2 tsp cornflour
4 quick-cook turkey breast steaks, weighing about 300g/10oz total
1 tbsp sunflower oil
3 oranges , juice of 2 and one peeled and cut into segments
1 tsp grated fresh ginger
1 tsp clear honey
1 pink grapefruit , peeled and cut into segments
1 tbsp fresh snipped chives or chopped parsley
wild or long grain rice and steamed broccoli, to serve

Steps:

  • Sprinkle a teaspoon cornflour onto a plate, then press the turkey steaks into the cornflour to dust them lightly. Heat the oil in a large non-stick frying pan, until it is really hot. Add the turkey and fry for 3-4 minutes, turning once until golden on both sides - cook in batches if need be. Transfer to a plate.
  • Add the orange juice, ginger and honey to the pan. Gently bring to the boil. Mix the remaining cornflour with 1 tbsp cold water and stir into the sauce. Keep stirring on a gentle heat until thickened and syrupy, like a sweet and sour sauce. Season.
  • Return the turkey to the pan. Add the orange and grapefruit segments and heat through gently. Scatter over chives or parsley and serve straight away with rice and broccoli.

1 (11-ounce) container refrigerated breadstick dough (recommended: Pillsbury)
1/3 cup grated Parmesan
24 paper-thin slices prosciutto

Steps:

  • Preheat the oven to 350 degrees F.
  • Line a heavy large baking sheet with a silpat (nonstick baking mat) or parchment paper. Tear the dough along the perforations into strips. Using a pizza cutter or a large sharp knife, cut each dough strip in half lengthwise to form thin strips. Working with 1 dough strip at a time, roll each dough strip in the Parmesan cheese and twist. Transfer the dough strips to the prepared baking sheets.
  • Bake until the breadsticks are golden brown and crisp, about 20 minutes. Cool the breadsticks completely on the baking sheet.
  • Before serving, wrap 1 slice of prosciutto around each cooled breadstick. Arrange the prosciutto-wrapped breadsticks on a platter.

1 whole boned, skin-on pasture-raised heritage turkey (10 to 12 pounds), wing tips, neck, and giblets reserved for Giblet Gravy
Flaked sea salt, preferably Maldon
3 tablespoons minced garlic
1/4 cup plus 2 tablespoons tender fennel fronds, finely chopped
1/4 cup fennel seeds, coarsely ground
3 tablespoons finely chopped fresh rosemary
3 tablespoons finely chopped fresh sage
1 tablespoon fennel pollen (optional)
3 tablespoons extra-virgin olive oil
Giblet Gravy for Tuscan-Style Turkey alla Porchetta

Steps:

  • Preheat oven to 400 degrees. Arrange prosciutto slices vertically side by side on a cutting board, overlapping each by 3/4 inch. Place turkey, skin side down, on the prosciutto slices, with wings at top and legs at bottom. Arrange turkey tenders at each side to fill in the space between the wings and legs.
  • Sprinkle turkey with 2 tablespoons salt, including the back side of the tenders and under any other loose pieces of meat. Sprinkle garlic, fennel fronds, fennel seeds, rosemary, sage, and fennel pollen evenly over turkey. Arrange turkey so there are no separations (turkey should be in one even layer).
  • Starting from the bottom, roll turkey tightly with prosciutto, keeping prosciutto in place. Tie together with kitchen twine at 3-inch intervals.
  • Heat oil in a large skillet over high heat. Brown rolled turkey on all sides, about 8 minutes. Transfer to a roasting rack set on a large rimmed baking sheet or in a roasting pan. Roast until an instant-read thermometer inserted into center reaches 165 degrees and juices run clear, about 50 minutes. Let rest for 10 to 15 minutes. Serve with gravy.

1/4 cup flour, for dredging
2 tablespoons olive oil
1/4 pound small button mushrooms, washed and drained
4 large, thin slices of prosciutto, about 2 ounces total
2 tablespoons butter
1 clove garlic, peeled
1 tablespoon chopped fresh sage or 2 teaspoons dried
1/4 cup Marsala wine
4 servings broccoli rabe with tomatoes (see recipe)
2 tablespoons chopped Italian parsley

Steps:

  • Place the turkey steaks between sheets of plastic wrap and pound them evenly, with a meat pounder or flat mallet without breaking the flesh, until the fillets are about 1/4-inch thick.
  • Sprinkle with salt and pepper. Dredge lightly in the flour and shake off the excess.
  • Heat the oil in a nonstick skillet large enough to cook the turkey pieces in one layer. Scatter the mushrooms around the turkey and cook over high heat about 2 minutes or until golden brown on one side. Turn the turkey and cook about one minute more on the other side. Remove the turkey and the mushrooms and place on a warm platter. Keep warm.
  • In the same skillet, without removing the oil, saute the prosciutto briefly, about 15 seconds. Add the butter and garlic clove to the pan. Return the turkey and the mushrooms to the pan along with any juices that have accumulated around the turkey. Place a slice of prosciutto over each.
  • Sprinkle the sage over the prosciutto and pour the Marsala into the pan. Cover and cook for about one minute.
  • Remove and serve immediately. Spoon equal portions of the broccoli rabe dish onto four warm serving plates. Top each serving with the turkey and mushrooms. Pour the sauce over and sprinkle with parsley.

2 turkey breast tenderloins (1 to 1-1/4 lb.)
1 teaspoon dried sage, crushed
salt & freshly ground black pepper
2 tablespoons butter
1 (6 ounce) package fresh Baby Spinach
1 large pear, cored and thinly sliced
1/4 cup crumbled blue cheese

Steps:

  • Horizontally split tenderloins to make four 1/2-inch-thick steaks. Rub turkey with sage; sprinkle with salt and pepper. In extra-large skillet cook steaks in 1 tablespoon of the butter over medium-high heat 14 to 16 minutes or until no longer pink (170 degrees F), turning once. (Reduce heat to medium if turkey browns too quickly.) Remove from skillet. Add spinach to skillet. Cook and stir until just wilted.
  • Meanwhile, in small skillet cook pear slices in remaining 1 tablespoon butter over medium to medium-high heat, stirring occasionally for 5 minutes or until tender and lightly browned.

8 ounces thinly sliced prosciutto

3 whole heads garlic, each cut in half horizontally
2 cups (or more) canned low-salt chicken broth
1/2 cup dry white wine
3 1/2 tablespoons all purpose flour
Fresh rosemary sprigs

Steps:

  • Pat turkey dry. Run hands under skin of turkey, separating skin from breast and thighs. Rub 3 tablespoons rosemary and 3 tablespoons garlic under skin over breast and thighs. Salt and freshly ground pepper to taste
4 tablespoons instant flour
2 tablespoons olive oil
1 tablespoon butter
4 tablespoons Marsala wine
4 thin slices prosciutto di Parma
4 thin slices Fontina or Gruyere cheese
4 tablespoons coarsely chopped fresh basil or Italian parsley

Steps:

  • Preheat the broiler.
  • Pound the turkey slices lightly with a meat pounder or flat mallet without breaking the fibers. Sprinkle on both sides with salt and pepper. Dredge all over with the flour and shake off the excess.
  • Heat the oil and butter in a non-stick skillet large enough to hold the slices in one layer. When it is very hot add the turkey slices and brown quickly on both sides. Cook for a few minutes more. Transfer to a baking dish large enough to hold the pieces in one layer. Keep warm.
  • Add the wine to the skillet and cook, stirring, over high heat until the wine becomes syrupy. Spoon the sauce over the turkey slices and top each piece with one slice of prosciutto and one slice of cheese. The prosciutto should be entirely covered with the cheese. Place under the broiler until the cheese melts. Sprinkle with basil and serve.

True garlic lovers can squeeze some of the pan-roasted garlic into the gravy for even more flavor.
