ORANGE SORBET
Steps:
- 1. Place all ingredients into the Vitamix container in the order listed and secure lid.
- 2. Select Variable 1.
- 3. Turn machine on and slowly increase speed to Variable 10, then to High.
- 4. use the tamper to press ingredients into the blades.
- 5. In about 30-60 seconds, the sound of the motor will change and four mounds should form.
- 6. Stop machine. Do not over mix or melting will occur. Serve immediately.

- In a small saucepan, combine 1/4 cup orange juice and sugar. Bring to a boil, and cook, stirring, until sugar dissolves, about 1 minute. In a shallow 2-quart dish, combine mixture with remaining orange juice. Transfer to the freezer.
- Freeze until solid, 2 to 2 1/2 hours. With a fork, break into large pieces; working in batches, transfer to a food processor, and process until smooth. Keep covered in the freezer until ready to serve. Soften at room temperature 5 to 10 minutes before serving.

My best sorbet recipe. Sweet, smooth, and very refreshing. This was one of the things my mother frequently asked me to make for her when she was in assisted living. It is the first to go at ice cream socials. Everyone loves it. I serve it with my Recipe #83963. I found this in the newspaper years ago and adapted it to suit my style. For the best dessert ever, serve it in the Recipe #327004. The flavors are wonderful when combined!

Steps:
- Combine sugar and water in saucepan.
- Stir and cook over high heat until sugar is dissolved.
- Boil without stirring for 1 minute.
- Remove from heat and set aside.
- Grate the zest and set aside.
- Squeeze Oranges into 4 cup glass measure (strain, or remove seeds).
- Stir in sugar syrup and zest.
- Add water to make 3 1/2 cups total, stirring well.
- Chill in refrigerator about one hour.
- Transfer mixture to ice cream maker and proceed according to manufacturer's directions.
- May serve at once, or place in covered container until desired consistency is reached.
- Garnish with mint leaves.
ORANGE CLOVES AND PINEAPPLE GINGER SORBETS WITH ORANGE SAUCE AND CRISPY ORANGE AND PINEAPPLE SLICES
Steps:
- To prepare the crispy slices, combine water and sugar in a saucepan and bring it to a boil. After a couple of minutes of boiling turn it off and cool it. When it is at room temperature, slice the fruit, dry it in paper towel, dip it in the sugar syrup and place it over a nonstick paper over a sheet tray. Bake in a very mild 150 degree oven for 2 hours until they are dry and crisp. Flip them upside down after about one hour. To prepare the orange sorbet, combine sugar and water in a saucepan and bring to a boil. After about two minutes of boiling, add the zest and the cloves, turn off the heat and place the syrup in a bowl to cool. When it is cold, add the orange juice, the lemon juice and the grand marnier. Strain it and put it in the ice cream machine. Work it until it becomes smooth and add the egg white just before it's ready. To prepare the pineapple sorbet, combine sugar and water in a saucepan and bring to a boil. After about two minutes of boiling, add the zest and the ginger, turn off the heat and place the syrup in a bowl to cool. When it's cold, strain it, then add the Pineapple puree, the lemon juice. Put it in the ice cream machine. Work it until it's smooth and add the egg white just before it's ready. To prepare the orange sauce, warm the orange juice in a saucepan, add sugar to taste. Dissolve some cornstarch with grand marnier and add a little bit of it to the orange juice while is close to a simmer. Stir and watch the consistency. Keep adding drops of the corn starch and grand marnier mixture until it reaches the desired consistency. Adjust the flavor with sugar, grand marnier and lemon juice. Place the sauce into a bowl to cool. To plate place one ball of orange sorbet and one ball of pineapple sorbet in an iced martini cup. Drizzle some sauce on top. Garnish with the crispy slices.

- Drain the syrup from two cans of lychees into a small pan. Add the sugar and dissolve over a gentle heat. Bring to the boil for 1 min. Blitz the drained lychees, fresh ginger slices and lychee syrup in a blender until very finely chopped. Pour through a sieve. Tip into a 1-litre container and freeze for at least 6 hrs until solid.

- with a sharp knife slice the top part of the oranges
- with a spoon scoop out the inside of the orange.
