 10-15 minutes); if the soup is too thick, thin with more stock to suit your taste.
  • Serve at table with freshly-cracked black pepper, grated parmesan cheese, and drizzle with extra virgin olive oil.

From Every Day with Rachael Ray. It was the December-January, 2007 edition. Am always looking for risotto or rice dishes to serve here at the home. As we serve rice at least once everyday, this one seemed to be one of those recipes that we could "play" around with. We enjoyed this very much! Didn't want to steal Rachael's thunder, so I posted it as she had it and explained what we did below.

3 cups dry red wine (1 bottle, about 750 mil) or 3 cups organic low sodium chicken broth (we used all low-sodium organic chicken broth)
3 cups beef broth (we used low-sodium organic chicken broth) or 3 cups organic low sodium chicken broth (we used low-sodium organic chicken broth)
3 tablespoons extra virgin olive oil
1/4 lb pancetta (we used turkey bacon) or 1/4 lb bacon, chopped (we used turkey bacon)
2 portabella mushroom caps (we used the button mushrooms) or 1 cup button mushroom, finely chopped (we used the button mushrooms)
1 large onion, chopped
4 garlic cloves, finely chopped
2 pinches crushed red pepper flakes
1 1/2 cups arborio rice
2 tablespoons finely chopped fresh rosemary
2 tablespoons tomato paste
salt, to taste
fresh ground black pepper, to taste
1 lb boneless chicken thighs (we used all white meat) or 1 lb chicken breast, cut into bite-sized pieces (we used all white meat)
1/2 cup freshly grated pecorino romano cheese
1/4-1/2 cup green peas (optional)
grated pecorino romano cheese (garnish)

Steps:

  • In a medium saucepan, bring the wine (or chicken broth) and broth to a simmer, then reduce the heat to low and keep warm.
  • In a large, deep skillet, heat 1 tablespoon EVOO, over medium-high heat.
  • Add the pancetta (we used bacon) and cook, stirring occasionally, until crisp, 7 to 8 minutes.
  • Using a slotted spoon, transfer the pancetta to a paper-towelled plate; set aside.
  • Add the remaining 2 tablespoons EVOO, the mushrooms, onion, garlic and crushed red pepper to the skillet and cook for 2 minutes.
  • Stir in the rice until coated with the oil and slightly toasted, about 2 minutes.
  • Stir in the rosemary and tomato paste, season with salt and pepper and cook for one minute.
  • Reduce the heat to medium and stir a ladle or two of the warm broth mixture into the risotto every few minutes until absorbed.
  • After about 7 minutes, stir in the chicken along with some broth.
  • Continue to add the broth gradually, stirring constantly with a wooden spoon to make a creamy consistency, until the rice is al dente, about 22 minutes.
  • Stir in the cheese and green peas and adjust the seasonings.
  • Serve the risotto in shallow bowls topped with the reserved pancetta(bacon) bits.
  • Pass more cheese around the table.
  • Enjoy with some Chianti and some nice and crusty warm bread!
