Turkish Potato Salad Recipe (Patates Salatası) image

A classic recipe for potato salad that's perfect for your Turkish meze table.

1 kg baby new potatoes (unpeeled, scrubbed - larger ones cut in half)
1 bunch spring onions (trimmed & chopped into small rings)
1 red capsicum pepper (deseeded & finely chopped)
½ bunch parsley (finely chopped)
salt (to season)
1 lemon (juiced)
2 tbsp olive oil
2 tsp hot chilli flakes
2 tsp sumac (optional)

Steps:

  • Bring a large saucepan of water to the boil and add your potatoes.
  • Boil your potatoes for around 15 minutes.
  • Do a taste test and if your potatoes are al dente, remove them from the heat, drain and leave to cool.
  • Your potatoes will continue to cook as they cool so don't leave them boiling until they are soft otherwise, they will break up later.
  • Once cooled, add your potatoes to a large serving bowl and add the onion, peppers & parsley and carefully mix everything together.
  • Now sprinkle the chilli flakes and sumac into your potato salad.
  • Squeeze the lemon juice all over the salad and drizzle the oil.
  • Mix again and serve as part of your meze table or as an accompaniment to meat and fish.

This Turkish-style pizza is a Turkish flat bread layered with a fresh sauce composed of tomatoes, sweet bell peppers, and minced lamb cooked with a flavorful selection of Mediterranean spices. It is normally garnished with fresh salad and a creamy garlic sauce and or a tangy zesty hot red pepper sauce. It is a really light meal, but filling and flavorful. I find it worth the time to make if I can't get it from my favorite Turkish bakery in my old neighborhood in Amsterdam. For the best flavor, make the topping the night before you make the pizza.

1 teaspoon chopped garlic
1 yellow onion, chopped
3 tablespoons chopped fresh basil
½ cup chopped fresh parsley
2 tablespoons chopped fresh mint
½ teaspoon paprika
½ teaspoon ground cumin
½ teaspoon ground coriander seed
½ cup green bell pepper, diced
½ cup red bell pepper, diced
½ lemon, juiced
4 teaspoons olive oil
4 roma (plum) tomatoes, halved
1 pound lean ground lamb
6 tablespoons double concentrated tomato paste
cayenne pepper to taste
salt to taste
3 ¼ teaspoons active dry yeast
½ teaspoon white sugar
1 cup warm water (110 degrees F/45 degrees C)
5 cups all-purpose flour
2 teaspoons salt
¼ cup vegetable oil
½ cup water
1 cup plain yogurt
½ teaspoon chopped fresh parsley
¼ teaspoon crushed garlic
salt and ground black pepper to taste
1 cup shredded green cabbage
1 cup shredded red cabbage

Steps:

  • Heat a large skillet over medium-high heat. Combine the garlic, onion, basil, parsley, mint, paprika, cumin, coriander, diced bell peppers, lemon juice, and olive oil in a food processor. Pulse the vegetables until finely chopped. Add the halved tomatoes and process until the mixture is a thick puree.
  • Place the lamb in the preheated skillet and reduce the heat to medium. Add the puree and the tomato paste and mix well. Cook and stir until the lamb is cooked through, 10 to 15 minutes. Stir in cayenne pepper and salt to taste. Transfer the mixture to a shallow baking dish to cool to room temperature. Cover with plastic wrap and refrigerate overnight.
  • Dissolve the yeast and sugar in 1 cup warm water. Combine the flour and salt in a mixing bowl and stir well. Add the vegetable oil and 1/2 cup water to the yeast mixture and pour it over the flour. Use your hands to mix the dough. Turn the dough out onto a lightly floured surface and knead until smooth and elastic, about 8 minutes.
  • Shape the dough into a ball and transfer to an oiled bowl. Cover with a wet towel and let rise in a warm place until doubled in bulk, about 1 hour. Remove the lamb sauce from the refrigerator and allow it to come up to room temperature. Prepare the garlic sauce: combine the yogurt, parsley, crushed garlic, and salt and pepper to taste. Stir well and set aside.
  • Punch the dough down, transfer it to a floured work surface, and cut the dough into 10 portions. Shape each portion into a round. Flatten each round with your hand; use a rolling pin to roll each piece into a 10-inch circle. The dough should be thin, like a crepe. Place the rounds on parchment paper.
  • Preheat an oven to 500 degrees F (260 degrees C).
  • Stir the lamb sauce and then spoon it onto a dough round. Spread it thinly to the edges and press down lightly so it sticks to the dough. Bake pizzas on parchment paper-lined baking sheets on the lowest oven rack until the edges are a light tan color, 8 to 10 minutes.
  • Place on a wire rack to cool. The pizzas can be stored in an airtight container in the refrigerator for three days or in the freezer for three months. To reheat, place the pizzas in a 350 degree F oven (175 degrees C) for 8 minutes.
  • To assemble the lahmacun, drizzle with garlic sauce, top with shredded cabbage, and roll up to eat. See the Cook's Notes for other garnish ideas.

1/2 medium red cabbage, core discarded, thinly sliced
1 tbsp red wine vinegar (or another vinegar you like)
3 tbsp extra virgin olive oil
15 g leaves of flat leaf parsley, roughly chopped
salt and pepper

Steps:

  • Add 2 tsp salt to the cabbage and massage well until beginning to soften, a few minutes. Set aside for 30 minutes, or longer if you can.
  • Rinse, drain and dry the cabbage. Add the vinegar and olive oil and mix well. Add salt and pepper to taste. Finally, add the parsley. Serve immediately.

2 tablespoons olive oil, divided
8 boneless chicken thighs, with skin
1 (6 ounce) can tomato paste
¼ cup water
8 cloves garlic, halved
salt and pepper to taste
4 medium potatoes, sliced
4 tomatoes, sliced
1 large onion, sliced
1 cup fresh mushrooms, sliced
8 pepperoncini peppers

Steps:

  • Preheat oven to 325 degrees F (165 degrees C).
  • Trickle 1 tablespoon olive oil in the bottom of a roasting pan. Arrange chicken thighs in the pan. Mix the tomato paste and water, and spread over the chicken. Place garlic clove halves in the pan. Season chicken with salt and pepper. Arrange potatoes, tomatoes, onion, mushrooms, and pepperoncini over the chicken. Sprinkle with remaining tablespoon olive oil.
  • Bake 1 1/2 hours in the preheated oven, until vegetables are tender and chicken juices run clear. Periodically pour a little water into the pan if it starts to get dry.

1 romaine lettuce hearts
1 green bell pepper
1 red bell pepper
1/2 cucumber
4 tomatoes
1 red onion
8 ounces feta cheese, crumbled
black olives, to garnish
3 tablespoons olive oil
3 tablespoons lemon juice
1 garlic clove, crushed
1 tablespoon fresh parsley, chopped
1 tablespoon of fresh mint, chopped
salt
black pepper, freshly ground

Steps:

  • Chop the lettuce into bite-size pieces. Seed the peppers, remove the cores and cut the flesh into thin strips. Chop the cucumber and slice or chop the tomatoes. Cut the onion in half, then slice thinly.
  • Place all chopped salad ingredients in a bowl and sprinkle the feta over the top and lightly toss together.
  • For the dressing, blend together the olive oil, lemon juice and garlic in a small bowl. Stir in the parsley and mint and season with salt and pepper to taste.
  • Pour the dressing over the salad, toss lightly and serve garnished with a handful of black olives.

6 ounces israeli couscous
1/2 cup spring onion, thinly sliced
1/2 persian cucumber (can leave unpeeled if you prefer)
3 small ripe roma tomatoes, diced small
2 ounces raisins
2 tablespoons Italian parsley, freshly chopped
2 tablespoons of fresh mint, chopped
salt
fresh ground black pepper
1/2 teaspoon sumaq, to taste
1 lemon, juice of
2 tablespoons extra virgin olive oil

Steps:

  • Cook the couscous according to package directions. Drain and set aside to cool.
  • In a salad bowl combine the spring onions, cucumber, tomatoes and raisins with the cooked couscous along with the herbs. Pour over the lemon juice and olive oil. Season to taste with salt and black pepper.
  • Toss ingredients together lightly. Cover and chill until required.
