TURKEY POT PIE
This was a recipe I was a little nervous trying as I am not a pie maker...What a pleasant surprise- it turned out delicious and was a good stick to your ribs meal on a cool fall day. Update- I tried it this year with the new Pillsbury refrigerated pie crusts, it turned out wonderful, see the photo I took!

Steps:
- Preheat oven to 425°F (220°C).
- Melt 2 tablespoons butter in a large skillet over medium heat; add the onion, celery, carrots, parsley, oregano, and salt and pepper.
- Cook and stir until the vegetables are soft.
- Stir in the broth.
- Bring mixture to a boil.
- Stir in the potatoes, and cook until tender but still firm.
- In a medium saucepan, melt the remaining 2 tablespoons butter.
- Stir in the turkey and flour.
- Add the milk, and heat through.
- Stir the turkey mixture into the vegetable mixture, and cook until thickened.
- Cool slightly, then pour mixture into 1 unbaked pie shell.
- Cover with remaining crust.
- Flute edges, and make 4 slits in the top crust to let out steam.
- Place on a cookie sheet.
- Bake in the preheated oven for 15 minutes.
- Reduce oven temperature to 350°F (175°C), and continue baking for 20 minutes, or until crust is golden brown. Note- Cooling the filling before putting in pie shell is EXTREMELY important, if it is too hot it will make the crust mushy.

I have a collection of cook books and usually look up a few of the same recipes and combine the ingredients I like from each recipe so that it makes it my own. This one called for chicken but works for either or just as well. So hope you enjoy experiementing with it as I did.

Steps:
- Grease a 3 qt casserole dish.
- In lg. saucepan, combine carrots and broth; bring to a boil. Reduce heat and cover.
- Simmer for 5 minutes or til crisp-tender.
- Heat oven to 400°F In small bowl, mix 1 1/2 cups milk& 1/4 cup flour.
- Mix the milk mixture, sage, 1 T marg. and 1/2 t salt into carrot mixture. Bring back to a boil, constantly stirring.
- Boil for approximately 1 min, add chicken and corn.
- Pour into greased casserole dish.
- In medium bowl, mix together the 1 cup flour, onions, baking powder, and 1/4 t salt.
- Once mixed well stir in the 1/2 c milk and 1 T melted or soft marg. until soft dough forms.
- Drop dough by spoonful evenly onto chicken mixture.
- Bake at 400F for 20-25 minutes or till top is golden brown.
- *Note-if not enough biscuits for your liking feel free to double up on the biscuit mix on the top turns out just as well.

Steps:
- combine 1/4 cup flour, salt, pepper, cayenne pepper in a bowl.
- Toss turkey with the flour/spice mixture and place in crock pot.
- Add carrots, potatoes, onions, peas and carrots, garlic and mushrooms.
- Pour broth and sherry over all and stir to blend, Cover and cook on high 4-5 hours or on low 7-9.
- Turn crock pot to high while preparing the cornbread.
- Preheat oven to 400.
- Blend remaining 1/3 cup flour with 1/3 cup cold water and stir until smooth, then blend into the stew in the pot.
- Cook, stirring occasionally, 15 minutes or until thickened.
- Cornbread:.
- Combine flour, cornmeal, baking powder, salt and sugar in mixing bowl.
- Blend in egg, milk and oil.
- Pour over the thickened stew.
- Take removable stoneware out of the crock pot and place in heated oven.
- Bake for 15-20 minutes or until the cornbread is brown.
- Allow to stand 15 minutes before serving.
SKILLET CHILI PIE WITH CORNBREAD TOPPING
You will love this, it's really a tasty meal. I have made this many times in the fall and winter season, but it is still good on cool rainy days too, and is very easy to put together. Make certain that you have a large oven-proof skillet for this recipe, as the whole thing is baked in the skillet. Try not to overbake the cornbread topping.

- To make the chili: cook onion, garlic and green pepper with the ground beef in a large oven-proof skillet over medium heat until meat is browned and crumbly; drain VERY well.
- Add in all remaining ingredients (except the topping ingredients); mix well and bring to a boil.
- Cover and reduce heat to medium-low and simmer for 15 minutes, stirring occasionally.
- Remove the skillet with the ground beef mixture from heat; set aside.
- To make the corn bread topping: combine dry ingredients in a bowl.
- In another small bowl, combine the egg white and buttermilk; add to the dry ingredients, stirring until moistened.
- Spoon evenly over the gound beef mixture in the skillet.
- Set oven to 400 degrees.
- Bake for about 13-14 minutes, or until a toothpick inserted in the middle comes out clean.

- Combine stuffing, water, and melted butter; mix well. Reserve 1 cup of stuffing mixture.
- Press remaining stuffing into 10-inch pie plate to form pie shell.

- Sauté ham in hot oil in a Dutch oven over medium-high heat 5 minutes or until lightly browned. Add flour, and cook, stirring constantly, 1 minute. Gradually add chicken broth, and cook, stirring constantly, 3 minutes or until broth begins to thicken.
- Bring mixture to a boil, and add seasoning blend and collard greens; return to a boil, and cook, stirring often, 15 minutes. - Make pork mixture: In a large skillet cook onion and bell peppers in the oil over moderately-low heat, stirring, until the onion is softened.
- Add the pork and cook the mixture over moderate heat, stirring and breaking up any lumps, until the pork is no longer pink.
- Stir in tomato sauce, paste, corn, cumin, allspice, chili powder, Worcestershire Sauce, 1 tsp Tabasco, cornmeal and season to taste.

- Stir in cheddar and chili peppers and drop batter by large spoonfuls around edge of casserole.
- Bake for 10 minutes then reduce heat to 350F and bake 30 minutes longer.
