Coffee and balsamic vinegar give these turnip greens with bacon, a Southern favorite, a great depth and kick.

4 slices bacon, chopped
1 medium onion, chopped
2 bunches turnip greens, chopped
½ cup strong brewed coffee
¼ cup balsamic vinegar
1 pinch garlic powder, or to taste
salt and ground black pepper to taste

Steps:

  • Place bacon and onion in a large skillet and cook over medium heat, covered, turning occasionally, until evenly browned and onions are translucent, 8 to 10 minutes.
  • Place turnip greens into the skillet, a handful at a time if necessary, until wilted down, 5 to 7 minutes. Add coffee, vinegar, garlic powder, salt, and pepper.
  • Taste the liquid and adjust seasonings if necessary. Reduce heat to low or medium-low, cover, and simmer for 20 to 25 minutes more.
  • Uncover and cook until liquid has reduced and greens are tender, about 10 minutes more.

A delicious mixture of greens. The washing process is the most important part for these tender, tasty greens. Don't forget the sugar! If you follow directions exactly, you'll have the most perfect greens ever!

2 bunches collard greens
2 bunches mustard greens
2 bunches turnip greens
3 tablespoons salt
4 cups chicken broth, divided
½ cup vegetable oil
4 cloves garlic, sliced
½ cup cooked real bacon bits
½ cup white sugar
salt and pepper to taste

Steps:

  • Pull the leaf portions of the collard, mustard, and turnip greens away from the tough stems, and discard the stems. Gently wash the greens in warm water to remove all soil and sand. Partially fill a clean sink with warm water, and stir in 3 tablespoons of salt and 2 cups of chicken broth; allow greens to soak in the mixture for 10 minutes. Scoop up the greens and allow to drain in a colander; discard used chicken broth. Do not rinse the greens.
  • Pour the remaining 2 cups of chicken broth into a large pot, and mix in the greens. Stir in vegetable oil, garlic, bacon bits, and sugar, and season with salt and black pepper. Bring to a boil, reduce heat to a simmer, and cook until the greens are tender, stirring occasionally, 45 minutes to 1 hour.

ROSE'S SOUTHERN COOKED MUSTARD & TURNIP GREENS

This is a Southern Staple for many Southerners. We had greens often when I was growing up, almost always with Corn Bread. I had to pay special attention so I could list the measurements, when making these today, as I do not usually use a recipe. I am posting this recipe especially for Stephanie K. here at JAP, and any one else...

Number Of Ingredients 12

2 lb smoked ham hocks or other smoked meat of your choice
1 lb bag pre washed & cleaned glory mustard greens
1 lb bag pre washed & cleaned glory turnip greens
2 lb fresh turnip bottoms, peeled, sliced or cubed
1 medium yellow onion, cubed or chopped
3-4 clove garlic, minced
1 medium red bell pepper, cubed
1/8-1/4 tsp red hot pepper flakes
1 1/2 Tbsp white distilled vinegar
1 Tbsp sugar
1 1/2 Tbsp butter, optional
salt, optional, according to taste

Steps:

  • 1. Add Ham hocks to a large pot, and cover with water, and a tight fitting lid. Cook over medium low heat for 1 hour. This is the type of greens I used for this recipe, to save time.
  • 2. Then add both bags of washed and cleaned greens. I use Glory that are already prewashed & cleaned, it will look like a lot but they shrink down very quickly, put lid back on and allow to shrink.
  • 3. Then add chopped onions, minced garlic, cubed red bell pepper, pepper flakes, distilled vinegar, sugar & butter, stir to mix. Then let cook over low heat, for 20 minutes. Remove ham hocks, & remove fatty outer layer, & bones, but save the lean meat portion. Can add back into pot as is or cube into smaller portion size.
  • 4. Then add cubed or sliced turnip, & continue to cook over low heat for an additional 15 minutes or so or according to personal preference.
  • 5. Serve with fresh sliced tomatoes, sliced or chopped onions, or what ever you prefer.

  • 7. PLEASE NOTE: If you use the bulk greens they need to be picked through, they need to be washed thourgly at least 4 to 5 times to remove sand and grit. Discard any yellow leaves & tough stems. You may also want to try smoked Turkey parts, salt pork, or what ever suits your fancy. I prefer the Ham hocks or the smoked neckbones. You will want to taste to see if you need to add salt. Smoked meats are quite salty.

Big Bob always had a standing policy at his restaurant that when you were on the clock you ate for free. Some companies give their staff stock options; Big Bob always gave his staff real Southern fixings. Many staples of the staff meals were not offered to the customers and it was not uncommon to walk into his restaurant and smell fried chicken, sweet potatoes, or catfish cooking. Thank God hickory smoke usually trumped any other aroma or Big Bob Gibson Bar-B-Q might have turned into Big Bob's Southern Kitchen. While turnip greens have never graced the menu at Big Bob Gibson Bar-B-Q, they were cooked almost as often as any side dish on the menu. Always made with the restaurant's smoked slab bacon, this recipe showcases the simple delight of seasoned greens. Pair them with black-eyed peas, fried potatoes, and cornbread to taste a typical employee meal in Big Bob's kitchen.

Yield serves 6 to 8

Number Of Ingredients 10

2 pounds turnip greens (collard or mustard greens can be substituted or mixed)
1/2 pound smoked slab bacon (see page 66)
5 cups water
1/2 cup diced onions
2 garlic cloves, minced
2 tablespoons cider vinegar
1 1/2 teaspoons salt
1/4 teaspoon black pepper
1/8 teaspoon crushed red pepper flakes
Just add greens pepper sauce (page 234)

Steps:

  • Wash the turnip greens in cold water and drain well. Repeat the process twice, making sure all sandy grit is removed from the leaves. Cut off and discard the tough stems and any discolored greens.
  • Place the bacon in a medium stockpot with the water. Bring to a boil and cook at a rapid simmer. Gradually add the greens, stirring to wilt before adding another batch, until all the greens are in the pot. Add the remaining ingredients and mix well. Reduce the heat to medium-low, cover, and simmer for 1 hour, or until the greens are tender.
  • Top each serving of greens with a few dashes of pepper sauce or serve the sauce on the side.

QUICK TURNIP GREENS

The greens are cooked with bacon to give them a Southern-Style all day cooking flavor. This recipe is easily adapted to any green, i.e. mustards, collards, kale,etc.

1 lb turnip greens, stems removed and leaves cut into shreds
3 slices center-cut bacon
1 cup onion, chopped
1/2 teaspoon sugar
1/2 teaspoon cider vinegar
hot sauce, to taste (such as Tabasco)
salt & freshly ground black pepper

Steps:

  • Heat a quart of salted water to boiling in a saucepan. Cook greens until just tender, about 5 minutes; drain.
  • In a skillet cook bacon. Remove and drain on paper toweling.
  • Add onion to the skillet and cook until soft, 6 to 7 minutes, stirring occasionally. Add the greens and toss. Stir in the sugar and the vinegar and cook until heated through, about 2 or 3 minutes.
  • Crumble bacon and sprinkle over top. Add a couple of dashed of hot sauce. Season with salt and pepper to taste and serve.

4 slices thick-cut bacon, cut crosswise into 1/2-inch pieces
2 pounds baby turnips, peeled and halved or quartered
3/4 cup low-sodium chicken broth
3 tablespoons pure maple syrup
2 tablespoons apple-cider vinegar, preferably unfiltered
1 tablespoon Dijon mustard
Coarse salt and freshly ground pepper
2 tablespoons unsalted butter

Steps:

  • Cook bacon in a large skillet over medium, stirring frequently, until browned and most of fat is rendered, 5 to 7 minutes. Transfer to a paper towel-lined plate.
  • Add turnips, broth, maple syrup, vinegar, and mustard to skillet; season with salt and pepper. Bring to a simmer. Cover, reduce heat to medium-low, and cook until turnips are knife-tender, 8 to 10 minutes.
  • Uncover and increase heat to medium. Add butter and cook, stirring occasionally, until sauce thickens to a glaze that evenly coats turnips, 10 to 12 minutes. Top with bacon; serve.

3 big bunches (about 1 1/2 pounds) mixed mustard and turnip greens
2 teaspoons expeller-pressed vegetable oil or extra virgin olive oil
2 thick slices smoked bacon, cut into 1/2-inch pieces
1 onion, halved and sliced lengthwise
Kosher salt
Vinegar from pickled chile peppers (see page 141)

Steps:

  • Wash the greens, remove the thick stalks, and coarsely chop the leaves.
  • Heat a large sauté pan over medium heat and add the oil and bacon. Cook the bacon until it is about halfway rendered and still soft, 4 to 5 minutes. Add the onion and season with salt. Cook for 5 to 6 minutes, until the onion is fragrant, translucent, and beginning to turn golden. Add the greens and a big pinch of salt, lower the heat, cover, and cook, stirring occasionally, for about 15 minutes, until the greens are very soft and the water from the greens has evaporated. Adjust the seasoning and serve with the spicy vinegar.
