HAM CASSEROLE WITH BROCCOLI AND RICE
This Ham Casserole is loaded with cheesy, creamy rice and perfectly cooked broccoli. This easy make-ahead dinner can be prepared 2 days ahead or as a one pot meal!

- Note: This recipe is designed to allow you to prepare all of the casserole ingredients in one pot before transferring to a casserole dish for baking. Before you begin, refer to your rice package for the amount of liquid (we'll use chicken broth) and cooking time. If preferred, cook the rice separately and skip the broth ingredient. You'll need 3 + 3/4 cups of cooked rice to combine with the other casserole ingredients. I use white long grain rice and the cooking times below work perfectly.
- Preheat the oven to 350 degrees.
- Melt the 2 Tablespoons butter in a large saucepan over medium heat.
- Add the diced onions and cook for 5 minutes, until softened.
- Add the chicken broth, olive oil, and rice to the pot and bring to a boil, then reduce heat to a simmer.
- Cover tightly and cook for 7 minutes.
- Add the broccoli, replace the cover, cook for 8 more minutes. Refrain from stirring.
- Turn off heat, leave the cover on. Let the rice stand for 10 minutes. Any rice on the bottom of the pot will release during this time.
- Add the diced ham, condensed soup, sour cream, milk, and ONE cup of the cheddar cheese. Stir until well-combined.
- Spread into a lightly greased 9 x 13 casserole dish.
- Top with remaining cup of cheddar cheese.
- Cover and bake for 15 minutes.
- Combine the Ritz cracker crumbs and butter. Spread over the top of the casserole and bake, uncovered, for 10 additional minutes.
- Let the casserole sit for 5 minutes prior to serving.

HAM, BROCCOLI AND RICE CASSEROLE
I received a request for this recipe so I decided to post it. I've made this for years and have made a few adjustments in the ingredients to suit my family's tastes. It's still just a Ham and Broccoli casserole, but It's also a quick and easy dinner. I sometimes add waterchestnuts to give it a little crunch or sliced mushrooms. Feel free to add whatever you like and enjoy.

- Preheat oven to 350'.
- In a Large Bowl, Combine all of the casserole ingredients and mix until blended.
- Spoon into a large, buttered casserole dish.
- In a medium, microwave safe dish, add butter and microwave butter about 20 seconds at a time, take out and stir well before placing back in microwave, until butter is melted.
- Add bread crumbs and parmesan to butter and blend with a fork until it becomes crumbly, top casserole with crumb mixture.
- Cover and bake for 30 minutes, uncover and bake another 10-15 minutes or until casserole is hot and bubbly and topping has lighlty browned.
- Let stand 5 minutes, serve.

- Heat 3 Tbsp butter in skillet and saute onion 5 minutes, stirring often.
- Blend in next 4 ingredients (flour through worcestershire); you may need to add another 1 Tbsp butter if too much has cooked away.
- Add milk gradually and cook, stirring constantly, until smooth and thickened.
- Add 1 cup cheese and stir until melted and well blended.
- Stir in ham and peas.
- Spread 2 cups rice in the bottom of a shallow baking dish, pour half the ham-peas-sauce mixture over the rice and top with 1/2 cup shredded cheese.

- Sprinkle with crumbs and dot with remaining 2 Tbsp butter.
