I like to make this with holiday leftovers which makes it a snap to make. It's good on both raisin bread and croissants.

1 cup cooked turkey, in 1/2 inch cubes
1/2 cup celery, diced
1 small Red Delicious apple, cored and cubed
2 tablespoons walnuts, chopped
1 tablespoon reduced-calorie mayonnaise
1 tablespoon plain fat-free yogurt
1/8 teaspoon nutmeg
1/8 teaspoon cinnamon
4 lettuce leaves
8 slices raisin bread

Steps:

  • In medium bowl, combine turkey, celery, apple, walnuts, mayonnaise,
  • yogurt, nutmeg and cinnamon.
  • Cover and refrigerate at least 1 hour or overnight to allow flavors to blend. (Turkey mixture will keep in the refrigerator up to 4 days.)
  • To serve, arrange a lettuce leaf on a bread slice. Spoon 3/4 cup turkey mixture over lettuce leaf and top with other bread slice. Repeat with remaining ingredients.

3 tablespoons fat-free mayonnaise
2 tablespoons fat-free plain yogurt
2 tablespoons chopped walnuts
1 tablespoon raisins
1/8 teaspoon ground nutmeg
1/8 teaspoon ground cinnamon
1-1/4 cups cubed cooked turkey breast
1 small apple, chopped
8 slices cinnamon-raisin bread, toasted
4 lettuce leaves

Steps:

  • In a large bowl, combine the first seven ingredients. Add turkey and apple; toss to coat. Cover and refrigerate for 1 hour. Spoon 3/4 cup turkey mixture onto four slices of bread; top with a lettuce leaf and remaining bread.

  • Combine mayonnaise, celery, walnuts and lemon juice.
  • Toast bread.

Crunchy, sweet, savory, and satisfying, it is the perfect use for leftover turkey and all those beautiful fruits and nuts from your Thanksgiving table centerpiece. Chopped ripe pears are a great addition; this tasty salad can also be served on a bed of crunchy butter lettuce in place of the celery root.

2 cups shredded leftover turkey meat
2 stalks celery, sliced
1/2 cup celery leaves, coarsely chopped, plus more whole leaves for garnish
1 crisp apple, such as Gala or Macintosh, cored and chopped
1 cup red seedless grapes, halved
1/2 cup pecans, toasted, and coarsely chopped
1/2 cup non-fat yogurt
2 tablespoons mayonnaise
1 teaspoon honey
1/4 teaspoon salt, plus more as needed
1 small celery root, peeled and cut into matchsticks
Freshly ground black pepper

Steps:

  • In a large bowl, gently toss the turkey, celery, celery leaves, apple, grapes, and pecans until combined. In a small bowl, whisk together the yogurt, mayonnaise, honey, and 1/4 teaspoon salt until well combined. Put the celery root in a small bowl, add 2 tablespoons of the dressing, and toss to coat completely. Add the remaining dressing to the turkey mixture, season with salt and pepper, and toss gently to evenly dress the salad.
  • To serve, spread the celery root evenly onto a serving platter, top with the dressed salad, garnish with celery leaves and serve immediately.

1 cup diced cooked turkey
2/3 cup chopped peeled apple
1 celery rib, finely chopped
1/2 cup chopped walnuts, toasted
1/4 cup golden raisin
1/3 cup non-fat vanilla yogurt
1/3 cup fat-free mayonnaise
1/2 teaspoon dried tarragon
1/2-1 teaspoon grated orange peel
1/8 teaspoon kosher salt
1 dash fresh ground pepper
4 whole-wheat sandwich buns, split

Steps:

  • In a bowl, combine the turkey, apple, celery, walnuts and raisins.
  • In a separate small bowl, combine the yogurt, mayonnaise, tarragon, orange peel, salt and pepper.

1 gala apple (chopped)
1 stalk celery (diced)
4 Tablespoons mayonnaise

⅛ teaspoon ground nutmeg
⅛ teaspoon ground cinnamon
4 leaves romaine lettuce
8 slices raisin bread

Steps:

  • In a large bowl mix together the cooked turkey, chopped apple, celery, mayonnaise, yogurt, walnuts, raisins, nutmeg, and cinnamon.
  • Cover and refrigerate for about 1 hour. Spoon 3/4 cup onto 4 slices of toasted raisin bread.
  • Top with a lettuce leaf and then add the other slice of toasted bread on top.
  • The perfect sandwich.
