SOUR CREAM & CHIVE MASHED POTATOES



Sour Cream & Chive Mashed Potatoes image

These Sour Cream & Chive Mashed Potatoes are creamy, thick and filled with garlic and chive flavor! The perfect mashed potatoes for this holiday season - they are a staple at our house!

Number Of Ingredients 8

3 lbs. Yukon gold potatoes (skin on)
3 large garlic cloves, whole
1 cup sour cream
4 oz. cream cheese
1/2 teaspoon garlic powder
4 green onions, chopped
salt to taste
1 tablespoon of unsalted butter, melted

Steps:

  • Preheat oven to 350 degrees F.
  • Cut potatoes into quarters. Rinse off thoroughly and add to a large pot along with peel whole garlic clove. Add just enough water to cover the potatoes.
  • Place on stove and heat to medium high heat.
  • Cook potatoes until they are fork tender, about 15-20 minutes.
  • Drain the potatoes and garlic cloves into a strainer. Once liquid is removed add potatoes and garlic back to the large pot, along with sour cream, cream cheese, garlic powder, green onions and salt to taste.
  • Using a hand mixer, mix/mash until the potatoes are the consistency you'd like. Add salt to taste.
  • Place mashed potatoes in an 9×9 baking dish. Drizzle the top with butter.
  • Place in oven uncovered and bake for 30 minutes.
  • Remove and serve!

Creamy Chive and Horseradish Sauce image

This sour cream and chive sauce heats things up a bit with the addition of horseradish.

Kosher salt and freshly ground black pepper
1 bunch chives, roughly chopped (about 3/4 cup)
1 cup sour cream
1/3 cup prepared horseradish, drained

Steps:

  • Bring a small pot of salted water to a boil. Add the chives and cook until bright green and tender, about 3 minutes. Drain and rinse under cold water until cooled. Gently squeeze the water out of the chives. Put the chives, sour cream, horseradish, 1 1/4 teaspoons salt and 1/4 teaspoon pepper in a blender and blend until smooth.

500 g turkey meat (breasts)
1 tablespoon olive oil
30 g butter
100 g smoked bacon (sliced into really small cubes)
70 g onions (or 1 medium onion)
250 g mushrooms
1 tablespoon flour
200 ml chicken stock
150 g sour cream
salt and pepper
1 tablespoon chives (sliced)

Steps:

  • Mix butter and olive oil in a pan. Slice turkey into sticks (5 cm x 1 cm). When the oil is hot, add turkey sticks and fry until gets slightly brown.
  • Take out the turkey (into warm place) and add finely sliced onion, bacon and mushrooms (also sliced). Sauté it until onion and mushrooms become soft, add some flour, mix for a moment and add chicken stock.
  • Mix to prevent flour becomes cloddy, add turkey, season and cook until meat become soft (20 min approx.).
  • Add sour cream, heat it but not boil. Add chive and serve with: mashed potato, gnocchi, noodles, rice - whatever you like.

1 (12 pound) whole turkey, neck and giblets removed
½ cup butter, cubed
2 apples, cored and halved
1 tablespoon garlic powder
salt and pepper to taste
⅔ (750 milliliter) bottle Champagne

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Rinse turkey, and pat dry. Gently loosen turkey breast skin, and insert pieces of butter between the skin and breast. Place apples inside the turkey's cavity. Sprinkle with garlic powder, salt, and pepper. Place turkey in a roasting bag, and pour Champagne over the inside and outside of the bird. Close bag, and place turkey in a roasting pan.
  • Bake turkey 3 to 3 1/2 hours in the preheated oven, or until the internal temperature is 180 degrees F (85 degrees C) when measured in the meatiest part of the thigh. Remove turkey from bag, and let stand for at least 20 minutes before carving.
