TURKEY SAUSAGE AND BROCCOLI PASTA

8 ounces rigatoni
2 cloves garlic, minced
1 pound turkey sausage
Red pepper flakes, to taste
1 onion, chopped
3/4 cups chicken stock
1/2 red pepper, sliced
1 1/2 cups broccoli florets

Steps:

  • Prepare rigatoni according to directions on box. Remove sausage meat from casing, set aside. In hot skillet saute onions. Add pepper and crumbled sausage meat. Stir and cook over medium high heat for 5 minutes. Add garlic and red pepper flakes. Add chicken stock and bring to a simmer. Add florets and cover to steam. Once broccoli is tender add rigatoni to pan. Stir to coat. Serve.

1 (16 ounce) package uncooked farfalle pasta
1 pound hot Italian turkey sausage, cut into 1/2 inch slices
½ cup olive oil, divided
4 cloves garlic, diced
½ onion, diced
2 small zucchini, chopped
2 small yellow squash, chopped
6 roma (plum) tomatoes, chopped
1 green bell pepper, chopped
20 leaves fresh basil
2 teaspoons chicken bouillon granules
½ teaspoon red pepper flakes
½ cup grated Parmesan cheese

Steps:

  • Bring a large pot of lightly salted water to a boil. Place farfalle in pot and cook 8 to 10 minutes, until al dente; drain.
  • Place sausage in a large skillet over medium heat and cook until evenly brown; set aside. Heat 1/4 cup oil in skillet. Stir in garlic and onion, and cook until tender. Mix in zucchini, squash, tomatoes, bell pepper and basil. Dissolve bouillon in the mixture. Season with red pepper. Stir in remaining oil. Continue cooking 10 minutes.
  • Mix pasta, sausage and cheese into skillet. Continue cooking 5 minutes, or until heated through.

4 hot or sweet Italian turkey sausages cut into 1" pieces
1 carrot chopped
1 onion chopped
1 ce1ery stalk thinly sliced
2 garlic cloves minced
3 cups chopped cabbage
1 can no-salt-added diced tomatoes - (14 1/2 oz)
1 cup low-sodium chicken broth
1/4 teaspoon freshly-ground black pepper
2 cups hot cooked egg noodles

Steps:

  • Spray a large nonstick skillet with nonstick cooking spray; heat. Add the sausages and cook, stirring as needed, until almost cooked through, about 5 minutes. Add the carrot, onion, celery and garlic; cook, stirring as needed, until softened, about 5 minutes. Add the cabbage, tomatoes, broth and pepper; bring to a boil. Reduce the heat and simmer, covered, until the sausages are cooked through and the vegetables are tender, about 10 minutes. Serve the noodles, topped with the sausage and vegetable mixture. 1 pound Italian turkey sausage links, casings removed
1 large onion, chopped
1 large green pepper, chopped
1-1/4 cups sliced fresh mushrooms
2 garlic cloves, minced
2 cans (14-1/2 ounces each) diced tomatoes, undrained
1 teaspoon Italian seasoning
1 teaspoon chili powder
6 cups uncooked spiral pasta
1/2 cup shredded part-skim mozzarella cheese

Steps:

  • Crumble sausage into a large nonstick skillet. Add the onion, green pepper and mushrooms. Cook over medium heat until meat is no longer pink. Add garlic; cook 1 minute longer. Drain. , Stir in the tomatoes, Italian seasoning and chili powder. Bring to a boil. Reduce heat; simmer, uncovered, for 10 minutes. , Meanwhile, cook pasta according to package directions; drain.
