SPINACH STUFFED TURKEY MEATLOAF
This turkey meatloaf is filled with a spinach-mushroom mixture and topped with shredded mozzarella cheese for a delicious weeknight meal.

- Heat oven to 375 degrees F. Lightly spray medium skillet with cooking spray.
- Cook mushrooms and onion in skillet over medium-low heat 4 minutes or until onion is tender; remove from heat.
- Add spinach, 1/4 cup mozzarella cheese and Parmesan cheese; mix well. Set aside.
- In large bowl, combine turkey, oats, milk, egg white, Italian seasoning, salt and pepper; mix lightly but thoroughly.
- Spoon 2/3 of turkey mixture lengthwise down center of 11 x 7-inch glass baking dish.
- Form a deep indentation down middle of turkey; fill indentation with reserved spinach mixture.
- Top with remaining turkey, forming a loaf.
- Seal edges to completely enclose spinach filling.
- Bake 30 to 35 minutes or until thermometer registers 170 degrees F and juices show no pink color.
- Remove from oven; sprinkle with remaining mozzarella cheese.
- Return to oven 1 to 2 minutes or until cheese melts.
- Let stand 5 minutes before slicing.

SPINACH AND TURKEY MEATLOAVES WITH MASHED POTATOES AND GREEN BEANS

- Wash and dry all produce. Preheat oven to 450 degrees. Cut potatoes into ½-inch cubes and place in a large pot with a big pinch of salt and enough water to cover by 1 inch. Bring to a boil and cook until easily pierced by a knife, about 12 minutes total (we'll be adding more items to the pot after 7 minutes).
- Thinly slice garlic. Heat a drizzle of olive oil in a large pan over medium heat. Add garlic and cook until fragrant, about 1 minute. Add spinach and toss until wilted, 2-3 minutes. Season with salt and pepper. Remove spinach from pan and place on a cutting board. Finely chop, then transfer to a medium bowl.
- Add bread and 2 TBSP milk (we sent more) to bowl with spinach. Squish everything with your hands until bread turns pasty. Add mozzarella, turkey, meatloaf spice, salt, and pepper (we used 1 tsp kosher salt). Thoroughly combine with your hands and shape into four 1-inch-thick meatloaves.
- Place meatloaves on a lightly oiled baking sheet. Bake in oven until no longer pink in center, about 15 minutes. About 5 minutes before potatoes are done, add green beans to pot. Cook until tender but still crisp, 3-4 minutes. Remove green beans with a slotted spoon and set aside. Season with *salt and pepper. Drain potatoes once done, then return to pot.
- Once meatloaves are done, heat broiler to high. Broil meatloaves until browned on top, about 4 minutes. Meanwhile, return pot with potatoes to stove over low heat. Add 4 TBSP butter and ½ cup milk (you'll have some milk left over). Mash with a potato masher or fork until smooth. Season with salt and pepper. (TIP: Add more milk, if needed, to create a creamy consistency.)
- Divide potatoes, green beans, and meatloaves between plates and serve.

- Preheat the oven to 375 degrees F.
- Lightly grease a 9 by 13-inch casserole dish.
- Filling: Using a kitchen towel, squeeze off the excess liquid from the spinach. In a medium-sized bowl, mix together the spinach, feta, jalapenos, and yogurt. Set aside.
- In a small bowl, mix together the milk and grits. Set aside.
- In a large bowl, combine the onion, turkey, eggs, Worcestershire, parsley, stock, salt, pepper, and the grits. Mix until well combined. Transfer half of the mixture to the casserole dish and shape it into a medium-sized log. Using your fingers, make an indentation in the meat for the filling. This should resemble a canoe. Add the filling to the indentation and top with the remaining meat. Form the meatloaf, being sure to cover the filling completely with meat. Pour the tomato sauce over the meatloaf. Bake in the oven until the internal temperature registers 165 degrees F on an instant-read thermometer, about 55 to 60 minutes. - Preheat the oven to 350 degrees F (175 degrees C). Spray a baking sheet with cooking spray (such as Pam®).
- Mix turkey, bread crumbs, onion, ketchup, egg, salt, garlic powder, and onion powder together in a large bowl.
- Spread meat mixture over a sheet of parchment paper to form a large square or rectangle. Sprinkle mozzarella cheese and spinach over 1/2 of the meat mixture. Fold other 1/2 of mixture gently over filled side. Press together and shape into a log. Transfer to the prepared baking sheet.
- Bake in the preheated oven for 35 minutes.
- In the meantime, mix ketchup, Worcestershire, Dijon, brown sugar, and garlic powder for glaze together in a bowl.

- Place garlic cloves in small saucepan, add enough olive oil to cover them, and place over very low heat. Cook about 40 minutes, until garlic is tender but not browned. Drain garlic, and reserve oil. While garlic cooks, remove and discard stems and heavy leaf ribs from spinach.
- Place onion in nonstick sauté pan over low heat. Cook until translucent, about 2 minutes. Add spinach leaves and salt, and stir until spinach wilts. Line a small baking sheet with several thicknesses of paper towel, and spread spinach mixture on towel and refrigerate to cool.
- Heat oven to 375 degrees. In a mixing bowl or bowl of an electric mixer combine turkey, thyme, pepper, cayenne and cooked garlic cloves; mix well.
- Remove spinach from refrigerator, and chop. Add to mixing bowl, and mix well by hand or on low speed by machine. Form into loaf shape.
- Heat a heavy skillet, preferably oven-proof. Add a little of the garlic oil and sear loaf top and bottom until lightly browned. Sides can be seared but only if you have a very large spatula to turn loaf easily. Place skillet in oven or transfer loaf to shallow baking dish, then place in oven. Bake about 50 minutes, until a thermometer registers 160 degrees. Remove from oven and serve, or refrigerate and serve cold. Reserve remaining garlic oil for another use.

- For the meatloaf: Preheat the oven to 350 degrees F.
- Heat the olive oil in a small skillet over medium-high heat; add the garlic and onions and cook, stirring occasionally, until soft and brown, about 8 minutes.
