1-1/4 cups cornflake crumbs
1/2 cup grated Parmesan cheese, divided
1/2 teaspoon salt
1/2 cup 2% milk, divided
24 chicken tenderloins
1 cup mayonnaise
1/4 cup prepared pesto
1/2 teaspoon garlic powder
1/8 teaspoon pepper
1 plum tomato, seeded and chopped
1 tablespoon minced fresh basil

Steps:

  • Preheat oven to 350°. In a shallow bowl, mix cornflake crumbs, 1/4 cup cheese and salt. Place 1/4 cup milk in a separate shallow bowl. Dip chicken in milk, then in crumb mixture, patting to help coating adhere. Place on greased racks in two foil-lined 15x10x1-in. baking pans. Bake 25-30 minutes or until a thermometer reads 165°., Meanwhile, in a small bowl, mix mayonnaise, pesto, garlic powder, pepper and remaining milk and cheese; top with tomato and basil. Serve with chicken.

8 skinless boneless chicken thighs
OR
4 skinless boneless breasts
1 cup white wine
½ cup kalamata olives
⅓ cup sliced sun-dried tomatoes in oil or half of 210 mL jar
2 tbsp pesto

Steps:

  • Slice thighs in half and breasts in quarters. For pieces much thicker than others, slash partway into the thickest section, then open book-fashion. Turn slow cooker to high for cooking 2 hours or low to cook 4 hours.
  • Add wine to slow cooker and stir in remaining ingredients. Stir in chicken. Push pieces into the liquid. Cover and cook on high 2 to 2½ hours or on low for 4 to 5 hours until chicken reaches 165°F (74°C). Taste sauce and stir in more pesto if needed. Marvelous served in wide shallow bowls over mashed potatoes, rice or pasta. Garnish with chopped fresh basil, parsley or sliced green onions.

1 red bell pepper, cut into chunks
1 cup prepared pesto
½ cup white wine
1½ cups heavy cream
Penne or fettuccine, cooked and drained
Grated Parmesan cheese (optional)

Steps:

  • 1. Spray skillet with cooking spray. Season chicken with salt and black pepper, as desired. Cook chicken over medium-high heat, about 5 minutes, until no longer pink in center. Remove from pan; set aside. 2. Cook bell pepper in skillet 3 minutes, or until tender-crisp. Return chicken to skillet. 3. Stir pesto into skillet. Add wine and cream. Cook over medium heat until thickened, stirring occasionally. 4. Add pasta; stir. Toss pasta with chicken and bell peppers. Serve warm, sprinkle with Parmesan cheese, if desired.

1 tablespoon mayonnaise
1 pound chicken breast tenderloins
1 cup panko bread crumbs

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C).
  • Whisk pesto and mayonnaise together in a bowl. Dredge both sides of each chicken tender in the pesto mixture and coat with bread crumbs. Arrange tenders on a baking sheet.
  • Bake in the preheated oven for 15 minutes. Turn chicken pieces and continue baking until chicken is no longer pink in the center and the juices run clear, about 15 more minutes. An instant-read thermometer inserted into the centers should read at least 165 degrees F (74 degrees C).

A friend of mine brought this recipe back from her travels to the Mediterranean. She actually cooks the chicken on a barbecue. She roasts the vegetables while the chicken in marinating if she hasn't marinated the chicken overnight. The chicken in cooked on the cooler part of the barbecue.

100 g firmly packed fresh basil
4 garlic cloves
50 g freshly grated parmesan cheese
50 g toasted pine nuts
80 ml lemon juice
250 ml olive oil
4 chicken breast fillets

Steps:

  • Place the basil, garlic, Parmesan, toasted pine nuts and lemon juice in a food processor and process until combined.
  • Gradually add the olive oil, with the processor still running, and process until smooth.
  • Reserve 3/4 cup of the pesto.
  • Coat the chicken fillets with the remaining pesto and marinate for at least 1 hour, or overnight if time permits.
  • Place the chicken on a tray and cook under a medium grill (broil) for 5 minutes on each side, or until cooked, brushing with any remaining marinade during the cooking.
  • Serve with roasted vegetables, (such as eggplant, capsicum, red onion) and the reserved pesto.
