CLASSIC MORNAY SAUCE



Classic Mornay Sauce image

Yield about 2 cups of sauce

Number Of Ingredients 8

2 1/2 tablespoons butter
3 tablespoons all-purpose flour
2 cups warmed milk
1/4 teaspoon salt
1/8 teaspoon white pepper
pinch freshly grated nutmeg (optional)
2 ounces grated cheese, such as Gruyere
Steamed vegetables, such as broccoli, cauliflower or baby carrots, for accompaniment

Steps:

  • In a medium saucepan melt the butter over medium-high heat. Add the flour and cook, stirring constantly, until the roux is pale yellow and frothy, about 1 minute. Do not allow the roux to brown. Slowly whisk in the milk and continue to whisk until the sauce thickens and comes to a boil, about 2 to 3 minutes. Reduce the heat to a simmer and season with the salt, pepper and nutmeg. Allow to simmer for 2 to 3 minutes. This is now called a bechamel sauce, and may be used as is to top any number of dishes.
  • Stir in the cheese and whisk until melted. If the sauce seems to thick, thin with a little milk.
  • The sauce is now called a Mornay Sauce. Pour over steamed vegetables and serve immediately. If not using right away, cool, cover surface with plastic wrap and refrigerate for several days.

½ cup uncooked rotini pasta
1 tablespoon butter or margarine
2 tablespoons all-purpose flour
1 ½ cups milk
2 cups shredded Cheddar cheese
1 cup frozen green peas
1 cup frozen corn kernels
2 (7 ounce) cans tuna, drained
salt
½ cup bread crumbs

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Bring a pot of lightly salted water to a boil. Add the pasta and cook until tender, about 8 minutes. Drain.
  • Meanwhile, melt the butter in a small saucepan over medium heat. Stir in the flour until smooth. Gradually mix in milk so that no lumps form. Stir constantly until the mixture boils, then mix in half of the cheese. Add the peas, corn and macaroni. Drain the tuna, leaving a small amount of liquid to keep it moist. Flake with a fork and stir into the cheese mixture. Transfer to a casserole dish and top with the remaining cheese. Sprinkle breadcrumbs over the cheese.
  • Bake for 20 minutes in the preheated oven, until sauce is bubbly and cheese is browned.

2 (10 ounce) packages frozen broccoli spears
¼ cup margarine
6 tablespoons all-purpose flour
salt and ground black pepper to taste
2 cups chicken broth
½ cup heavy whipping cream
3 tablespoons white wine
3 cups cooked turkey breast, sliced
¼ cup shredded Monterey Jack cheese

Steps:

  • Place broccoli in a saucepan with 4 cups of water. Bring to a boil; reduce heat, cover, and simmer until tender, 5 to 8 minutes. Drain.
  • Preheat oven to 350 degrees F (175 degrees C).
  • Melt margarine in a saucepan over medium heat; stir in flour, salt, and pepper and mix well. Pour in chicken broth; cook and stir until sauce thickens and bubbles, about 10 minutes. Add cream and wine; stir until well-combined.
  • Arrange broccoli on the bottom of a 7x12-inch baking dish. Pour half of the sauce over the broccoli. Top sauce with sliced turkey. Stir Monterey Jack cheese into the remaining sauce in the saucepan. Pour cheese sauce over the turkey.
  • Bake the turkey divan in the preheated oven until bubbly, about 20 minutes. Broil until the cheese sauce is golden, about 5 minutes.

1 cup sliced fresh mushrooms
1 pound lobster meat, diced
¼ cup all-purpose flour
1 cup chicken broth
1 cup heavy cream
½ teaspoon pepper

  • Melt the butter in a medium saucepan over medium heat. Slowly cook and stir mushrooms in the butter until tender. Mix in lobster meat. Cook until opaque. Remove mushrooms and lobster from saucepan and set aside.

1 onion, finely chopped
3 tablespoons flour
1 cup chicken broth (or turkey broth)
1/2 cup cream
2 egg yolks, beaten
1 cup shredded mozzarella cheese (or Swiss)
2 tablespoons grated parmesan cheese
2 cups cooked turkey, sliced (or chicken)
4 English muffins, split and toasted

Steps:

  • Heat the butter in a heavy saucepan. Add onion and cook, stirring until tender, about 5 minutes.
  • Sprinkle in flour, stirring until mixture bubbles. Cook for about 1 minute. Add the chicken broth and cream, stirring well with a wire whisk. Bring to boiling, cook 2 minutes.
  • Remove from heat and stir a small amount of the sauce into the egg yolks to heat and temper.
  • Stir tempered egg yolk mixture into the rest of the sauce and return saucepan to heat. Cook for 2-3 minutes, whisking constantly.
  • Remove from heat and stir in cheeses. Stir until smooth and nicely melted.
  • Place sliced turkey or chicken on each split and toasted English muffin.
  • Pour sauce over each one.
  • Sprinkle with more cheese, if desired, and broil 2-3 minutes until lightly browned and bubbly. Watch carefully while broiling so it doesn't burn! Enjoy!

1 large tomatoes, sliced

Steps:

  • Heat oven to 350 degrees.
  • Line a rimmed baking sheet with foil; set aside.

2 cups milk
½ teaspoon dry mustard
1 cup shredded Cheddar cheese

3 (7 ounce) cans tuna packed in water, drained
3 tablespoons chopped fresh parsley
3 hard-cooked eggs, peeled and chopped
1 cup crushed plain potato chips
1 pinch paprika, for garnish
8 ounces fettuccini pasta

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Melt the butter in a small skillet over low heat. Stir in the flour until smooth and continue to cook and stir for 1 minute. Remove the pan from the heat and gradually stir in the milk so that no lumps form. Return to the burner and heat, stirring constantly, until thickened, about 3 minutes. 1 (6 ounce) can crabmeat
2 teaspoons fresh lemon juice
3 tablespoons butter

2 egg yolks
6 ounces sharp Cheddar cheese, shredded
2 tablespoons cooking sherry

Steps:

  • Preheat oven to broil. Place mushroom caps on a baking sheet, and brush with oil. Broil until soft and slightly browned.
  • Meanwhile, melt butter in a saucepan over medium heat. Stir in flour to make a paste. Whisk in milk; cook, stirring frequently, until hot. In a small bowl, beat egg yolks together, then pour a small amount of the hot milk mixture into the yolks. Whisk this yolk mixture into milk in saucepan. Remove from heat, and stir in 1 1/4 cups cheese.
  • Preheat oven to 350 degrees F (175 degrees C).
  • Place mushroom caps, hollow side up, in an 8 inch, round baking dish. Cover with crab, and sprinkle with lemon juice. Pour cheese sauce over mushrooms and crab, and top with remaining 1/4 cup cheese.
