I was looking for a low-carb option of one of our favorite soups. The cauliflower soaks up the flavor and my hubby didn't notice that it wasn't potatoes!

1 pound Italian sausage (such as Jimmy Dean®), casings removed
6 slices bacon, cut into 1/2-inch pieces
1 onion, diced
3 cloves garlic, pressed
2 (32 ounce) cartons chicken broth
½ cup water
1 cube chicken bouillon (such as Knorr®)
1 teaspoon ground black pepper
5 cups chopped cauliflower florets
3 cups stemmed and chopped kale
½ cup half-and-half
¼ cup grated Parmesan cheese

Steps:

  • Cook the Italian sausage in a large pot over medium-high heat until browned and crumbly, 5 to 7 minutes. Drain off grease and transfer sausage to a plate.
  • Cook bacon to the same pot until crisp, 3 to 5 minutes. Remove and drain, leaving about 2 teaspoons of bacon grease in the pot. Add onion and garlic and cook until soft and translucent, about 5 minutes.
  • Return sausage and bacon back into the pot; stir in chicken broth, water, and bouillon cube. Season with pepper and simmer over low heat for 20 minutes. Stir in cauliflower and simmer until almost tender, about 5 minutes. Add kale and half-and-half; simmer until kale is wilted, about 5 minutes. Sprinkle with Parmesan cheese to serve.

1 tablespoon olive oil
1/2 large onion, diced (about 1 cup)

2 stalks celery, diced, (about 1/2 cup)
1 small zucchini, diced (about 1 1/2 cups)
1 clove garlic, minced
1 tablespoon chopped fresh thyme leaves (or 1 teaspoon dried)
2 teaspoons chopped fresh sage leaves (or 1/2 teaspoon dried)
1/2 teaspoon salt
1/4 teaspoon freshly ground black pepper
32 ounces low-sodium chicken broth or vegetable broth
1 (14.5-ounce) can no salt added diced tomatoes
2 cups chopped baby spinach leaves
1/3 cup freshly grated Parmesan, optional

Steps:

  • In a small bowl mash half of the beans with a masher or the back of a spoon, and set aside.
  • Heat the oil in a large soup pot over medium-high heat. Add the onion, carrots, celery, zucchini, garlic, thyme, sage, 1/2 teaspoon of salt and 1/4 teaspoon of pepper, and cook stirring occasionally until the vegetables are tender, about 5 minutes.
  • Add the broth and tomatoes with the juice and bring to a boil. Add the mashed and whole beans and the spinach leaves and cook until the spinach is wilted, about 3 minutes more.
  • Serve topped with Parmesan, if desired.

3 garlic cloves, minced
1/2 teaspoon crushed red pepper flakes
24 ounces cauliflower florets
48 ounces chicken broth
2 cups kale, chopped
12 ounces heavy cream

Steps:

  • In a large Dutch oven over medium heat, brown sausage until cooked through. Add onions, garlic and red pepper flakes and cook for an additional 4-5 minutes, stirring frequently. Drain excess fat and return pot to the stove.
  • Add cauliflower and chicken broth to the sausage mixture. Continue cooking over medium heat until the cauliflower is cooked through.
  • Add heavy cream and kale and continue cooking for an additional 10-15 minutes. Salt and pepper to taste.

½ pound mild or spicy Italian sausage links
1 tablespoon olive oil
1 onion, diced
2 cloves garlic, minced
4 cups chicken broth or more as needed
1 head cauliflower, broken into small florets
3 cups baby kale
1 (14 ounce) can navy beans, rinsed and drained
1 cup heavy whipping cream
salt and ground black pepper to taste

Steps:

  • Cook Italian sausage in a large Dutch oven until browned, 3 to 5 minutes. Drain excess fat and place cooked sausage on a paper towel-lined plate.

4 cups fresh cauliflowerets (about 14 ounces)
2 cans (14-1/2 ounces each) reduced-sodium chicken broth
2 cups water
2 garlic cloves, minced
1 pound bulk Italian sausage
1 cup sliced fresh mushrooms
1 cup heavy whipping cream
1/4 teaspoon pepper
1/2 pound bacon strips, cooked and crumbled

Steps:

  • In a large saucepan, combine cauliflower, broth, water and garlic; bring to a boil. Simmer, uncovered, until cauliflower is tender, 12-15 minutes., Meanwhile, in a large skillet, cook sausage and mushrooms over medium heat until sausage is no longer pink, breaking up sausage into crumbles, 6-8 minutes. Remove with a slotted spoon; drain on paper towels., Add sausage and mushrooms to cauliflower mixture; return to a boil. Reduce heat; simmer, uncovered, 5 minutes. Stir in cream and pepper; heat through. Serve with bacon.

We love roasted cauliflower for its nutty flavor and its versatility. While little needs to be added to enhance the flavor, many herb and spice combinations will pair well with this side dish without adding lots of calories. Feel free to leave out the capers if your crew are not fans.

1 small head cauliflower, cut into medium-size florets (about 4 cups)
1/2 cup grape tomatoes, halved
3 tablespoons extra-virgin olive oil
1 tablespoon drained capers

1/4 lemon
2 tablespoons chopped fresh parsley

Steps:

  • Adjust an oven rack to the top position and preheat the oven to 475 degrees F. Toss together the cauliflower, tomatoes, olive oil, capers, 1/2 teaspoon salt, a few grinds of pepper and the garlic on a baking sheet. Roast until the cauliflower browns in some spots and is tender, tossing about halfway through, about 20 minutes. Toss with a squeeze of lemon and the parsley. Serve warm.

Steps:

  • Roughly chop the onion, garlic, broccoli and cauliflower. Firstly add the onion, garlic and cooking oil to a large cooking pot (for a healthier option try sunflower fry spray).
  • Once the onion and garlic has softened (this will only take a couple of minutes) add the chopped broccoli and cauliflower. Then add the stock, this should cover approx. half the ingredients. For more broth type soup add approx. another 100-200ml of water
  • Add a pinch of salt and pepper and then bring the stock to a simmer and cover with lid. Once the ingredients have become soft (after approx. 20 mins) pour the ingredients into a blender or use a hand blender.
  • Tip - For a creamer soup add cream or a couple of potatoes (bear in mind, potatoes will take longer to cook, so consider part boiling them before adding into the soup pot). This soup can also be frozen.

2 quarts chicken stock (page 303; not canned broth)
1 teaspoon fine sea salt
2 1/2 pounds cauliflower (preferably Romanesco), cut into 1-inch-wide florets
1/4 pound spaghetti, broken into roughly 1 1/4-inch pieces
1/2 cup extra-virgin olive oil (preferably Sicilian)
2 ounces finely grated Pecorino (preferably Sicilian) or Parmigiano-Reggiano (1 cup)

Steps:

  • Bring stock to a boil in a 4- to 5-quart heavy pot over high heat and add sea salt and pepper to taste.
  • Stir in cauliflower and simmer, covered, until just tender, about 5 minutes. Stir in pasta and simmer, uncovered, stirring occasionally, until al dente, 10 to 15 minutes (pasta takes longer to cook in stock than in water).
  • Stir in sea salt to taste and serve soup drizzled with olive oil and sprinkled with cheese.

2 quarts water

5 ounces evaporated milk

Steps:

  • In some olive oil sauté the onion and garlic until transparent.
  • Add water and chicken base or 2 quarts chicken broth.
  • Add the potatoes (I like to use frozen hash browns that I always have on hand).
  • Add the seasonings.
  • Bring to boil. Cover with lid and simmer.
  • Brown the sausage, breaking up into small pieces, and drain in a stainer.
  • Wash the kale, remove the stems/rib. Slice across you can add fresh or thawed frozen spinach squeezed dry).
  • Add the sausage and kale to your saucepan and cook until potatoes are tender.
  • Add the can of evaporated milk and heat through.
  • Check to see if you want to add any salt.
  • Serve with freshly grated Parmesan cheese. Enjoy.:-).

  • Sausage and Base ... You can rinse the pot out; but, I don't find it necessary; just make sure to get all the pureed cauliflower and potatoes out of the pot. Just add a bit of olive oil, and bring to medium heat. Add the sausage and bacon; and, slowly render, stirring often. I try not to break up the sausage too much; I actually like it a bit 'chunky' or 'rustic.' Once the sausage is golden brown, and the bacon crisp; about 5-8 minutes. Transfer to a plate (paper plate if you have one for easy clean up) lined with a paper towel; leaving the drippings in the pot.
