TURKEY BOW-TIE CASSEROLE
A super easy, yummy, kid-friendly pasta casserole. My little sister and I were making lunch when we made up this casserole. She doesn't like hamburger, but she is a huge pasta and turkey fan. It goes together really quickly if one person makes the turkey part and another person makes the noodle part. Refrigerate leftovers.

Steps:
- Bring a large pot of lightly salted water to a boil. Cook bow-tie pasta at a boil, stirring occasionally, until tender yet firm to the bite, about 12 minutes.
- Meanwhile, heat a large skillet over medium-high heat. Cook and stir ground turkey in the hot skillet until browned and crumbly, 5 to 7 minutes.
- Reduce heat to low and add ketchup, brown sugar, Italian seasoning, and garlic salt. Let simmer for 1 to 2 minutes; remove from heat and cover.
- Drain cooked pasta and pour into a medium casserole dish. Stir in mozzarella cheese, Cheddar cheese, and poppy seeds. Spread turkey mixture on top and serve.

- Boil salted water for pasta: Bring a large pot of water to a boil. Add 1 Tbsp of salt for every 2 quarts of water. (While the water is coming to a boil, prep the ingredients to save time.)
- Cook the pasta: Add the pasta to the boiling water. The pasta should take 10 minutes to cook to al dente, cooked through but still a little firm. Cook on a rolling boil, uncovered.
- Drain pasta: When the pasta is ready, reserve 1/2 a cup of the pasta cooking water and drain the pasta.
- Season to taste: Salt to taste (depending on the saltiness of your leftover turkey and the saltiness of the pesto, you may not need any additional salt). Sprinkle with freshly ground black pepper to serve. (If you want, sprinkle with a little fresh lemon juice as well.) - Saute onion, peppers and pepper flakes in olive oil until onions start to brown.
- Add garlic, salt, pepper, basil and oregano. Set aside.
- Prick sausage links with a fork.
- Saute in skillet with a little olive oil over medium heat until brown.
- Add wine vinegar and canned tomatoes (with liquid).
- Add the sautéed vegetable mixture.
- Cover and simmer for 20 minutes.
- Meanwhile cook pasta al dente.
- Add cooked pasta to sausage and pepper mixture.
- Stir and serve.
