SEHRIYELI PILAV: TURKISH-STYLE RICE PILAF WITH ORZO

Sehriyeli Pilav: Turkish-Style Rice Pilaf With Orzo image

Sehriyeli pilav (Turkish rice pilaf) is a simple and tasty recipe combining orzo and rice. It makes a fantastic side dish for any meat entrée.

Provided by Elizabeth Taviloglu

Categories     Side Dish

Time 30m

Number Of Ingredients 7

1 tablespoon butter or margarine
1 tablespoon cooking oil
2 tablespoons orzo pasta
1 cup rice (baldo or Calrose)
2 cups chicken broth (or bouillon)
Salt to taste
Black pepper to taste

Steps:

  • Gather the ingredients.
  • In a shallow saucepan, melt the butter and oil together. Add the orzo and stir continuously over medium heat until the pasta turns a dark golden color. Be careful and keep stirring so the butter and orzo don't burn.
  • Add the uncooked rice and stir thoroughly until the grains are coated with the oil. Add the chicken broth, salt, and pepper, and then bring to a boil. If you are using chicken bouillon in place of stock, cut down on or omit the salt.
  • Cover and reduce the heat to low. Let the rice slowly simmer until the liquid is absorbed, 20 minutes.
  • Without removing the cover, take the pan from the heat and put it aside to cool down for 5 minutes, keeping the lid on at all times. If too much condensation forms on the inside of the lid, open it and cover the top of the pan with a few paper towels, then replace the lid. This will absorb excess moisture and allow the rice to continue steaming at an even pace.
  • Before serving, open the lid and gently stir the rice to loosen the bottom and separate the grains.
  • You can use a small dessert bowl or ramekin as a mold to give it that signature rice pilaf look. Fill the bowl with the rice and use the back of a spoon to pack it down tightly. Invert the bowl onto a serving plate. The pilaf will pop out and should remain in the molded shape.

TURKISH PILAV (RICE)

Turkish Pilav (Rice) image

I've seen many varying dishes of rice in Turkey, all of them quite good, so this is just one of many. This variation has a good taste, but because the flavor isn't too bold it makes an easy side dish to most meals. Afiyet Olsun!

Categories     Brown Rice

Time 20m

Yield 4 serving(s)

Number Of Ingredients 6

1 cup white rice
4 tablespoons brown rice or 4 tablespoons noodles
3 tablespoons oil
1 1/2 cups hot water
1 chicken bouillon cube
vegetable seasoning

Steps:

  • Over high heat, add oil and brown rice to pan.
  • Cook until rice is browned well (will look dark, almost burnt -- if using noodles, they will look slightly burnt).
  • Mix in water, white rice, and boulion cube (for easier mixing, break cube first).
  • Sprinkle a small amount of vegetable seasonsing over the mixture (amount depending on desired taste -- I would guess about 0.5 to 1 TBSP max). Stir.
  • Turn heat to medium and cover.
  • Occasionally stirring the rice, cook until tender (water will be gone before rice is done).

TURKISH PILAF WITH SAFFRON & GOJI BERRIES

Turkish pilaf with saffron & goji berries image

We've put together the ultimate recipe for brain health, packed with brain-boosting nutrients like cinnamon, almonds and goji berries

Provided by Sara Buenfeld

Categories     Dinner, Lunch, Main course, Supper

Time 55m

Number Of Ingredients 13

2 large garlic cloves
generous pinch of saffron
3 tsp rapeseed oil
200g diced skinless turkey thigh
85g wholegrain basmati rice
½ tsp ground cinnamon
1 tsp vegetable bouillon
3 celery sticks , finely chopped
1 tbsp fresh thyme leaves
1 tbsp dried goji berries
1 medium onion , halved and very thinly sliced
100g baby spinach leaves
25g flaked almonds

Steps:

  • Finely chop the garlic and set aside to activate (see tip). Meanwhile, pour 2 tbsp boiling water over the saffron and set aside to infuse. Heat 2 tsp of the oil in a large, non-stick sauté pan with a lid, then add the turkey and fry for 5 mins, stirring frequently, until it starts to brown.
  • Stir the rice and cinnamon into the pan, then pour in 400ml boiling water and the bouillon, and stir well. Add the celery, thyme, goji berries and lots of ground black pepper. Cover the pan tightly to prevent steam escaping, and cook over a low heat for 20 mins.
  • Meanwhile, heat the remaining oil in a non-stick pan and add the onion. When it starts to soften, cover the pan for 5 mins to steam it a little more. Take off the lid and slowly fry for 12-15 mins until golden, stirring frequently.
  • After the rice has cooked for 20 mins, check the water level - if the rice is still too nutty and the liquid has all been absorbed, add up to 100ml more water. Stir in the saffron, cover again, and cook for 5-10 mins until the rice is tender.
  • Add the garlic and spinach, cook briefly to wilt the leaves, then turn off the heat. Toss through the fried onions and almonds. Cover the pan and leave to rest for 5 mins before serving.
