POTATO TURKEY MEATLOAF
Lean and delicious, ground turkey makes a good substitute for higher-fat meats like beef and pork. The mild taste doesn't overwhelm the flavours and seasonings added to the dish. This hearty meatloaf is almost a meal in itself.

Steps:
- Heat oven to 375ºF.
- Heat oil in skillet and sauté onion, carrots and garlic until tender.
- Set aside to cool slightly.
- In a large bowl, combine turkey and mashed potatoes, add eggs, bread crumbs and seasonings.
- Stir in cooked vegetables and mix thoroughly.
- Form mixture into a 9x5-inch oval in a lightly oiled baking dish.
- Bake for 90 minutes or until a meat thermometer registers 170ºF.

- Make the meatloaf: Preheat the oven to 375 degrees F. Coat a 9-by-5-inch loaf pan with cooking spray. Put the turkey, onion, breadcrumbs, celery, egg, 2 tablespoons ketchup, the parsley, 1/2 teaspoon salt, and pepper to taste in a bowl. Mix with your hands until just combined, then transfer to the prepared pan. Combine the remaining 1/4 cup plus 2 tablespoons ketchup with the soy sauce and Worcestershire sauce in a small bowl; spread 2 tablespoons of the ketchup mixture over the meatloaf. Bake until the top begins to brown, about 30 minutes, then spread the remaining ketchup mixture over the meatloaf and continue baking until browned and a thermometer inserted into the center registers 165 degrees F, 15 to 20 more minutes. Let stand 5 minutes before slicing.
- Meanwhile, make the mashed potatoes: Put the potatoes in a large saucepan and cover with cold water; season with salt. Bring to a simmer and cook over medium-low heat until tender, about 30 minutes. Drain, then return to the saucepan and mash with the butter. Add the milk and season with salt and pepper; continue mashing until fluffy. Put the peas in a microwave-safe bowl, sprinkle with water and season with salt and pepper. - Preheat the oven to 190°C (approximately 375°F).
- For the meatloaf: Soak the bread in water then squeeze excess water out. Rinse the turkey breast, pat dry, cut into small cubes and process through a meat grinder.
- Peel the onion, chop finely, sweat in a hot pan with 1 tablespoon hot oil until translucent. Remove from the heat and let cool. Stir in the herbs.
- Combine the ground meat with the bread, bacon, eggs and onion mixture. Season with salt and pepper then form into a loaf and place in a greased baking dish. Bake for about 60 minutes.
- Meanwhile, for the mashed potatoes: Peel the potatoes, rinse and roughly chop. Cook in boiling salted water for about 25 minutes, until fork-tender.
- Peel the garlic and thinly slice. Trim the radicchio, rinse and thinly slice. In a frying pan, melt the butter and sauté the garlic until golden brown. Add the radicchio, sauté briefly then remove from heat and let cool.
- Mix the ketchup with the jam and soy sauce. Brush over the meatloaf around 15 minutes before the end of the cooking time.
- Drain the potatoes, let the steam evaporate, press through a potato ricer and mix in the milk until smooth. Fold in the garlic and radicchio mixture and season with salt, pepper and a pinch of nutmeg, if desired.
TURKEY MEAT LOAF: ALMOST AS GOOD AS MOM'S USED TO BE
A wonderful meat loaf that is fairly easy to make. Pairs well with a variety of side dishes. This can be a meal in itself or can be served with mashed potatoes and biscuits. Surprisingly good cold!

- Preheat oven to 375 degrees F (190 degrees C). Grease a 9x13-inch baking dish.
- Mix tomato sauce, tomato paste, ketchup, sugar, onion powder, garlic powder, 1 teaspoon oregano, 1 teaspoon black pepper, and 1 teaspoon Worcestershire sauce in a bowl.
- Place stewed tomatoes in a large bowl; crush tomatoes using a fork. Add turkey, crushed crackers, onion, green bell pepper, eggs, 1 tablespoon oregano, thyme, 2 tablespoons Worcestershire sauce, garlic, and 2 teaspoons black pepper; mix until evenly combined. - Spoon half the tomato topping over the loaf.
- Bake in the preheated oven for 45 minutes. Spoon the remaining tomato topping over loaf and top with mozzarella cheese. Bake until no longer pink in the center, 15 to 20 more minutes. An instant-read thermometer inserted into the center should read at least 160 degrees F (70 degrees C).

- Preheat oven to 350 degrees F (175 degrees C). Grease a 9x5 inch loaf pan.
- Melt butter in a large heavy skillet over medium heat. Saute white onions, green onions, carrots, celery, green and red bell peppers, and garlic until soft, about 10 minutes. Remove from heat.
- In a large bowl, combine salt, black pepper, cayenne pepper, nutmeg and cumin. Stir in eggs, ketchup and half-and-half. Blend in vegetable mixture from skillet. Add ground turkey, chicken sausage and bread crumbs. Mix well with hands, then shape into a loaf. Place into greased 9x5 inch loaf pan.
- Bake in preheated oven for 50 to 70 minutes, or until cooked through and nicely browned. Let rest for 10 minutes, then serve with gravy.
- To make the gravy: Melt 1 tablespoon butter in a heavy skillet over medium heat. Saute shallots with red and yellow peppers until tender, about 10 minutes. Season with thyme, bay leaf and black pepper. Stir in half-and-half, garlic, beef stock and chicken stock. Increase heat to high, and boil uncovered until liquid is reduced by 1/4, about 10 minutes. Stir in tomatoes and ketchup. Simmer uncovered for 20 minutes. Stir in remaining tablespoon butter, and season to taste with salt and pepper. Strain gravy, discarding bay leaf and thyme before serving.

- Heat oven to 400°F In a bowl, combine the turkey, onion, spinach, parsley, bread crumbs, mustard, egg white, and ½ teaspoon each salt and pepper.
- Transfer the mixture to a baking sheet and form it into a 10-inch loaf. Spread with the ketchup. Bake until cooked through, 45 to 50 minutes.

- Heat oven to 350ºF.
- Mix turkey, stuffing mix, water, onions, chiles, egg and 1/4 cup barbecue sauce just until blended; press into 12 muffin cups sprayed with cooking spray.
- Bake 25 to 30 min. or until done (165ºF), brushing with remaining barbecue sauce for the last 5 min.
