GRILLED CHICKEN PICCATA

- Season the chicken with salt and pepper. Whisk together the olive oil, capers, parsley and lemon juice in a bowl. Put the chicken in a resealable bag, pour the marinade into the bag and let marinate for at least 30 minutes and up to 2 hours in the refrigerator.
- Prepare a grill for two-level heat. If using a gas grill, set to medium-high heat on one side and low on the other side. If using a charcoal grill, bank hot coals on one side of the grill.
- Remove the chicken from the marinade; reserve the marinade. Place the chicken skin-side up on the hot side of the grill, close the lid and grill for 3 minutes. Flip the chicken and grill for 1 minute, then move to the cooler side of the grill skin-side up.
- Pour the marinade and stock into a small saucepan and place on the hot side of the grill. Cover the grill and cook until the chicken measures 160 degrees F, about 10 minutes; make sure the marinade is simmering. During the last 2 to 3 minutes of cooking, add the lemon halves cut-side down and cook until charred in spots. Remove the chicken and lemon to a plate.
- Whisk the butter into the marinade until combined, then pour over the chicken. Serve with the grilled lemon.
QUICK SALMON PICCATA
This savory dinner is restaurant-worthy, but can be prepped and cooked in under 30 minutes! If you are not a fan of fish, you can substitute thinly sliced or pounded chicken breasts for the salmon. Serve over pasta or rice.

- Season salmon fillets with salt and pepper. Pour flour in a bowl and dredge salmon, shaking off the excess.
- Heat oil in a skillet over medium heat and cook salmon fillets until browned on both sides, about 3 minutes per side. Transfer to a plate and keep warm.
- Pour wine into the skillet and scrape browned bits from the bottom. Add garlic and cook until garlic is fragrant and slightly brown and liquid is reduced by half, about 1 minute. Add chicken broth, lemon juice, and capers. Bring to a boil while stirring. Stir in butter until melted. Return salmon fillets to skillet and spoon sauce over them.
- Cook, turning fillets once, until salmon is cooked through and flakes easily with a fork, about 4 minutes. Serve salmon with sauce poured over it and garnish with lemon slices.

Salmon is an extremely versatile fish that can be prepared in many ways. This easy Salmon Piccata with garlic, lemon, capers, and baby spinach is so flavorful, and simple enough for a weeknight meal!

- In a shallow baking dish, add flour. Season salmon with salt and pepper (and paprika if desired), then dredge in the flour, and toss until coated.
- In a large skillet over medium heat, melt 1 tablespoon butter and olive oil. Add salmon and cook until golden, 5 minutes per side. Transfer to a plate.
- Add remaining 2 tablespoons butter to skillet. Add garlic and cook until fragrant, 1 minute, then add lemon juice and white wine and bring to a simmer. Stir in capers, lemon slices and spinach and let cook down until wilted, 2 minutes.
- Return salmon to skillet and combine. Garnish with parsley and serve.

- Wash the spinach and remove tough stems.
- Place in pot with garlic and tarragon and cover. Cook over medium heat until spinach is wilted. Drain, arrange and keep warm in a serving dish large enough to hold salmon.
- Grill salmon on both sides, following the 10-minute rule of cooking 10 minutes to the inch of salmon measured at its thickest point. Transfer the salmon to the spinach bed and serve.

- Start by making the sauce, heat 1 tablespoon of ghee in a small saucepan and add the garlic. Sauté the garlic (stirring continuously) until its slightly golden brown. Stir in lemon juice, bone broth, and coconut aminos. Simmer the small until it reduces to about half (approximately 2-3 tablespoons), about 3 minutes. Now, remove the sauce from the heat and whisk in the remaining 2 tablespoons of ghee, then set aside.
- Now, if needed, skin salmon by placing one palm over each salmon fillet and using a sharp knife to slowly slice between the skin and flesh of the salmon until the fish pulls away from the skin. Then, season the salmon with salt and pepper on each side and set aside.
- Heat a castiron grill pan over high heat until it starts to smoke. Then, brush with one tablespoon of ghee. Gently transfer each salmon fillet to the grill pan (skin side up). Lower the heat to medium-high and let the salmon cook for ~five minutes (do not touch the salmon until during that time). Let the salmon cook and create nice grill marks. It will start to pull away from the pan when it’s ready to be flipped. Flip the salmon and sear on the other side for 3-5 minutes. Transfer the fish to a serving dish, add scallions and pour sauce over. Serve with grilled vegetables, cauliflower rice or potatoes
