Steps:
- Meatballs: In a bowl mix together the milk and egg. Add mixture to bowl of bread cubes. Toss to coat. Let the bread stand for 15 minutes. Mash the bread cubes and add to a 1 pound of ground beef, grated Romano, garlic, and parsley. Mix together. Add salt and pepper to taste With wet hands form walnut size balls. Brown the meatballs lightly in olive oil. Add meatballs to 6 cups sauce bubbling in pot. Simmer 45 minutes Tomato sauce: Heat oil in a casserole. Add garlic and stir until lightly golden. Then add the crushed tomatoes with their juice, 2 tomato cans of water, the ground pepper, chopped parsley, chopped fresh basil and salt. Then taste it. If it seems a little acidic, add a little sugar Bring to a boil and simmer, stirring occasionally, for 45 minutes.
EASY BAKED MEATBALLS WITH TWO SAUCE OPTIONS
What an easy recipe, and only 4 ingredients. This was on the cover of the newest issue of Kraft's "What's Cooking" magazine. I did add minced garlic and some Italian seasoning....just couldn't help myself :) I baked the meatballs on a rack to eliminate excess fat. Two sauce options were given as serving suggestions. I have listed them in the instructions so that they will not interfere with the nutritional values of the meatballs. These are terrific for freezing, making future meals even faster.

Steps:
- Preheat oven to 400*F. Line 2 large pans with foil. Spray pan and rack (if using) with cooking oil.
- Mix together all ingredients, and form into 32, 1-1/2" balls.
- Place meatballs on the pan (or rack if using) and bake for 16 - 18 minutes, or until done. (160*).
- Tomato-Basil Cream Sauce:.
- Mix 1-1/2 cups pasta sauce, 1/4 cup light cream cheese spread, and 2 tbsp chopped fresh basil in a large skillet. Cook on medium-low heat for 3 minutes or until heated through, stirring occasionally. Add 16 hot meatballs and stirr to evenly coat. Sprinkle with 1/4 cup grated Parmesan cheese before serving.
- Creamy Brown Gravy:.
- Mix 1 cup beef gravy, 1/4 cup light cream cheese spread and 2 tbsp chopped fresh parsley in a large skillet. Continue with the directions as given for the tomato basil sauce, omitting the Parmesan.

- Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking dish.
- Mix together the ground beef, rolled oats, 6 tablespoons of sweet onion, milk, salt, and black pepper until thoroughly combined. Roll the mixture into 2-inch meatballs, and place meatballs into the prepared baking dish.
- In a bowl, mix the ketchup, Worcestershire sauce, sugar, 4 1/2 tablespoons of sweet onion, apple cider vinegar, and water until the sugar has dissolved, and pour the sauce evenly over the meatballs.
- Bake the meatballs and sauce in the preheated oven until the sauce is bubbling and thickened and the meatballs are no longer pink inside, about 1 1/2 hours. An instant-read thermometer inserted into the center of a meatball should read at least 160 degrees F (70 degrees C).

BAKED MEATBALLS
These easy homemade Baked Meatballs with fresh marinara are so much better than store bought meatballs with a combination of beef and Italian sausage and panko breadcrumbs, fresh Parmesan cheese, and fresh parsley. The fresh marinara comes together quickly and tastes so much better than jarred.

- Preheat oven to 375 degrees. Cover baking sheet with parchment paper.
- Combine the Italian Sausage, ground beef, breadcrumbs, onion, garlic, milk, Parmesan Cheese, parsley, and eggs in a large bowl. Mix gently with your hands just until combined. Use a small cookie scoop for proper size portioning. Roll them using your hands into a little over 1 inch meatballs. Place them on the prepared baking sheet as you roll them. Bake for 18-20 minutes.
- Meanwhile heat the olive oil in a skillet over medium heat. Add the onion and cook until soft; approximately 7 minutes. Reduce the heat to low and add the garlic, crushed red pepper, and black pepper; cooking for 1 minute while stirring. Add the crushed tomatoes and simmer for 20 minutes. Stir in the fresh basil. Finally add the baked meatballs to the marinara sauce and stir gently to combine. Simmer for 5 minutes.
- NOTES Mix the meatball mixture with a gentle hand and only until it is combined. Overmixing will make the meatballs dense and dry. For best results if available use fresh parsley in the meatballs and fresh basil in the sauce. However dried herbs will suffice in a pinch. Use a 1 tablespoon cookie scoop to help with uniform size but roll the meatballs in your hands so they are round on all sides. Use parchment paper for super easy cleanup and even browning. Start the marinara a few minutes before loading the meatballs in the oven. Meatballs are done when they are cooked through, browned, and the internal temperature registers 165 degrees with an instant read thermometer. Store leftovers in an airtight container for up to 3 days. Reheat on low in a skillet on the stovetop or in the microwave at a reduced heat. Flash freeze and then store in a heavy duty zipper bag for up 3 months. Defrost in the refrigerator overnight.
